GRILLED CHICKEN THIGHS WITH PEACH AND CHERRY SALSA



Grilled Chicken Thighs with Peach and Cherry Salsa image

Toss together a lively peach and cherry salsa, and serve on top of grilled chicken thighs. We wait all year for fresh stone fruit, so take advantage of the abundance and dish up a slightly different take on salsa. Grilling chicken thighs seems to be a bit more forgiving than white meat. The marinade for the chicken is tasty, too!

¼ cup extra-virgin olive oil
1 orange, juiced
1 lime, juiced
2 cloves garlic, minced
½ teaspoon ground cumin
¼ teaspoon ground coriander
¼ teaspoon cayenne pepper
¼ teaspoon smoked paprika
salt and ground black pepper to taste
8 boneless, skinless chicken thighs
1 ½ cups peeled and diced fresh peaches
1 cup pitted and diced red cherries
⅓ cup chopped cilantro
2 tablespoons seeded and minced jalapeno pepper
2 tablespoons minced red onion
1 tablespoon fresh lime juice
2 tablespoons extra-virgin olive oil, or as needed

Steps:

  • Add olive oil, orange juice, lime juice, garlic, cumin, coriander, cayenne, paprika, salt, and pepper to a gallon-sized zip-top bag. Seal and gently squeeze the ingredients together until combined. Add chicken thighs, press out most of the air, and seal.
  • Lay the bag flat in the refrigerator so that the chicken thighs are in a single layer. Marinade for at least 4 hours, turning the bag over every 2 hours.
  • Prepare the salsa before lighting the grill. Combine peaches, cherries, cilantro, jalapeno, red onion, and lime juice in a medium bowl. Toss gently and refrigerate.
  • Clean and preheat a gas grill to medium heat, about 20 minutes.
  • Brush grill grates with olive oil. Remove chicken thighs from the marinade. Discard the marinade. Grill chicken in a single layer until no longer pink in the center, 5 to 7 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Serve with salsa.

2 cloves garlic
2 peaches
1 c pitted cherries (quartered)
1 large bunch cilantro (stems removed, finely chopped)
1 jalapeno (diced)
1/2 small red onion (finely diced)
1 1/2 limes (juiced, and 1 whole lime, zested)
Salt to taste

Steps:

  • Use a cherry pitter for the cherries to remove all seeds.
  • In a large bowl, combine all ingredients and mix well.
  • Allow salsa to chill and macerate for at least 15 minutes before serving.

1 cup cherries (about 22 cherries), pitted and cut into quarters
2 tablespoons aged balsamic vinegar or balsamic reduction
1 tablespoon olive oil, plus more for drizzling
1 small shallot, minced
Kosher salt and freshly ground black pepper
5 peaches
One 6-ounce log mozzarella
12 fresh basil leaves, cut into chiffonade strips

Steps:

  • Combine the cherries, balsamic, oil, shallot and some salt and pepper in a bowl. Let sit in the fridge for 30 minutes.
  • Cut the peaches in half and remove the pits. Cut lengthwise into slices. Slice the mozzarella 1/2-inch thick.
  • Layer the peaches and mozzarella on a serving plate, alternating one after the other. Spoon the relish over the top, then sprinkle with salt and drizzle with olive oil. Scatter the basil over the top.

4 pounds tomatoes (about 12 medium), chopped
1 medium onion, chopped
4 jalapeno peppers, seeded and finely chopped
1/2 to 2/3 cup packed brown sugar
1/4 cup minced fresh cilantro
4 garlic cloves, minced
1 teaspoon salt
4 cups chopped peeled fresh peaches (about 4 medium), divided
1 can (6 ounces) tomato paste

Steps:

  • In a 5-qt. slow cooker, combine the first 7 ingredients; stir in 2 cups peaches. Cook, covered, on low 3-4 hours or until onion is tender., Stir tomato paste and remaining peaches into slow cooker. Cool. Transfer to covered containers. (If freezing, use freezer-safe containers and fill to within 1/2 in. of tops.) Refrigerate up to 1 week or freeze up to 12 months. Thaw frozen salsa in refrigerator before serving.
