2 cups fusilli pasta
1 medium onion (diced)
2 celery stalks (diced)
12 oz bag green beans (thawed)
2 Tbsp extra virgin olive oil
1 small clove garlic (minced)
3/4 cup cheddar cheese (shredded)
11 oz can cream of celery soup
3 cups turkey (leftover, cubed or shredded)
salt and pepper (to taste)
1/4 cup breadcrumbs (or panko)

Steps:

  • Preheat oven to 350 degrees.
  • Cook pasta until just before al dente, set aside.
  • Heat oil in large skillet over medium heat then sauté onions and celery. Cook until onion is translucent and celery is soft. Add garlic and green beans and cook an additional 2 minutes.
  • Transfer vegetable mixture to large mixing bowl then add turkey, pasta, soup, and cheese. Combine thoroughly. Season with salt and pepper to taste.
  • Pour mixture into a 9" square casserole dish and sprinkle with Panko.
  • Bake uncovered, 20-30 minutes until the center is hot and sides are bubbly.

1/2 cup water
1 small stalk celery
1/2 teaspoon dried thyme leaves
1 dried bay leaf
2 turkey thighs (about 1 1/2 pounds)
1 envelope (1 1/4 ounces) Alfredo sauce mix
1 can (10 3/4 ounces) condensed 98% fat-free cream of mushroom soup
1 package (9 ounces) frozen chopped broccoli, thawed and drained
8 ounces uncooked rotini pasta
1/2 cup grated Parmesan cheese

Steps:

  • Pour broth and water into 3 1/2- to 4-quart slow cooker. Add celery, thyme and bay leaf. Top with turkey.
  • Cover and cook on low heat setting 6 to 8 hours or until turkey is tender. Remove turkey, celery and bay leaf; discard celery and bay leaf.
  • Increase heat to high setting. Mix sauce mix (dry) and soup; stir into slow cooker. Stir in broccoli. Cover and cook about 30 minutes or until thickened.
  • Cook pasta as directed on package. While pasta is cooking, remove turkey meat from bones and cut into pieces; discard bones.
  • Return turkey to slow cooker. Stir in pasta and cheese.

A delicious leftover turkey casserole with pasta and white sauce, this easy noodle bake will become a family favorite.

9 oz pasta (250 g, Note 1)
2 tablespoons butter (divided)
1 medium onion (about 100 g/ 3.5 oz)
1 large garlic clove
1 tablespoon all-purpose flour
1 cup milk (250 ml)
1 1/2 cup grated Gouda (150 g, Note 2)
1 teaspoon Dijon mustard
a few gratings of nutmeg
1 1/4 cup chopped leftover turkey (150 g. Note 3)
2 eggs
1 teaspoon fine sea salt (more or less to taste)
freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees Fahrenheit/ 200 degrees Celsius. Lightly grease a casserole dish of about 10x8 inches/ 25x20 cm.
  • Cook noodles: Bring a large pot of water to a boil. Salt the water and cook the noodles according to the package instructions. Let drain well.
  • Cook onion: In the meantime, halve and slice the onion. Heat 1 tablespoon of the butter in a non-stick saucepan. Cook the onion slices for 4-5 minutes or until golden. Add the finely chopped garlic and stir for another minute. Remove to a bowl or small plate.
  • Make white sauce: Melt the remaining tablespoon of butter in the same saucepan. Sprinkle the flour on top and stir it for one minute. Slowly start adding the milk while whisking all the time to avoid the formation of clumps. If you do happen to have too many clumps anyway, you can save the sauce by blending it shortly with a handheld blender. Let the sauce bubble gently for about 2 minutes while stirring very often. Then, take it off the heat and stir in ¾ of the grated cheese, mustard, nutmeg, salt and pepper.
  • Separate the eggs. Add the egg yolks to the sauce and stir very well to incorporate. In a clean bowl, whisk the egg whites until soft peaks form. Gently fold the egg whites into the sauce.
  • Assemble the dish: Place the cooked pasta and the chopped turkey meat into the prepared casserole dish and mix them well. Pour the sauce over the noodles in the casserole dish and mix everything together.
  • Bake: Sprinkle the remaining cheese on top and bake the noodle turkey casserole for about 20 minutes until heated through and golden.
  • Rest for about 5 minutes and serve as suggested above.

1 lb ground turkey (extra lean)
3 cups (10 oz) whole wheat penne/fusilli pasta (uncooked)
4 - 5 cups kale ( stems removed & chopped)
1 large onion ( finely chopped)
4 large garlic cloves ( minced)
1 tbsp olive oil ( extra virgin)
1 tbsp oregano (dried)
1 tsp rosemary (dried)
1 tsp basil (dried)
Pinch of red pepper flakes
1/2 tsp salt
Ground black pepper ( to taste)
28 oz tomato sauce (low sodium)
1 tbsp honey or maple syrup
1 tbsp balsamic vinegar
1 cup pasta water
2 cups 6 oz mozzarella cheese (shredded & divided)
1/3 cup Italian parsley (chopped)
Cooking spray (I use Misto)

Steps:

  • Cook pasta al dente as per package instructions, undercooking by 4 minutes. Drain, reserving 1 cup of pasta water, and set aside. Preheat oven to 350 degrees F and spray 9 x 13 baking dish with cooking spray.
  • In the meanwhile, preheat large skillet on medium heat and add olive oil. Add onion and garlic, sauté for 2 - 3 minutes, stirring occasionally. Add oregano, rosemary, basil, pinch of red pepper flakes, salt and pepper. Cook for 30 seconds, stirring a few times. Add ground turkey and cook for another 5-7 minutes, breaking meat into pieces and stirring occasionally.
  • Add tomato sauce, honey, balsamic vinegar and pasta water. Stir, bring to a boil and simmer for 2 minutes. Add kale and stir to combine.
  • Now add cooked pasta and stir to combine more.
  • Transfer half of the mixture in previously prepared baking dish and sprinkle with 1 cup cheese. Add remaining pasta meat mixture and sprinkle with remaining 1 cup cheese. Cover with foil and bake for 20 minutes.
  • Remove from the oven, let stand for 10 minutes, garnish with parsley and serve hot. With a glass of red wine. OMG, so good!

3 cups veggie or chicken stock (low sodium)

1 lb broccoli florets
3 tomatoes (diced)
1-2 garlic cloves (grated)
Red pepper flakes (a pinch)
1/2 cup parsley (finely chopped)
1/2 cup Parmesan cheese (grated)

Steps:

  • Preheat large Dutch oven or pot on medium heat and swirl oil to coat. Add onion and saute for 3 minutes, stirring occasionally.
  • Add ground turkey and cook for 5 minutes, breaking into pieces and stirring with spatula.
  • Add pasta, stock, salt and pepper; stir and level with spatula. Then cover and cook on low heat for 10-12 minutes, checking after 10 minutes. Brown rice pasta and any gluten free pasta cooks faster than wheat.
  • When pasta is al dente (not too soft, so it doesn't become a mush), turn off heat and add broccoli, tomato, garlic and red pepper flakes. Stir, cover and let stand for 5 minutes.
  • Add parsley and Parmesan cheese and gently stir. Serve hot.

leftover boned turkey (use a large amount)
5 oz fettuccine, cooked and drained
