JACQUES' HOMEMADE COTTON CANDY
Remember you are working with hot sugar so be sure to have a bowl of cold water ready in case you get any of it on your skin. It is best to make sugar on a dry day, as the humidity will melt the sugar.

- To make this recipe at home, you will need a pair of wire cutters and an old inexpensive whisk. Cut the round ends off an inexpensive whisk. Arrange the tines so they are evenly spaced. You will also need an open space to make the cotton candy. At home, slit open a garbage bag and cover the floor area. Wedge 2 long wooden spoons under something heavy so they extend off the edge of the counter.
- Place the sugar, corn syrup, and water in a 2-quart heavy-bottomed saucepan over medium-high heat. Insert a candy thermometer and cook the sugar mixture until it reaches 320 degrees F, what is known as the hard crack stage (the sugar becomes brittle when it comes in contact with a cooler surface). Remove from the heat and carefully pour into a medium-size microwaveable glass bowl. If you leave the sugar in the pan, the sugar will continue to cook and turn dark brown. A glass bowl will hold the temperature of the sugar. I put a towel under the bowl to keep the bowl from tipping over and to protect my hands from the heat of the glass. (The sugar will stay liquid enough to work with easily for about 10 minutes; after that it will start to thicken. If this happens before you are finished, just pop the bowl in the microwave for 3 to 5 minutes, or until the sugar is liquid enough to work with once again.) If you are going to color and/or flavor the sugar, add those drops now.
- Dip the tines into the hot sugar. Allow the sugar to drain off for 1 to 2 seconds until the draining sugar strands are relatively the same consistency. Then wave the whisk over the extended wooden spoons and allow the sugar strands to gently drift until they are resting on top of the spoons. Make sure you are about 12 to 18 inches above the spoons. Use broad long strokes and work quickly. Gather the cotton candy and roll onto paper that you've rolled into a long, thin cone, like cotton candy is served in at the carnival or serve as is. If you need to store the cotton candy for a few hours, place it in an airtight container. The delicate sugar will melt in a humid environment.
COTTON CANDY COOKIES
This is an Adopted Recipe. As the reviews have stated, they really do not taste like cotton candy...more like an old fashion tea cookie. I don't really know why they are called cotton candy, but I can visualize these cooked in different colors of pastel and served on a platter, and they would indeed LOOK like cotton candy. These cookies are delicious!

- Cream together the granulated sugar, powdered sugar, butter, and cooking oil.
- Beat in eggs and vanilla.
- Add dry ingredients, (the next four ingredients) and mix to incorporate.
- Roll dough into small balls about the size of a quarter.
- With a heavy bottomed crystal vase with a decorative bottom, or other cookie press, dip in sugar to coat well.
- Smash each ball of dough so they are spread out and flat.
- Leaving an imprint and sugar.
- Bake in a 375 degree oven for 10 minutes, until the edges just start to turn slightly brown.
- Do not bake too long.
- Cool on the baking sheet briefly then transfer to wire rack to cool the rest of the way.

COTTON CANDY COOKIES
These are my youngest son's very favorite! While fooling around in the kitchen one weekend, I came up with these cookies. Ben said they tasted just like cotton candy, so the name was born! You can easily vary these by changing the flavoring extract. I've included Ben's favorite, raspberry, but these are easily made with coconut extract & taste just like coconut macaroons!

- Preheat oven to 325 degrees.
- Beat egg whites, cream of tarter, & extract until soft peaks form.
- Add sugar gradually, beating to stiff peaks.
- Cover cookie sheets with plain brown paper (from a brown paper bag) or parchment paper.
- Drop cookie mixture from teaspoon onto paper.
- Bake in slow oven (325 degrees) for 20 to 25 minutes.
- Allow to cool slightly on paper (will stick to paper if tried to remove while still hot).
- Cool on wire rack until completely cool.

- Prepare sugar cookies: Preheat oven to 350 degrees F and line baking sheets with parchment paper.
- In the bowl of a stand mixer fitted with the paddle attachment, cream the sugar and butter on medium for 2 to 3 minutes until light and fluffy.
- In a small bowl, whisk together the buttermilk, egg, and cotton candy flavoring. With the mixer on low, slowly pour the buttermilk mixture into the butter mixture and mix until fully incorporated. Scrape bottom of the bowl with spatula and mix for an additional 15-30 seconds until combined.
- Add flour, baking soda, salt and baking powder to the wet ingredients and mix on low speed until just combined. Dough is fully mixed when it comes together and pulls clean away from the sides of the bowl. If mixture is dry, add a teaspoon of buttermilk at a time until you can easily scoop it.
