SPICY GARLIC SHRIMP SKEWERS
Grilled shrimp skewers marinated in chilli, garlic and spices are delicious as an easy appetizer or a light dinner served with salad.

Steps:
- Soak bamboo skewers in boiling water for at least 30 minutes.
- Combine the oil, honey, soy sauce, lemon, chillies, garlic and salt in a blender or food processor (you can use an immersion blender too) and blend until smooth.
- Place the shrimp in a bowl then pour over the marinade. Mix to make sure the prawns are covered then allow to marinade for 10-20 minutes.
- Thread the shrimp onto the skewers, pushing the skewer first through the tail and then through the thicker part to ensure they are secure on the skewers. Brush each skewers with marinade.
- Preheat the grill for 5 minutes on high heat. Add the skewers and cook for 1-2 minutes per side until the shrimp are caramelized and opaque.
- Remove from the grill and serve with lemon wedges.

Steps:
- In a large bowl, mix all the ingredients well, except the shrimp, to make a marinade.
- Add the shrimp; stir to evenly coat.
- Cover and refrigerate for 2 hours.
- Drain shrimp, discarding marinade.
- Thread 6 shrimp each on wooden skewers that have been soaking in cold water for 20 minutes.
- Thread them so that the shrimp lie flat.
- Put skewers on a well oiled rack on a gas grill over medium heat or on charcoal grill 4-6 inches from medium coals.
- Cook, turning once, 6-8 minutes or until shrimp are pink and opaque throughout.

SWEET GRILLED SHRIMP SKEWERS

- Combine brown sugar, lemon juice, molasses, basil, vegetable oil, mustard, honey, clove, ranch dressing, chili powder, and garlic in a large bowl. Toss in shrimp to coat, cover, and refrigerate for 2 hours. Meanwhile, soak wooden skewers in hot water to prevent burning on the grill.
- Preheat an outdoor grill for high heat and lightly oil grate.
- Thread shrimp tightly on to skewers. Cook on the top rack of the grill for approximately 4 minutes, or until the shrimp turns pink on one side. Flip shrimp and cook for an additional 2 to 4 minutes, or until there are no signs of grey. Use a fork to remove shrimp from the skewers.

- Stir the chicken stock, ketchup, soy sauce, rice vinegar and sweet chili-garlic sauce together in a small bowl.
- Heat a wok over high heat until hot. Add the oil and swirl to coat the sides. Add the garlic, ginger, shallot and chili. Stir-fry until fragrant, about 20 seconds. Add the shrimp and stir-fry until they turn pink and curl slightly, 1 to 2 minutes. Pour the sauce mixture into the wok and stir-fry for 1 minute. While stirring in a circular motion, slowly pour in the beaten egg. This will create egg "flowers". Turn off the heat, scoop the contents of the wok onto a platter and serve immediately.

- Alternate prawns and tomatoes onto 8 skewers until all are filled. Lay the skewers in a shallow tray or baking dish. Mix the Fiery guava or sweet chilli dipping sauce with the lime juice and thyme leaves, then pour over the skewers. Leave in the fridge to marinate for 30 mins.
- Place the prawns onto a baking tray and pop under a hot grill or over the barbecue for about 10 mins, turning and basting occasionally. Once cooked, serve with an extra pot of Fiery guava sauce for dipping.

- Whisk the garlic, chilli, parsley, both types of paprika and olive oil together. Stir through the prawns and season well. Cover, put in the fridge and leave to marinate for at least 30 mins before threading on to skewers, interspersing them with a few of the peppers, so that each skewer has about 4-5 prawns.
