BREADED PORK CUTLETS WITH LIME
Breaded Pork Cutlets with Lime is one of my family's favorite dishes! I make this monthly, because they request it!

Steps:
- Season cutlets with 3/4 teaspoon seasoned salt.
- Place bread crumbs in a medium shallow bowl.
- In another bowl beat egg whites with sazon.
- Dip pork cutlets in egg whites, then breadcrumb mixture, shaking off excess.
- Heat a large nonstick frying pan on medium to medium heat. Add the olive oil and pork cutlets, cook about 6 minutes on each side, until golden brown and no longer pink in the center.
- Serve with lime wedges.

GARLIC LIME BREADED PORK CUTLETS

Steps:
- Season the pork with the pressed garlic, salt, pepper, and lime juice.
- Toss to coat well and set in the refrigerator.
- Scramble the eggs into a shallow bowl, then add the flour and bread crumbs into their respective shallow bowls.
- Take the cutlets out of the refrigerator, dredge in the flour, dip in the egg wash, and coat with the bread crumbs. Make sure that all surfaces are covered.
- Transfer the breaded cutlets to a dish.
- Place the breaded cutlets in the refrigerator (it helps set the bread coating).
- Pour 1/2 inch of canola oil into a cast iron or other heavy skillet.
- Heat over medium heat until hot.
- Fry the cutlets 2 at a time, for about 3-4 minutes per side, until golden brown.
- Drain in a paper-lined dish or pan.
- If not serving right away, place in a keep-warm oven after frying.
- Serve warm.
CRISPY PORK CUTLETS

- Place pork between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound pork with the smooth side of a meat mallet to a thickness of 1/2 inch.
- Place pork pieces on a plate and season both sides generously with salt and black pepper. Sprinkle 2 tablespoons of flour over pork pieces, lightly coating both sides. Pour eggs over pork, turning to coat.
- Transfer pork pieces to a bowl filled with panko bread crumbs. Press bread crumbs firmly into the meat on both sides. Transfer breaded cutlets to a clean plate, cover with plastic and refrigerate for 15 minutes.
- Melt butter in a skillet over medium heat. Stir in pickles, jalapeno pepper, and green onions; cook and stir until onions have softened, about 3 minutes.
- Sprinkle in 1 1/2 tablespoon flour. Cook and stir for 3 minutes.
- Slowly stir in 2 to 3 tablespoons cold milk, whisking constantly. Stir in remaining milk, Worcestershire sauce, and black pepper. Simmer on low for 5 minutes. Taste and adjust seasoning.
- Heat half the vegetable oil in a large skillet over medium-high heat. Add 4 breaded pork cutlets and cook until pork is not longer pink inside, and the crust is well-browned, 4 to 5 minutes per side. Transfer to plate lined with paper towels. Sprinkle with salt. Repeat with remaining vegetable oil and pork cutlets.

- Preheat oven to 425 degrees. On a rimmed baking sheet, toss panko with oil. Bake, tossing once, until golden brown, 7 to 10 minutes. Transfer to a medium bowl. Reduce oven temperature to 400 degrees.
- Meanwhile, one at a time, place chops between 2 large pieces of plastic wrap. Using a meat mallet or the bottom of a small heavy pan, pound to make 1/4-inch-thick cutlets.
- Dividing evenly, coat pork with mustard; season with salt and pepper. One at a time, dip cutlets into panko, pressing firmly to adhere.

- Mix salt, Italian seasoning, black pepper, chili powder, 1/4 teaspoon garlic powder, paprika, and onion powder together in a bowl. Sprinkle spice mixture generously on both sides of pork chops.
- Heat butter and olive oil in a large, heavy skillet over medium heat. Cook pork until no longer pink in the center and golden brown on both sides, about 5 minutes per side. GARLIC-LIME PORK CHOPS
I came up with this recipe because my husband loves pork chops and I was tired of eating them. It turned out to be so good, I wont make them any other way. The pork chops have a great lime flavor with a little kick. I always serve with rice and veggies. This recipe is for 2, but I have made it for 4. Just use smaller half inch pork chops.

- Rinse pork and place in dish to marinate. Stab pork with a fork till there are plenty holes. Cut the lime in half and squeeze both halves over the pork. Sprinkle salt & pepper and garlic powder over one side of pork. Cover and place in fridge for 20-30 minutes.
- In a large skillet, heat vegetable oil and green onions over medium heat.
- Place pork chops in skillet seasoned side down and sprinkle adobo and creole seasoning on top side of pork. (go heavy on the creole seasoning for a spicy kick).
- Cover and cook for about 7 minutes.
- Uncover and turn pork over. Cover and cook for 5 minutes.

- Place bread slices in a food processor; pulse 10 times or until coarse crumbs measure 1 cup. Place breadcrumbs in a shallow dish.
