My mom gave me this recipe. It's a very quick and versatile sauce that may be doubled or tripled. Substitute other cheeses and herbs for variety.

2 tablespoons olive oil
2 cloves garlic, chopped
1 (6 ounce) can tomato paste
2 teaspoons white sugar
¼ teaspoon dried oregano
¼ teaspoon dried basil
.66 cup water
2 tablespoons grated Parmesan cheese
2 tablespoons red wine
salt and pepper to taste

Steps:

  • In large skillet, saute garlic in oil until golden. Add tomato paste, sugar, oregano, basil, water, cheese and wine. Season with salt and pepper and simmer 10 minutes over medium-low heat.

8 ounces rotini pasta
1 pound lean ground beef
1 small onion, diced
1 (28 ounce) jar spaghetti sauce
4 ounces sliced pepperoni sausage
2 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a medium skillet over medium-high heat, cook beef with onion until beef is brown. Drain. Combine beef mixture with spaghetti sauce, pepperoni and cooked pasta and pour into a 9x13 inch baking dish. Top with mozzarella.
  • Bake in preheated oven for 30 minutes, until cheese is melted and golden.

Easy Homemade Pasta/Pizza Sauce image

An easy, savory pizza sauce. Great on its own or as a base for more complicated pasta sauces.

1 tbsp olive oil
2 tsp garlic powder
1 tsp dried oregano
1 tsp dried basil
2 (14.5 oz) cans diced tomatoes (or 2 lbs fresh tomatoes)
1 tsp sugar
1/2 tsp salt
black pepper, to taste

Steps:

  • In a medium saucepan, mix all of the ingredients. Cook on medium heat and bring to a boil. As soon as it starts to boil, reduce heat to low and let simmer for an hour and a half, stirring occasionally. Pour the contents of the saucepan into a food processor and pulse until you have a nice, smooth sauce.

30 ounces water
1 tablespoon garlic powder
1/2 tablespoon italian seasoning
1/2 tablespoon onion flakes
1/2 tablespoon pepper
1/2 tablespoon salt
1/2 tablespoon sugar

Steps:

  • Empty tomato paste into a large bowl and add equal parts water.
  • Stir with a large spoon until smooth. You may want to use a masher to make it easier to get the clumps out.
  • Add all of your spices to your sauce. The measurements are just a starting point, as you may need to change the measurements according to your taste. The spices in the sauce are what make it great, but the amount of each is up to each individual's taste. Make sure to do several taste tests as you go!
  • Depending on what you're using the sauce for, you may need to simmer the sauce on the stove.
  • This recipe yields a lot of sauce, so either store or freeze for later use.

8 ounces uncooked angel hair pasta
4 teaspoons olive oil, divided
2 cups sliced fresh mushrooms
1/2 cup chopped green pepper
1/4 cup chopped onion
1 can (15 ounces) pizza sauce
1/4 cup sliced ripe olives
1/2 cup shredded part-skim mozzarella cheese
1/4 teaspoon Italian seasoning

Steps:

  • Preheat oven to 400°. Cook pasta according to package directions; drain. , In a large cast-iron or other ovenproof skillet, heat 1 teaspoon oil over medium heat. Add mushrooms, green pepper and onion; saute until tender. Remove with a slotted spoon and keep warm. Increase heat to medium-high. In same skillet, heat remaining oil. Spread pasta evenly in skillet to form a crust. Cook until lightly browned, 5-7 minutes., Turn crust onto a large plate. Reduce heat to medium; slide crust back into skillet. Top with pizza sauce, sauteed vegetables and olives; sprinkle with cheese and Italian seasoning. Bake until cheese is melted, 10-12 minutes.
