FANCY PANTS EASY CHICKEN CASSEROLE
An easy, gorgeous, chicken casserole with spinach, mushrooms, & prosciutto that your family & guests will love! I got this from Trisha Payne.

Steps:
- Preheat oven to 375.
- spray a 13/9" pan with Pam.
- put 2 layers of chicken in pan, cover with prosciutto, top with spinach, sprinkle with a little kosher salt and coarse black pepper.
- top with mushrooms.
- whisk together olive oil, wine and savory herb envelope then pour over everything.
- Lay a piece of foil over (not tight).
- bake for 30 minutes.
- top with cheese and bake for 5 minutes more.

PAT'S CHICKEN CASSEROLE
This is a good recipe to serve at a hot buffet lunch or church dinner. Great at showers too!

Steps:
- Place chicken pieces in a sprayed 9x13-inch baking pan or casserole dish. Combine soups,sour cream and dry soup mix; pour over chicken. Prepare stuffing according to package directions and place evenly over chicken mixture. Bake at 350^ for 35 minutes covered and remove from oven and sprinkle with cheese and return to oven uncovered for 10-15 minutes to melt cheese and brown topping.
PATTI'S CHICKEN CASSEROLE
This is a yummy chicken casserole that a coworker brought to a holiday potluck. Nearly everyone (including me) requested the recipe - after we emptied the dish, mind you. Easy-to-transport comfort food at its finest, I think. Prep time does not reflect time to cook the chicken.

Steps:
- Preheat oven to 375°F.
- Remove approximately 1 1/2 cups of dry stuffing mix from bag and set aside.
- Prepare remainder according to package directions.
- Combine the prepared stuffing, chicken, soups, and sour cream in a casserole dish.
- Mix well.
- Sprinkle remaining dry stuffing mix over top of chicken mixture.
- Cover dish with foil.
- Bake covered at 375°F for 30 minutes.
- Remove foil and bake for 15 minutes more.

PAT'S ALMOND CHICKEN CASSEROLE
Steps:
- Place the chicken in a large, deep skillet and add water to cover. Cook over medium heat for 30 minutes, or until tender.
- Meanwhile, place the almonds in a shallow pan and toast in a 300-degree oven for 5 minutes, or until pale golden brown. Watch closely-almonds can scorch quickly. Tip the almonds into a plate and set aside.
- Drain and cool the chicken and tear it into bite-size pieces. Put the chicken in a large bowl and add the three cans of soup, the sour cream, and the celery; mix well. Spread the chicken mixture in a greased 13 x 9-inch pan. Mix the crackers and butter, and cover the casserole with the crumbs. Bake at 350 degrees for 30 minutes, or until bubbly.
