EASY TERIYAKI CHICKEN
Try this easy, sticky Asian-style teriyaki chicken for a speedy weeknight supper - it takes just 20 minutes to make! Serve it with sticky rice and steamed greens

Steps:
- Heat the oil in a non-stick pan over a medium heat. Add the chicken and fry for 7 mins, or until golden. Add the garlic and ginger and fry for 2 mins. Stir in the honey, soy sauce, vinegar and 100ml water. Bring to the boil and cook for 2 - 5 mins over a medium heat until the chicken is sticky and coated in a thick sauce.
- Scatter over the spring onions and sesame seeds, then serve the chicken with the rice and steamed veg.

TERIYAKI CHICKEN RICE BOWL FOR ONE
So simple and makes for a good hot meal for lunch or dinner. Easy enough for a teen or college student to prepare. Also, good to use up those odd and end pieces of veggies. I used the least amount of cook time, but that would depend on how the chicken is cooked.

Steps:
- Grill chicken breast (about 8-10 minutes in a grill pan or skillet) or bake in oven (350° for about 30 minutes).
- Pour sesame oil in hot wok or skillet and sauté vegetables for about 3 minutes.
- Mix teriyaki sauce and a few drops of srirachi chili garlic sauce together. Chop chicken breast into slices and pour teriyaki sauce over chicken. Place rice in the bottom of a large bowl. Put sautéed vegetables over rice. Top off bowl with seasoned chicken. Garnish with sliced green onions and/or sesame seeds.
QUICK SPICY TERIYAKI PACKET CHICKEN FOR ONE
I came up with this one night when I was on my own for dinner. I used Recipe #236806 in this recipe, but you can use any teriyaki sauce you like. You can also expand the recipe to a baking dish and cover with foil. You could also do this on the grill.

Steps:
- -Preheat oven to 350.
- -Cut off a piece of foil between 9-12".
- -Spread 1 Tbsp of olive oil in the center.
- -Place chicken on oil.
- -Spread teriyaki sauce over chicken, then add Rotel tomatoes w/ diced green chiles.
- -Bake for 35-40 min, or until juices run clear from the thickest part of the chicken.
- -Serve with packet vegies, pasta, rice or a nice green salad.

- Rinse the chicken in water and pat dry with paper towels. Season the chicken lightly with kosher salt and set aside.
- Add the soy sauce, sugar and mirin to a small sauce pan. Mix the cornstarch in the water and add to the sauce pan. Bring the mixture to a boil, then reduce to simmer. Add the rice vinegar and Japanese 7 spice and cook for 5-10 minutes or until the sauce thickens, stirring occasionally.
- Spray a grill pan with cooking spray and bring to medium high heat. Add the chicken thighs but don't crowd the pan. Cook the chicken for 5-7 minutes on each side. Baste each side of the chicken with the 7 spice teriyaki sauce and cook for an additional 2 minutes each side. Remove from the pan, lightly tent with foil and rest for 3-5 minutes. Repeat with the other chicken thighs if needed.
- To prepare the bowls, spoon rice into the bottom of the bowl then layer with shredded carrot, shredded green onion and edamame. Slice or chop the chicken thighs and place on top then drizzle with the 7 spice teriyaki sauce. Garnish with sesame seeds.

- MARINATE: Add the kosher salt, white pepper, garlic powder, baking soda, and 1 tablespoon of water to a medium bowl. Stir in the chicken and allow the chicken to marinate for at least 5 minutes (if you have 30 minutes, that would be even better!)
- TERIYAKI SAUCE: In a mason jar with a tight-fitting lid, combine the soy sauce, garlic, vinegar, dark brown sugar, ginger, cornstarch, toasted sesame oil, red pepper flakes (if using), and 2 tablespoons of water. Cap the jar and shake until combined.
- CHICKEN TERIYAKI: Heat a generous tablespoon of oil in a large pan over medium high heat. Stir fry the chicken stirring occasionally so that it browns evenly on all sides. Add in the steamed broccoli. Pour in the sauce and allow to cook for a minute or so until it thickens, stirring occasionally so the sauce does not stick to the pan. Top with sliced green onions, or sesame seeds as desired. Serve with freshly made steamed rice and additional sautéed veggies.
