Steps:
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the spaghetti, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
- Meanwhile, heat the olive oil in a large skillet over medium heat. Stir in the garlic, and cook for 1 minute to soften. Add the Swiss chard. Cook and stir until the stems of the chard are tender. You can use some of the hot pasta water to help steam the chard in the covered pan.
- Stir the hot spaghetti into the chard mixture along with the capers. Season to taste with salt and black pepper, and drizzle with lemon juice if desired. Sprinkle with Parmesan cheese to serve.

SKILLET GNOCCHI WITH CHARD AND WHITE BEANS
In this quick and easy one-skillet supper, toss dark leafy greens, diced tomatoes and white beans with gnocchi and top it off with mozzarella and Parmesan cheeses. Serve with a mixed green salad with vinaigrette. NOTE: Look for shelf-stable gnocchi near other pasta in the Italian section of most supermarkets. I used mini potato gnocchi and arugula and it was delicious. I added the optional seasoning as my preference was a little more Italian flavor. Original recipe from EatingWell Magazine, Jan/Feb 2009.

PASTA WITH KIELBASA AND SWISS CHARD
Steps:
- Cut out center ribs and stems from chard, then thoroughly wash, along with leaves, in several changes of cold water. Cut ribs and stems crosswise into 1/4-inch-thick pieces and coarsely chop leaves.
- Cook kielbasa in oil in a 5-quart heavy pot over moderately high heat, stirring occasionally, until golden, 2 to 3 minutes. Transfer with a slotted spoon to a bowl. Cook chard ribs and stems with salt in fat remaining in pot over moderate heat, stirring occasionally, 3 minutes. Add garlic and cook, stirring, 1 minute. Add chard leaves, water, and red-pepper flakes and simmer, partially covered, until chard stems are tender, about 5 minutes. Remove lid and stir in kielbasa.
- Cook pasta in a large pot of boiling salted water until al dente, then reserve 1/2 cup pasta-cooking water and drain pasta in a colander. Add pasta to chard mixture with cheese and salt to taste and toss until combined well. Thin with some of reserved pasta water if necessary.
PASTA WITH BEANS AND CHARD
Steps:
- Remove and discard the stems and thicker midribs from the Swiss chard leaves. Rinse the leaves well, then drain and coarsely chop them.
- Cook the pasta in plenty of rapidly simmering water until al dente, then drain.
- Meanwhile, heat the oil in an extra-large saucepan or stir-fry pan. Add the onion and garlic and sauté over medium-low heat until the onion is golden.
- Add the wine and Swiss chard. Cover and cook just until the chard wilts, stirring once or twice, about 3 minutes.
- Stir in the tomatoes, beans, and raisins. Cook just until everything is heated through, another 4 to 5 minutes.
- Combine the fettuccine with the Swiss chard mixture in a large serving bowl. Toss well, season with salt and pepper, and toss again.
- Menu Suggestions
- I love this dish with cauliflower; two companionable possibilities are Cauliflower with Bread Crumbs (page 206) and Sautéed Cauliflower with Sun-Dried Tomatoes and Basil (page 198). Add a salad of greens, tomatoes, bell peppers, and olives.
- Another good way to complete the meal is with some crusty bread and a dairy-free version of the traditional insalata caprese (tomato, mozzarella, and basil salad). Arrange a platter of flavorful tomato slices overlapping thin slices of vegan mozzarella; sprinkle generously with sliced basil leaves and drizzle everything with good olive oil.

- While the pasta water comes to a boil, get the tomatoes in a hot, dry skillet and let them blacken a bit. Shake the pan frequently. This takes 5-8 minutes. Meanwhile clean and chop chard. Chop stems into small half inch chunks and thinly slice the leaves.
- Once the tomatoes are blistered and blackened in a few places, reduce heat to medium, quickly add olive oil and chard stems. (If you just add oil to a very hot pain it might smoke- so be careful)
- Allow chard stems to saute and get tender. About 4 minutes, then add leaves, a pinch of chili flakes, the minced garlic, and about a 1/4 cup of pasta water. Season with salt and pepper. Saute for a few minutes, until water evaporates and leaves are tender. Test you chard, stems should be tender to the bite, not mushy. Leaves just wilted. Water will be evaporated and thickened into a sauce.

- At least 8 hours before cooking, sort the cannellini beans, removing broken beans, stones or dirt clods. Rinse the beans, put them in a large container, cover with 3 tablespoons salt and 3 quarts water, and stir to dissolve the salt. Let the beans soak for at least 8 hours, or overnight.
- Bring 4 quarts of water to a boil, add 1 tablespoon salt, and cook the pasta for the time listed on the box, then drain.
- While the water is boiling for the pasta: Put the bacon in the pressure cooker pot over low heat, and cook until has rendered its fat and is crispy and brown, about 10 minutes. Remove the bacon to a paper towel lined plate, leaving as much of the bacon fat behind as possible. (There should be 1 to 2 tablespoons of fat left in the pan; if there is a lot less, add a little vegetable oil.) Turn the heat up to medium-high, add the onion, chard stems, and garlic. Sprinkle with 1/4 teaspoon salt, and saute until the onions are softened, about 5 minutes.
- Rinse the cannellini beans, drain, and add to the pressure cooker. Add the rosemary sprig, pour in the water, then stir to combine. Lock the lid on the pressure cooker, increase the heat to high, and bring the cooker up to high pressure. Cook at high pressure for 20 minutes in a stovetop PC or 24 minutes in an electric PC. Turn off the heat, and quick release the pressure in the cooker (by running cold water down the side, or releasing the pressure valve according to your cooker’s instructions). Remove the lid carefully, opening away from you – even when it’s not under pressure, the steam in the cooker is very hot. (Optionally, cook under pressure for 15 minutes stovetop PC/18 minutes electric PC, then let the pressure come down naturally for about 15 minutes.)

PASTA WITH SWISS CHARD RECIPE - ORSARA RECIPES
From orsararecipes.net
5/5 (1)Category Main CourseCuisine ItalianTotal Time 55 mins
- Begin by prepping the tomatoes and swiss chard. For the tomatoes, I boil them for a couple of minutes, until I see the skin start to crack. I then remove from boiling water and let them cool down a bit. Once they are cool enough to touch, I can easily peel off the skin. Cut in half, remove the seeds and then continue to chop. For the swiss chard, I wash them under cold water and then I peel the stems the same way as a celery rib, to remove the stringy outer layer. Once peeled, they can be chopped into the bite size you prefer. Bring a pot of salted water to a boil which will be used for the swiss chard later.
- In a deep frying pan, pour in about two ounces of olive oil and heat over a medium flame. After the oil has heated up, add in the garlic and onion. Saute for about two minutes, making sure to stir so that it cooks evenly and doesn't burn.
- Add in the tomatoes and continue to cook for about five minutes over a medium/low flame. After five minutes, lower the flame and add the swiss chard into the boiling pot of water. Let cook for about three minutes. Fill a big bowl with ice and cold water which will be used for blanching the swiss chard. Scoop the swiss chard out of the boiling pot of water and place into the big bowl of ice water. This is to stop the cooking process of the swiss chard. Remove the swiss chard from the cold water, squeeze the excess water out and then add into the pan with the tomatoes. Add salt and black pepper, to taste, mix and continue to cook over a low flame until the pasta is done cooking.
- Bring a pot of salted water to a boil and cook the pasta as per the package instructions. Scoop the pasta out of the pot and place into the swiss chard pan. You can add some of the pasta water to thicken the sauce a bit and also to help stick the pasta and sauce together.
