5 sprigs thyme
3 pounds boneless pork butt (fat cap intact), cut into 2-inch chunks
5 cloves garlic
2 bay leaves
1/2 cup vegetable oil
Juice of 2 limes
Juice of 1 orange
Kosher salt
Corn tortillas, warmed, and assorted toppings, for serving

Steps:

  • Tie the thyme sprigs together with kitchen twine; combine the pork, garlic, bay leaves and thyme bundle in a large Dutch oven. Add the vegetable oil, lime juice, orange juice, 1 cup water and 2 teaspoons salt and bring to a simmer over medium heat. Reduce the heat to low; cover and gently simmer, stirring occasionally, 1 hour.
  • Uncover the pot and continue simmering, stirring once or twice, until the pork is tender, about another 1 hour, 15 minutes. Increase the heat to medium; cook, stirring occasionally, until the liquid is mostly evaporated, about 35 more minutes. Discard the thyme bundle and bay leaves, then increase the heat to medium high so the pork starts to fry. Cook, stirring and scraping the bottom of the pot occasionally, until the pork is golden brown and crisp in spots, about 10 more minutes. Serve in tortillas with assorted toppings.
  • Combine 1 thinly sliced red onion, 1 cup cider vinegar, 1/2 cup water, 2 tablespoons sugar, 2 bay leaves, 1 teaspoon each coriander seeds, mustard seeds and cumin seeds, 1/2 teaspoon dried oregano and 1/4 teaspoon kosher salt in a small saucepan. Boil 2 minutes; let cool.

3 pounds boneless pork shoulder (Boston butt), cut into 1 1/2-inch pieces
1 pound pork belly, cut into 1-inch pieces
1 cup homemade chicken stock or low-sodium chicken broth
1 tablespoon (heaping) kosher salt
1 teaspoon freshly ground black pepper
Warm corn tortillas, chopped white onion, lime wedges, sliced avocado, dried oregano, chopped cilantro, and shredded cabbage (for serving)

Steps:

  • Place pork shoulder, pork belly, stock, salt, and pepper in a large heavy pot; cover and bring to a boil over medium-low. Reduce heat and simmer until pork is tender and shreds easily, about 2 hours. Uncover; cook 10 minutes to reduce liquid (but not completely). Remove from heat.
  • Transfer half of pork and pan juices to a large skillet, preferably nonstick, and cook over high until liquid evaporates and pork begins to fry in its rendered fat. Fry, stirring occasionally and pressing on pork with spoon to break up, until browned and just beginning to crisp, 10-15 minutes. Most of the pieces should be bite-size with some smaller shredded and super-crisp bits in the mix. Using a slotted spoon, transfer to a paper towel-lined baking sheet. Cover with foil to keep warm and moist. Repeat with remaining pork.
  • Serve carnitas with tortillas, onion, limes, avocado, herbs, and cabbage.
  • Do Ahead
  • Pork can be braised (do not fry) 3 days ahead. Cover and chill.

1 medium onion, finely chopped
1 tablespoon canola oil
2 garlic cloves, minced
2 teaspoons ground cumin
1 teaspoon dried oregano
1 teaspoon chili powder
1/4 teaspoon cayenne pepper
2 cups shredded cooked pork
1 cup shredded Mexican cheese blend
1/4 cup minced fresh cilantro
1/4 cup salsa verde
1 tablespoon lime juice
12 corn tortillas (6 inches), warmed
Toppings: sour cream, guacamole and additional salsa verde

Steps:

  • In a large skillet, saute onion in oil until tender. Add the garlic, cumin, oregano, chili powder and cayenne; cook 1 minute longer. Add the pork, cheese, cilantro, salsa and lime juice. Cook and stir until cheese is melted., Place 2 tablespoons filling over lower third of each tortilla. Roll up tightly. Secure with toothpicks. Place taquitos on a greased baking sheet. Bake at 400° for 8 minutes. , Cool completely on a wire rack. Discard toothpicks. Place taquitos on a waxed paper-lined 15x10x1-in. baking sheet; freeze until firm. Transfer to a resealable plastic freezer bag. May be frozen for up to 3 months., To use frozen taquitos: Arrange desired number of taquitos in a single layer on a greased baking sheet. Bake at 400° for 12-15 minutes or until golden brown. Serve with toppings.

3 lbs boneless pork
4 cloves minced garlic
2 teaspoons fresh oregano (or 1/2 tsp dried)
1 bay leaf
1/2 cup dry white wine
1 teaspoon fresh ground black pepper
1/4 teaspoon salt
1 dozen warmed flour tortilla
guacamole
sour cream chopped tomato

Steps:

  • Cut the pork into 1/2 inch cubes.
  • Place in stock pot with garlic, oregano, bay leaf, wine, salt and pepper.
  • Bring to a boil over medium heat, stirring occaisionaly.
  • Partially cover and cook BARELY SIMMERING for 2 hours.
  • Remove the cover and add 1/2 c water.
  • Increase the heat back to med-high and continue cooking, stirring frequently, until the pork is very soft and shreds easily.
  • Watch carefully, so that it doesn't burn.
  • Remove bay leaf, and stir meat vigorously to shred meat.
  • Serve in warm tortillas, topped with sour cream, tomatoes, and guacamole.

8 medium garlic cloves, peeled
1/2 medium white onion, roughly chopped
1 tablespoon Mexican oregano, dried
1/2 teaspoon dried thyme
5 teaspoons kosher salt
5 lbs boneless pork shoulder, cut into 2-inch chunks
dried bay leaf
1 cup Coca-Cola

Steps:

  • 1. Preheat oven to 450°F.
  • 2. Blend the garlic, onion, oregano, thyme, salt and 1/2 cup of water in a blender until fairly smooth.
  • 3. Combine the pork and buy leaves in a 6-quart dutch oven or deep baking dish that can hold the porkin no more than 2 layers. Pour the blended mixture and the Coca-Cola over the pork and stir & toss well.
  • 4. Cover the pot and cook in the oven until the pork is very tender, about 2 hours. The sides of the pot might look dark. Thats just fine.
  • 5. Uncover the pot and return to the oven. Continue cooking, tossing well and scraping the bottom and sides of pot every 10 minutes., until the pork is slightly crispy on the outside and deep golden brown, about 30 minutes. Coarsely shred the pork.
  • 6. Make Ahead: You can make carnitas up to three days before you plan to serve.
  • 7. Serve alongside 24 warm CORN TORTILLAS and LIME WEDGES and top with CHOPPED WHITE ONION, CHOPPED CILANTRO, and FRESH GREEN SALSA, JALAPENO AND PINAPPLE SALSA, OR PICO DE GALLO WITH LEMON ZEST.
