1 tablespoon olive oil
1/2 cup diced onion
1 teaspoon minced garlic
1/2 teaspoon crushed red pepper flakes (or to taste)
1/2 cup dry white wine
2 cups canned crushed tomatoes, not drained
1 lb linguine (or other pasta)
1/4 cup minced fresh parsley leaves
1/2 cup shredded fresh basil leaf
1 teaspoon fennel seed
1 tablespoon minced lemon zest or 1 tablespoon orange zest
salt
fresh ground black pepper
1/2 lb shrimp, peeled, cut-up if very large (use medium or large shrimp)
1/2 lb sea scallops, cut in half if very large

Steps:

  • Bring a big pot of water to a boil.
  • Put the oil in another large, deep pot over medium heat; one minute later, add the onion and cook/stir for 2-3 minutes.
  • Add in the garlic and cook for 1 minute.
  • Add in the red pepper flakes, wine, and tomatoes; bring to a boil; decrease heat to med-low, and let cook for about 15 minutes.
  • Salt the boiling water and cook the pasta until it is tender but firm.
  • When the pasta is almost done, add the parsley, half the basil, and all the remaining ingredients to the sauce; simmer until the seafood is cooked through, about 4-5 minutes.
  • Drain the pasta and serve with the sauce, garnished with the remaining basil.

  • finely chop the garlic, and slice the onions. Add to a pan and sweat.
  • Add the tomatos, white wine and mixed herbs and simmer until a sauce consistancy
  • For a reallly fine sauce just put through a blender. But it is best left chunky for pasta sauce

Steps:

  • Preheat oven to 400°F. Arrange eggplant and onion on large rimmed nonstick baking sheet. Drizzle with oil. Sprinkle with salt and pepper. Roast vegetables until beginning to brown, stirring occasionally, about 25 minutes. Stir zucchini and garlic into vegetables; continue to roast until all vegetables are tender, about 20 minutes longer. Stir crushed tomatoes into vegetables on baking sheet; roast until heated through, about 10 minutes.
  • Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Ladle 1/2 cup pasta cooking liquid into small bowl; reserve. Drain pasta. Return pasta to same pot. Add roasted vegetable sauce and all herbs to pasta and toss to blend. Gradually add enough reserved pasta cooking liquid to moisten as desired. Season to taste with salt and pepper. Transfer pasta to bowl and serve.

1 1/2 pounds uncooked large shrimp, peeled, deveined
2 cups chopped red bell peppers

  • Heat oil in heavy large skillet over medium-high heat. Add shrimp and sauté just until pink, about 1 minute. Using slotted spoon, transfer shrimp to bowl. Add bell peppers, onion, thyme, garlic and fennel seeds to skillet. Sauté until onion softens, about 8 minutes. Add tomatoes with juices, olives, wine and tomato paste; bring to boil. Instead of using fresh shrimp like the recipe originally called (took too long the first time I did it) we now use frozen, raw, peeled and it tastes the exact same, but with 1/4 of the time! This is great over rice and served with French bread.

1 ½ pounds large shrimp (21-25 per pound), peeled and deveined
2 cups red peppers, diced
1 cup chopped onion

2 tablespoons tomato paste
1 (14.5 ounce) can canned diced tomatoes

6 pounds fresh tomatoes or 3 28-ounce cans tomatoes
2 tablespoons olive oil
1 large finely chopped onion
5 medium cloves garlic, mashed
3 inch-long pieces orange peel
2 sprigs parsley
1 bay leaf
2 sprigs fresh thyme or 1/4 teaspoon dried thyme
1/2 teaspoon fennel seeds
1 1/2 teaspoons chopped fresh basil leaf (about 3 large leaves) or 1/2 teaspoon dried basil
1/4 teaspoon coriander
Freshly ground black pepper to taste
1/4 teaspoon celery seed
1 6-ounce can tomato paste

Steps:

  • Plunge fresh tomatoes into boiling water for a few seconds and remove skins. Chop pulp coarsely if using fresh tomatoes.
  • Heat oil in heavy pot; add onions and cook until transparent. Add remaining ingredients and simmer 1 1/2 to 2 hours, stirring occasionally. Break up tomatoes as they cook.
  • Remove parsley, bay leaf and orange peel. Freeze. To serve, reheat, correct seasonings and serve over spaghetti or spaghetti squash. Allow 2 to 3 ounces dried spaghetti per person.

1/4 cup chopped onion
2 garlic cloves, crushed
1 teaspoon butter
1 teaspoon olive oil
1/2 lb shrimp
1/2 lb scallops
1 (6 1/2 ounce) can clams, not drained
1 1/2 cups chicken broth
1 teaspoon basil
2 tablespoons parsley
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon Emeril's Original Essence
1/4 cup nonfat sour cream

Steps:

  • Cook onions and garlic in butter and oil.
  • Set shrimps and scallops aside.
  • Add rest of ingredients and simmer about 5 minutes.
  • Add shrimps and scallops and cook 5 minutes.
  • Thicken with 2 Tbsp cornstarch and 3 tbsp water.
  • Cook linguini and toss with 1/4 cup no fat sour cream.
  • Add seafood sauce to pasta and serve.
  • Offer some freshly grated parmesan cheese and crushed pepper.
