PORK CARNITAS TACOS

Steps:
- Tie the thyme sprigs together with kitchen twine; combine the pork, garlic, bay leaves and thyme bundle in a large Dutch oven. Add the vegetable oil, lime juice, orange juice, 1 cup water and 2 teaspoons salt and bring to a simmer over medium heat. Reduce the heat to low; cover and gently simmer, stirring occasionally, 1 hour.
- Uncover the pot and continue simmering, stirring once or twice, until the pork is tender, about another 1 hour, 15 minutes. Increase the heat to medium; cook, stirring occasionally, until the liquid is mostly evaporated, about 35 more minutes. Discard the thyme bundle and bay leaves, then increase the heat to medium high so the pork starts to fry. Cook, stirring and scraping the bottom of the pot occasionally, until the pork is golden brown and crisp in spots, about 10 more minutes. Serve in tortillas with assorted toppings.
- Combine 1 thinly sliced red onion, 1 cup cider vinegar, 1/2 cup water, 2 tablespoons sugar, 2 bay leaves, 1 teaspoon each coriander seeds, mustard seeds and cumin seeds, 1/2 teaspoon dried oregano and 1/4 teaspoon kosher salt in a small saucepan. Boil 2 minutes; let cool.
DOUBLE-PORK CARNITAS
It's worth seeking out pork belly for the amazing texture it lends, but if you can't get it, substitute with another pound of shoulder.

Steps:
- Place pork shoulder, pork belly, stock, salt, and pepper in a large heavy pot; cover and bring to a boil over medium-low. Reduce heat and simmer until pork is tender and shreds easily, about 2 hours. Uncover; cook 10 minutes to reduce liquid (but not completely). Remove from heat.
- Transfer half of pork and pan juices to a large skillet, preferably nonstick, and cook over high until liquid evaporates and pork begins to fry in its rendered fat. Fry, stirring occasionally and pressing on pork with spoon to break up, until browned and just beginning to crisp, 10-15 minutes. Most of the pieces should be bite-size with some smaller shredded and super-crisp bits in the mix. Using a slotted spoon, transfer to a paper towel-lined baking sheet. Cover with foil to keep warm and moist. Repeat with remaining pork.
- Serve carnitas with tortillas, onion, limes, avocado, herbs, and cabbage.
- Do Ahead
- Pork can be braised (do not fry) 3 days ahead. Cover and chill.

- In a large skillet, saute onion in oil until tender. Add the garlic, cumin, oregano, chili powder and cayenne; cook 1 minute longer. Add the pork, cheese, cilantro, salsa and lime juice. Cook and stir until cheese is melted., Place 2 tablespoons filling over lower third of each tortilla. Roll up tightly. Secure with toothpicks. Place taquitos on a greased baking sheet. Bake at 400° for 8 minutes. , Cool completely on a wire rack. Discard toothpicks. Place taquitos on a waxed paper-lined 15x10x1-in. baking sheet; freeze until firm. Transfer to a resealable plastic freezer bag. May be frozen for up to 3 months., To use frozen taquitos: Arrange desired number of taquitos in a single layer on a greased baking sheet. Bake at 400° for 12-15 minutes or until golden brown. Serve with toppings.

- Cut the pork into 1/2 inch cubes.
- Place in stock pot with garlic, oregano, bay leaf, wine, salt and pepper.
- Bring to a boil over medium heat, stirring occaisionaly.
- Partially cover and cook BARELY SIMMERING for 2 hours.
- Remove the cover and add 1/2 c water.
- Increase the heat back to med-high and continue cooking, stirring frequently, until the pork is very soft and shreds easily.
- Watch carefully, so that it doesn't burn.
- Remove bay leaf, and stir meat vigorously to shred meat.
- Serve in warm tortillas, topped with sour cream, tomatoes, and guacamole.

- 1. Preheat oven to 450°F.
- 2. Blend the garlic, onion, oregano, thyme, salt and 1/2 cup of water in a blender until fairly smooth.
- 3. Combine the pork and buy leaves in a 6-quart dutch oven or deep baking dish that can hold the porkin no more than 2 layers. Pour the blended mixture and the Coca-Cola over the pork and stir & toss well.
- 4. Cover the pot and cook in the oven until the pork is very tender, about 2 hours. The sides of the pot might look dark. Thats just fine.
- 5. Uncover the pot and return to the oven. Continue cooking, tossing well and scraping the bottom and sides of pot every 10 minutes., until the pork is slightly crispy on the outside and deep golden brown, about 30 minutes. Coarsely shred the pork.
- 6. Make Ahead: You can make carnitas up to three days before you plan to serve.
- 7. Serve alongside 24 warm CORN TORTILLAS and LIME WEDGES and top with CHOPPED WHITE ONION, CHOPPED CILANTRO, and FRESH GREEN SALSA, JALAPENO AND PINAPPLE SALSA, OR PICO DE GALLO WITH LEMON ZEST.

- Slow-Cooked Mexican Carnitas Recipe Note that the carnitas cooking time is about 2 hours, so plan accordingly. The carnitas can be made well ahead and refrigerated or frozen. Re-warm before using.
- For the Mexican Crema: Combine all the ingredients in a bowl, cover with plastic wrap, and set it out at room temperature for 3 hours. Refrigerate if making well ahead, but bring to room temperature before serving.
- For the Quick Pickled Onions: Combine vinegar, sugar and salt in a medium bowl. Add sliced onion and stir to combine. Press onion below the surface of the vinegar as much as possible. Let stand at room temperature for 1 hour. If making well ahead, cover and refrigerate. Drain onions from liquid before using.
- For the tacos: Fill tortillas with warm carnitas. If desired, you can crisp up the carnitas by frying in a skillet with a little oil over medium-high heat until crisp. Top with sliced lettuce. Sprinkle with cheese and drizzle with Mexican crema. Top with pickled onions and garnish with jalapeno rings and chopped cilantro.
