4 cups water
Vegetable oil, for frying
2 pounds pork tenderloin, silver skin removed
2 tablespoons soy sauce
1 teaspoon dry mustard
3 tablespoons rice wine vinegar
1 cup all-purpose flour
3 tablespoons cornstarch
1 teaspoon granulated garlic
1 teaspoon granulated onion
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons canola oil
3 tablespoons canola oil
1 large yellow onion, diced
3/4 cup diced fresh ginger
3/4 cup diced garlic
1 tablespoon freshly cracked black pepper
1 cup white wine
2 cups water plus 4 tablespoons
2 cups low-sodium chicken stock
4 tablespoons soy sauce
2 tablespoons honey
3 tablespoons cornstarch
1/2 cup diced green onions, for garnish

  • To make Da Sizzling Rice: Add rice and water to a small saucepot and bring to a boil over medium heat. Reduce the heat to low, cover and simmer for 5 minutes. Remove from heat and let sit 30 minutes. Transfer the rice to a baking sheet and cool to room temperature. Preheat the oven to 200 degrees F. Put the rice into the oven and let it dry out for 1 hour.
  • Heat 2 cups of oil to 350 degrees F. in a heavy-bottomed pan over medium heat. Cut the rice into 3-inch rounds and fry in the oil until crunchy and light brown, about 2 minutes. Set aside on a plate.

Deglaze the pan with wine, and then add 2 cups of water, the stock, soy sauce and honey. Simmer for 1 hour or until reduced by half. Strain the gravy and return it to the pot over low heat. Combine the 4 tablespoons water and cornstarch in a small bowl. Slowly stir it into the sauce and cook until the gravy has thickened.
  • For Da Plate up: Transfer the rice to a serving platter, and arrange the pork on the platter. Top with the gravy and garnish with the green onions.

SALT-AND-PEPPER PORK WITH CRISPY RICE CAKES

Salt-and-Pepper Pork With Crispy Rice Cakes image

You'll find Korean rice cakes in all kinds of shapes and sizes-from long cylinders to thin, oblong rounds. While their flavor does not change according to shape, textures do. Thin rice cakes work well for this stir-fry, as they quickly absorb flavors and soften into crispy, chewy coins.

Provided by Andy Baraghani

Yield 4 Servings

Number Of Ingredients 10

8 oz. Korean rice cakes
2 Tbsp. (or more) vegetable oil
8 oz. ground pork, turkey, or chicken
1 (2") piece ginger, peeled, finely chopped
2 garlic cloves, thinly sliced
4 scallions, white and pale green parts only, thinly sliced
Kosher salt, freshly ground pepper
2 Tbsp. unsalted butter, cut into pieces
1 Tbsp. soy sauce
1 tsp. toasted sesame oil

Steps:

  • Place rice cakes in a medium bowl and pour in cold water to cover. Let soak 10 minutes. Drain, rinse, and pat dry.
  • Heat vegetable oil in a large skillet over medium-high. Add pork and cook, undisturbed, until browned underneath, about 2 minutes. Break up with a wooden spoon or a spatula and continue to cook, stirring and breaking into large pieces, until browned all over but still pink in places, about 2 minutes more. Add rice cakes, ginger, garlic, and half of scallions; season with salt and plenty of pepper. Cook, stirring occasionally, until pork is cooked through and rice cakes are browned in spots, about 4 minutes. If pan looks a bit dry at any point, pour in a little more oil. Remove pan from heat; add butter, soy sauce, and sesame oil and toss to coat.
  • Transfer pork mixture to a platter and top with remaining scallions.

PORK WITH PEACHES

Pork with Peaches image

This fruit and meat combo is great. Give it a bash as it makes a really good change to plain old roast pork.

Provided by Jamie Oliver

Categories     main-dish

Time 1h35m

Yield 6 to 8 servings

Number Of Ingredients 10

1 (3 1/2 pound) (1 1/2 kilogram) pork loin, boned
1 bunch fresh thyme, leaves picked
1 bulb garlic
7 ounces (200 grams) butter
2 tins (cans) peaches in natural juice, drained
Salt and freshly ground black pepper
Around 15 slices of pancetta, streaky bacon, or Parma ham
1 glass (about 6 ounces) white wine
A little flour
1 glass (about 6 ounces) water

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C/gas 7).
  • Score the skin of the pork through the fat, the incisions should be about 1 centimeter apart. Turn over. Make a pocket for the stuffing by cutting an incision at an angle, about 3 inches (7.5 centimeters) deep in the center of the streaky part of the loin, working away from the eye meat. Starting slightly in from the side of the meat, slowly slice along the loin not quite to the end, this will ensure your stuffing won't fall out.
  • Chop half the thyme with 1 clove of garlic and scrunch together with the butter, 1 tin of peaches, and a good pinch of salt and pepper. Push the butter into the pocket and pat back into shape. Lay the pancetta, bacon or Parma ham over the pork, leaving the skin side uncovered, and tie up firmly with 3 to 4 pieces of string.
  • Place skin-side up in a roasting tray with the remaining peaches, the garlic cloves, thyme, and half of the white wine. Roast for around 1 hour until the skin is crisp and golden.
  • When ready, remove the pork and peaches to a plate and leave to rest for 15 minutes whilst you finish the sauce. To do this, remove most of the fat from the roasting tray, then place the tray over a high heat. Squash the cooked garlic and add 1 tablespoon of flour. Stir and add the rest of the wine with a glass of water or stock. Simmer and leave to reduce for a few minutes. Strain and add any extra juices from the rested pork. Check the seasoning and consistency and serve drizzled over the sliced pork.

PULLED PORK AND VEGGIE RICE BOWL

Pulled Pork and Veggie Rice Bowl image

Provided by Jeff Mauro, host of Sandwich King

Categories     main-dish

Time 16h30m

Yield 4 servings

Number Of Ingredients 9

One 3- to 4-pound boneless pork shoulder or Boston butt, with fat cap
3 tablespoons favorite barbecue rub, such as Mauro Provisions BBQ Chip Dust or Black Powder Rub, plus additional for broiling and serving
1 cup barbecue sauce
2 cups long-grain white rice
1/2 teaspoon kosher salt
Nonstick cooking spray, for the bowl
2 avocados, thinly sliced and fanned out
1 cup finely diced carrots
1 cup finely diced pineapples

Steps:

  • For the pulled pork: Using a sharp knife, score the fat cap into a crosshatch pattern. Rub the entire shoulder with the barbecue rub. Wrap it in plastic wrap and let it marinate in the refrigerator overnight (this step can be skipped, but it really makes the pork super tasty, so try to plan ahead!).
  • In a medium bowl, whisk together the barbecue sauce and 1 cup water. Place the pork in a 6-quart slow cooker and pour the sauce around it. Set the slow cooker to low for 8 hours and cover. Let it roll!
  • For the rice: Rinse the rice under cold water until the water runs clear, then drain. Combine the rice, salt and 3 cups water in a medium saucepan and bring to a simmer. Stir once to ensure nothing is sticking to the bottom. Cover and simmer on very low for about 20 minutes. Remove from the heat with the COVER STILL ON. Let sit for 20 minutes. Fluff before serving.
  • Once the pork is extremely fork tender, position an oven rack in the lower third of the oven and preheat the broiler on low. Transfer the pork, fat-side up, to a baking sheet. Reserve the cooking liquid. Dust the pork with a little more rub and broil until the fat is crispy, about 4 minutes.
  • Transfer the pork to a cutting board. Remove the crispy fat and set aside. Shred the meat with 2 forks and transfer to a serving bowl. Drizzle it with some of the cooking liquid. Keep warm until ready to assemble the bowls.
  • For the bowl: Spray a small bowl with nonstick spray. Pack some rice in the bowl, then turn the molded rice out into a larger bowl to make a beautiful dome of rice. Add a nice portion of pork and some pork fat on the side of the rice. Fan the avocado in the bowl, then arrange the carrots and pineapple separately on the rice. Sprinkle the meat with extra barbecue rub and a drizzle of the reserved cooking liquid. Repeat making 3 more bowls.

PEACHY PLUM PORK STIR FRY

Peachy Plum Pork Stir Fry image

Easy quick stir fry. Pork tenderloin, some fresh (or you can use frozen peaches) and take advantage of a jarred plum sauce for this quick dish. I love to serve this over brown rice, but use a white or Jasmine rice if you prefer. It takes literally minutes. Try a nice salad with Napa cabbage on the side with a sesame dressing and some fresh red onion. Stir fries are great and take just minutes which is the perfect midweek dinner.

Provided by SarasotaCook

Categories     < 60 Mins

Time 35m

Yield 4-6 Individual Servings, 4-6 serving(s)

Number Of Ingredients 17

1 1/4 lbs pork tenderloin (cut lengthwise and then thin sliced, TIP ... freeze the pork loin for about 30 minutes and it will m)
1 small onion (cut in half and thin sliced)
3/4 cut scallion (cut in 1-inch pieces on an angle)
1/2 cup red pepper, thin sliced
1/2 cup green pepper, thin sliced
1 1/2 cups peaches (thin sliced and peeled, I used peaches, but if in season, please use fresh)
3/4 cup chinese plum sauce
1/2 cup apple juice
2 tablespoons soy sauce
3 teaspoons garlic, minced
1 1/2 tablespoons lemon juice
1 1/2 tablespoons cornstarch
2 tablespoons vegetables or 2 tablespoons canola oil to saute the pork
salt
pepper
6 cups cooked brown rice
cilantro, as a garnish (optional)

Steps:

  • First -- prepare all your vegetables because this is a quick stir fry and it doesn't take long at all. So have everything ready.
  • Peaches -- if using frozen peaches which I do when not in season, just thaw. I like to keep them in slices, but if you want them diced that is fine. I like the whole slice when I serve the dish.
  • Rice -- Cook the rice accordingly to directions. Now you can use quick cooking, boil in a bag, or use the traditional method. What ever rice you decide to use, just follow direction for about 6 cups of rice. NOTE: I like to cook my rice in chicken stock for more flavor, but it is not necessary.
  • Sauce -- In a small bowl, add the apple juice, plum sauce, soy sauce and cornstarch.
  • Saute -- In a wok (if you have one) or a large skillet, add the oil and bring to medium high to high heat. Season the pork with salt and pepper on both sides and add it to the pan and saute 2-3 minutes. Add in the garlic, onion, red and green peppers and cook until the vegetables are until crisp tender and the pork is no longer pink.
  • Add in the sauce and cook until the bubbly and slightly thickened. Then add the peaches, scallions and lemon juice and stir to combine. Cook just another minute until the peaches are heated through.
  • Serve -- I like to serve this family style over the rice. Garnish with some fresh cilantro if you want.
