Italian Sausage Pasta with White Beans is an easy, hearty dinner to make for the whole family. Choose your favorite Italian sausage and you'll have a delicious dinner!

16 ounces dried orecchiette pasta
2 tablespoons olive oil
12 ounces italian sausage, sliced into bite-sized pieces or crumbled
1 tablespoon chopped garlic
1/2 cup sundried tomatoes, chopped
6 ounces baby spinach, chopped
1 cup chicken broth
3 tablespoons tomato paste
1 15 oz can cannellini beans, rinsed and drained
1 tablespoon dried basil
salt and pepper, to taste
parmesan cheese, for serving

Steps:

  • Cook the pasta in a large pot of salted water al dente according to package directions. Drain the pasta and keep warm. Reserve about one cup of pasta water. Add the oil to the pot and bring heat to medium. Brown the sausage and cook for about 10 minutes or until no longer pink. Add the garlic, sun dried tomatoes and spinach. Cook for a few minutes or until the spinach is wilted. Add the chicken broth and stir in the tomato paste. Add the beans and simmer on low for about 10 minutes or until the veggies are cooked and the sauce thickens. Add the pasta to the pot along with the dried basil. Add the pasta water, stir and cook on low until everything is well blended. Add salt and pepper to taste. Serve in a large bowl with grated Parmesan cheese.

This is a delicious dish that includes beans, pasta and sausage meat all in one, topped with cheese then baked in the oven, it's a very popular Italian dish and there are many versions of this recipe, this one is a family favorite, I hope you enjoy this as much as my family does! --- If you prefer a dryer mixture then drain the tomatoes, ziti pasta works well in place of penne, please adjust the cayenne pepper to suit heat level, prep time includes cooking the pasta.

1 lb hot Italian sausage, casings removed (can use mild, spicy is better to use)
1 lb ground beef
1 large onion, chopped
2 tablespoons fresh minced garlic (or to taste)
1 teaspoon dried oregano, to taste
1/2-1 teaspoon dried thyme
1 (28 ounce) can plum tomatoes, undrained and chopped
2 tablespoons tomato paste
1/4 teaspoon cayenne pepper (or adjust to heat level, can use crushed chili flakes)
1 (15 ounce) can kidney beans, rinsed and drained
1 teaspoon seasoning salt (or to taste, can use white salt)
1/2 teaspoon ground black pepper (or to taste)
1 lb dry penne pasta (can use more or less if desired)
1/2 cup grated parmesan cheese
1/4 cup chopped fresh parsley
12 ounces provolone cheese, grated (more if desired)

Steps:

  • Set oven to 400 degrees F.
  • Grease a 13 x 9-inch baking pan.
  • Cook the pasta until just al dente (do not overcook); drain, do not rinse and immediately toss with 1-2 Tbsp oil to prevent sticking; set aside.
  • In a large fry pan, sauté the sausage, ground beef, onion, garlic, dried oregano and thyme, over med-high heat, until the sausage and the ground beef are brown, crumbling with a fork while cooking (about 6-7 minutes).
  • Add in the undrained tomatoes, tomato paste and the cayenne pepper; simmer for 5-6 minutes (breaking up tomatoes with the back of a spoon).
  • Add in the kidney beans, and heat through.
  • Season with salt and pepper.
  • Add in the cooked pasta, Parmesan cheese and parsley; toss to combine.
  • Transfer the mixture to a prepared baking dish.
  • Top with grated cheese.
  • Bake for 25 minutes, or until cheese melts and the mixture is hot and bubbly.

8 ounces uncooked penne pasta
2 tablespoons olive oil
1 garlic clove, minced
2 cans (14-1/2 ounces each) Italian diced tomatoes, undrained
1 can (15 ounces) cannellini beans, rinsed and drained
1 package (10 ounces) fresh spinach, trimmed
1/4 cup sliced ripe olives
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup grated Parmesan cheese

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, heat oil over medium-high heat. Add garlic; cook and stir 1 minute. Add tomatoes and beans. Bring to a boil. Reduce heat; simmer, uncovered, 5-7 minutes to allow flavors to blend., Add spinach, olives, salt and pepper; cook and stir over medium heat until spinach is wilted. Drain pasta; top with tomato mixture and cheese.

12 ounces linguine
3 links Italian Sausage
2 tablespoons olive oil
4 cloves garlic, smashed
1 pint cherry or grape tomatoes
1 can Cannellini or Great Northern Beans (I prefer Bush's brand), rinsed and drained
1 packed cup fresh baby arugula
salt and pepper, to taste
freshly grated parmesan, for serving (if desired)

Steps:

  • Cook the pasta according to package instructions. Set aside. Cook the Italian sausage and slice into rounds. Set aside and keep warm.
  • Meanwhile, heat the olive oil in a large saute pan or cast-iron skillet over medium heat. Add the smashed garlic cloves and saute for 2-3 minutes, or until fragrant and tender.
  • Lower the heat to medium-low. Add the tomatoes and continue to cook until the tomatoes begin to burst and expel their juices. Add the beans to the pan, stir until combined and coated with olive oil from the pan. Add in the cooked pasta, arugula, and sausage. Stir until heated through.
  • Season to taste with salt and pepper. Serve with freshly grated parmesan cheese, if desired.

Steps:

  • Heat oil in large heavy saucepan on medium heat. Add sausage; cook 10 min. or until browned, stirring frequently. Add onion and carrots; cook 5 min., stirring frequently.

2 tablespoons olive oil
2 cloves garlic, minced
1 red onion, very finely chopped
1 red bell pepper, cut into 1/4-inch dice
1 cup cooked white beans
1 cup chicken stock
1/4 cup finely chopped flat-leaf parsley
1/2 teaspoon hot pepper flakes
Salt and freshly ground black pepper
8 to 10 ounces spaghetti
Freshly grated Parmigiano-Reggiano for serving

Steps:

  • Prepare the sauce: heat the olive oil in a non-stick frying pan. Add the garlic, onion, bell pepper and cook over medium heat until soft, not brown, about 4 minutes.
  • Stir in the white beans and cook for 1 minute. Add the vegetable stock, half the parsley, the pepper flakes, and salt and pepper to taste. The sauce should be highly seasoned. Simmer until the beans are quite soft. Coarsely mash half the beans with a fork.
  • Cook the spaghetti in a large pot in 4 quarts rapidly boiling salted water until al dente, about 8 minutes. Drain well. Meanwhile, bring the sauce to a boil. Transfer the spaghetti and bean sauce to a large shallow bowl and mix well. Sprinkle the spaghetti with the remaining parsley and serve at once with freshly grated cheese on top.

1 tablespoon olive oil
2 lbs sweet mild Italian sausage
2 cups coarsely chopped onions
6 cloves garlic, roughly chopped
1 head escarole, sliced crosswise into 1 inch strips
1 1/2 cups chicken broth
1 1/2 cups beef broth
2 (15 ounce) cans cannellini beans or 2 (15 ounce) cans red kidney beans, drained
1 lb cellentani pasta or 1 lb fusilli, cooked and drained
1 cup freshly grated romano cheese

Steps:

  • Heat oil in a large skillet, cook sausage over medium heat 10 minutes, remove and slice into 1 inch chunks.

1 lb campanelle (bell-shaped pasta), rotini (corkscrew pasta), or medium shells
1/4 cup chopped fresh flat-leaf parsley
1/4 cup chopped fresh basil
1/2 oz finely grated Pecorino Romano (1/4 cup)

Steps:

  • Preheat oven to 400°F.
  • Cut off and discard top of garlic head to expose cloves, then wrap head in foil and roast in middle of oven until cloves are tender, about 45 minutes. Open foil carefully and cool to warm. Squeeze garlic from skins into a small bowl, then mash to a paste with a fork.
  • Heat oil in a 12-inch heavy skillet over moderate heat until hot but not smoking, then cook sausage, stirring and breaking up large pieces, until browned, about 4 minutes. Add sliced garlic, shallot, and red pepper flakes and cook, stirring occasionally, until shallot is pale golden, about 2 minutes.   • Meanwhile, cook pasta in a 6- to 8-quart pot of boiling salted water until al dente, then drain in a colander. Toss pasta with sausage mixture, parsley, basil, cheese, and salt to taste in a large bowl (or in pasta pot) until combined well. Serve with additional cheese, if desired.
