Number Of Ingredients 11

4 cups uncooked pasta (I used Tiny Tiny Bow Pasta)
14 pieces of cooked bacon, chopped into bacon bits
1/2 cup italian bread crumbs
1/8 teaspoon black pepper
1/2 teaspoon paprika
24 ounces shredded cheddar cheese or Colby jack cheese
12 ounces of bud light (or your favorite beer)
2 cups milk
4 tablespoons flour
4 tablespoons butter
Dried Parsley for sprinkling on top if desired

Steps:

  • Cook Bacon, Drain Bacon Fat, and Chop into bacon Bits. Set Aside.
  • Preheat oven to 375 F.
  • Cook pasta according to directions on box until just al dente. Drain and Set aside. (Pasta will finish cooking in the oven)
  • In a large saucepan, melt the butter over medium-high heat.
  • Once the butter is melted whisk in flour
  • Cook until the mixture is bubbly and golden in color, should take about 2-3 minutes.
  • Add milk and beer into the saucepan. Whisk the mixture while adding the milk and beer.
  • Add the cheese and stir until melted.
  • To thicken the cheese sauce a bit, I let the mixture come to a low boil and while stirring it every so often, I let it simmer for about 5 minutes.
  • Stir in pepper & paprika.
  • Add the cooked noodles to a casserole dish.
  • Pour cheese over the noodles and stir to combine.
  • Once all noodles are coated, sprinkle in the bacon and stir.
  • Top the cheesy noodles with bread crumbs.
  • Bake for 30 minutes at 375F.
  • Once Cooked, Remove from oven, Sprinkle Top of the Beer Macaroni and Cheese with any leftover bacon and sprinkle with dried parsley.

BUTTER BURGER WITH BEER CHEESE SAUCE AND BACON

8 slices bacon
4 tablespoons unsalted butter, plus additional for toasting buns
2 pounds ground chuck
Kosher salt and freshly ground pepper
2 tablespoons vegetable oil
4 thick slices Cheddar or American cheese
4 pretzel buns
4 tablespoons unsalted butter
1 small onion, finely chopped
4 tablespoons all-purpose flour
2 cups light beer, such as lager
1 1/2 cups heavy cream
1 clove garlic, grated
Kosher salt and freshly ground black pepper
6 ounces grated sharp Cheddar
6 ounces grated Swiss cheese

Steps:

  • For the burger: Preheat the oven to 350 degrees F.
  • Place the bacon on a rimmed baking sheet and bake until golden brown but not completely crisp, 15 to 20 minutes. Keep warm for the burgers.
  • For the beer cheese sauce: Meanwhile, melt the butter in a heavy-bottom saucepan over medium heat. Add the onions and cook until soft, 2 to 3 minutes. Add the flour and cook, stirring, until the roux starts to brown, about 2 minutes. Whisk in the beer until smooth.
  • Reduce the heat and cook until the beer begins to reduce and the alcohol is cooked out, 4 to 5 minutes. Add the cream and garlic and continue to cook, stirring continuously, until the sauce thickens, about 10 minutes. Remove from the heat and season with 1/2 teaspoon salt and some pepper; gradually whisk in the cheeses until melted completely. Keep warm. Note: This recipe makes about 4 cups of cheese sauce, more than needed for the burgers. Refrigerate the extra for up to 3 days.
  • To make the burgers, cut the butter into four 1/2-inch thick pieces and set aside, taking care to keep them cold. In a medium bowl, gently fold the ground beef with 1 to 2 teaspoons salt and some pepper to season, and divide into four equal portions. Form each portion of meat into a ball and press your thumb into the center. Place a cold slice of butter into each indent and cover over with some meat, pressing each ball into a patty so the butter is in the center. Hold the patties on a plate for cooking.
  • Heat a grill pan over medium high heat, and brush with oil. When the pan is hot, add the patties, spacing them evenly. Cook on one side until browned, about 5 minutes, and then flip the patties and cook to desired doneness, adding the cheese slices in the last 2 minutes.
  • Butter both sides of the pretzel buns and place on the grill pan, cut-side down. Grill until golden brown and toasted. Place the buns onto plates, and place the patties onto the toasted buns. Top each burger with 2 bacon slices and 1/4 cup beer cheese sauce. Serve immediately.

2 tablespoons white onion, diced
1 clove garlic
1 pinch thyme
2 slices bacon
1 1/2 tablespoon butter
2 tablespoons flour
1 1/4 cup milk
1/4 cup beer
1/2 teaspoon smoked paprika
2 cups aged cheddar
12 ounces pasta

Steps:

  • To start your mise en place, first bring a pot of cold water to a boil to cook the pasta. Dice the onion and émincé the garlic. Finely dice the red pepper and roughly chop the thyme. Next, dice the bacon or cut it into lardons. Lastly, measure out the butter, flour, milk and beer, and gather the seasonings
  • Heat a heavy sauce pan over medium heat and add the butter and bacon. Let the bacon cook until the fat renders (melts). The bacon should almost be cooked but not browned. Then add the onion, garlic and red pepper and gently cook, turning the heat down to medium-low to avoid any browning. Cook until the onion and garlic begin to soften and release their flavors. Then season with the paprika and a pinch of cayenne pepper for extra heat, if desired. Next, sprinkle the mixture with the flour and stir to form a roux. Let this cook gently for about 2 minutes, being careful not to let the bottom scorch or burn. Then add the beer and stir to combine. Add the milk a bit at a time to temper it. This will prevent lumps from forming. Continue until all of the milk has been incorporated. Finally, add the thyme. Turn the heat up to medium, if needed, to bring the sauce up to a gentle simmer. Once the mixture starts to bubble, reduce the heat to low. Stir occasionally and let cook for about 10 minutes or so. While the sauce cooks, go ahead and cook the pasta. You now have a flavored variation of a classic béchamel sauce.
  • To cook the pasta, add the salt to the boiling water and stir. Then add the pasta and stir to prevent it from sticking together. Cook for about 10-12 minutes, or according to the instructions on the package. For this dish, the pasta should not be al dente, as you want a soft texture. While the pasta cooks, grate the cheese and stir the sauce occasionally. Test the pasta and once it is just cooked through, reserve a bit of the cooking water (in case you need to thin the sauce out later). Next, turn off the heat and add some cold water to the pot of pasta. This will slow the cooking process so you can finish the sauce.
  • To finish the sauce, turn off the heat and temper in the grated cheddar by adding it a little bit at a time. Stir each time until the cheese melts. By adding a bit of cheese at a time, you prevent the sauce from splitting. Season the sauce with salt and pepper to taste.
  • To finish the dish, drain the pasta and return it to the pot. Then pour the sauce over top and gently fold everything together. If the sauce seems a bit too thick, you can thin it out with a bit of the reserved pasta water. Taste for seasoning, serve immediately and enjoy.

About 2 tablespoons EVOO
4 ounces smoky bacon, chopped
1 pound ground sirloin
3 to 4 cloves garlic, chopped
2 fresh bay leaves
1 Fresno chile pepper, finely chopped
1 onion, finely chopped
Pinch ground cloves
Salt and freshly ground pepper
1/2 cup dry red wine
1 cup beef stock
1 tablespoon tomato paste
One 14-ounce can Italian crushed tomatoes
1 pound spaghetti
Grated pecorino, for serving
Chopped fresh flat-leaf parsley, for garnish

Steps:

  • Heat a drizzle of EVOO in a pot over medium-high heat. Add the bacon and cook until browned. Transfer the bacon to a plate and pour the fat from the pot. Add 2 turns of the pan of EVOO. Pat the beef dry, then add it to the pot and cook until browned, crumbling the meat with a wooden spoon. Add the garlic, bay leaves, chile pepper, onions, cloves, a little salt and lots of pepper. Cook, stirring frequently, for 10 minutes. Add the wine and deglaze the pan, scraping up the browned bits from the bottom. Add the beef stock and tomato paste, then stir in the crushed tomatoes and bacon. Simmer until thickened.
  • Bring a large pot of water to a boil for the pasta and season with salt. Add the pasta and cook until al dente. Reserve 1 cup of the cooking liquid, then drain the pasta. Add the cooking liquid and the pasta to the sauce and toss to combine.
  • Serve the pasta topped with cheese and parsley.
  • Cook's Note: If you are not serving the sauce immediately, cool and store in the refrigerator. Reheat over medium heat.

Yummm! Everyone loves a good mac and cheese. Add bacon and beer to it... wow, takes it over the top! It was really good and creamy from the stovetop. But, just as good after it was baked too so serve based on your preference. Great comfort food.

5 slice bacon, cooked
16 oz macaroni, elbow
1/4 c butter, unsalted
1/4 c flour
1 bottle beer, light
1/4 c sour cream
16 oz cheddar cheese, extra sharp
1 Tbsp salt
1 Tbsp black pepper
1 Tbsp yellow mustard
OPTIONAL INGREDIENTS
1/4 c panko bread crumbs
1/4 c parmesan cheese

Steps:

  • 1. Cook bacon thoroughly, and set aside to cool. Once cooled, crumble the bacon into small bits.
  • 2. Boil macaroni according to package instructions, but reduce the time by 1-2 minutes. You want a slightly under-cooked, al dente pasta. Remove from heat and strain excess water.
  • 3. LET'S MAKE A ROUX! Melt butter over medium-low heat. Add flour, and whisk continuously to avoid lumps.
  • 4. Cook the butter and flour mixture for 4-5 minutes, stirring constantly to prevent burning. This will cook away the flour taste.
  • 5. Slowly add a full bottle of beer while stirring vigorously. Light beers work well with cheddar cheese. But feel free to experiment with other beers and cheeses!
  • 6. Stir in sour cream, and whisk continuously to avoid curds from forming.
  • 7. Add shredded cheese to the pot, and stir until you have a nice cheese sauce.
  • 8. Add salt, pepper, bacon bits, and mustard to the cheese sauce. Stir until combined. Depending upon the type of cheese you used, you may want to reduce or omit the salt.
  • 9. Remove the cheese sauce from heat, and gently fold in the cooked macaroni.
  • 10. At this point, you can eat the mac and cheese as-is for a hearty, creamy dish. Or, you can bake it with a golden, crispy crust! Note that if you bake this dish, it will loose its creamy consistency.
  • 11. To bake the mac and cheese, pre-heat the oven to 425 degrees. Pour the pasta into a 9 x 11 casserole dish, and distribute the pasta evenly.
  • 12. Combine Japanese Panko bread crumbs with Parmesan cheese, and sprinkle evenly over the top of the mac and cheese.
  • 13. Bake for 20-25 minutes until you have a golden crust. Remove from the oven and LET STAND for 5 minutes before serving. This step is crucial since the pasta will continue to coagulate once out of the oven!

  • Add the pasta to a pan of boiling water and cook normally (usually takes 10 to 15 minutes).
  • While the pasta boils, add the butter to a second saucepan on low heat and add the bacon to a seperate oiled frying pan. Also, begin to cook the sweetcorn in the microwave or in a fourth pan.
  • Once the butter has melted, add the flour and stir until it forms one. Then gradually add the milk, stirring continuously until it becomes a yellow sauce. Whisk the sauce to remove any lumps and turn the pan up to medium to high heat, stirring continuously until the sauce starts to bubble and turns white. Then leave the sauce to simmer and thicken, adding three to four handfuls of cheese.
  • Preheat the grill to a low heat. Once the sweetcorn and bacon are cooked, add them to the white sauce. Turn down down the sauce or switch off the gas if the sauce is bubbling violently, it should resemble a thick, creamy liquid. However, don't let the sauce go clumpy and overly thick.
  • Drain the pasta when its ready, place in a large lasagne dish and mix in sauce thoroughly. Crush up a packet of crisps and spread them across the top of the pasta. Cover the crisps in the remaining cheese and place under the grill until the cheese has melted and top has turned slightly crispy. Serve hot.
  • This dish can be reheated in the microwave if kept in the fridge to keep fresh.

1/2 cup grated Parmigiano-Reggiano or Pecorino Romano cheese, plus some to pass at the table

Steps:

  • Place a large pot of water with a tight-fitting lid over high heat and bring to a boil. Once it comes to a boil, add some salt and the pasta. Cook according to the package directions until al dente. Heads up: you need to reserve 1/2 cup of the cooking liquid before you drain the pasta.
  • While the pasta is cooking, start the sauce. Preheat a large skillet over medium-high heat; add the EVOO. Add the chopped bacon and cook, stirring every now and then, until crispy, about 2 to 3 minutes. Add the onions, garlic, red pepper flakes, and a little salt and pepper. Cook, stirring frequently, for about 5 minutes, or until the onions start to brown. Add the white wine and cook for 1 minute. Add the chicken stock and reserved pasta cooking liquid, then bring up to a bubble and simmer for 2 minutes. Add the grape tomatoes and cook them for about 30 seconds, just to start getting them hot and ready to burst. Add the cooked drained pasta, toss to coat in the sauce, and let some of the sauce soak in, about 1 minute. Turn the heat off and add the diced mozzarella, the chives, basil, grated cheese, and black pepper to taste. Dress the greens with oil and vinegar and serve with the pasta.

  • Cook pasta in a large saucepan of boiling salted water for 8-10 minutes. Drain and set aside.
  • Melt butter over medium heat in a large saucepan. Add flour, stir to form a roux, cooking for a few minutes.

4 ounces canned sweet peas

  • Cook the pasta in salted boling water according to packet instructions.
  • Grill the bacon until crisp, then chop into little pieces.

From Slow Roasted Italian Site: A grown up Mac n Cheese that is super cheesy and starts with thick cut bacon cooked in a skillet and a magical cheese sauce is created out of the bacon drippings. Your favorite beer is cooked right into the mixture and a mixture of smoky spices are added in. The cooked beer imparts a very distinctive taste that you can not get with any other ingredient.

Number Of Ingredients 15

8 ounces dry elbow macaroni
12 ounces thick cut bacon, uncooked
2 tablespoons unsalted butter
1/4 cup all-purpose flour
1 teaspoon garlic powder
1 teaspoon ground arbol chile (can substitute cayenne pepper to taste)
1/2 teaspoon smoked paprika
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1/2 cup beer (I used Blue Moon)
1/2 cup chicken broth
2 cups whole milk
1 teaspoon Worcestershire sauce
8 ounces shredded mild cheddar cheese
chives, optional garnish

Steps:

  • Bring an 8 qt covered pot filled with water to a boil over high heat. Once it boils, add a handful of salt and pasta. Reduce heat to medium high and cook uncovered to al dente (has a bite to it). Drain and set aside.
  • Meanwhile, heat a large 12" skillet over medium-high. Using clean kitchen shears cut bacon into bite-size pieces over the skillet and let them to fall into the pan. Stir occasionally as needed. Cook until crisp.
  • Once bacon is cooked through, remove bacon to a bowl with a slotted spoon. Reserve 2 Tbsp of bacon drippings and discard the rest. Wipe the side of the skillet to avoid flame ups.
  • Pour reserved bacon drippings back into the skillet over medium heat and add butter.
  • Once the butter is melted add flour and whisk to combine. Cook for 2-3 minutes to allow the flour-y taste to cook off.
  • Add spices, beer and chicken broth. Whisk to combine. Allow to come to boil for 3 minutes, whisking occasionally to help pick up the bits on the bottom of the pan.
  • Add milk. Whisk to combine. Bring back to a bubble. Once you see the first few bubbles in the pan remove from heat and add cooked bacon, Worchershire and cheese. Stir to combine.
  • Add pasta to sauce and stir to combine. Cook pasta in sauce for 5 minutes over medium heat until sauce thickens and the pasta has a chance to absorb some of the sauce.
  • Pour into a casserole dish and sprinkle with chives and serve.

  • Recipe may be doubled. Simply use 2x the ingredients and follow cooking directions.
  • The sauce will thicken as it cools. If the sauce is too thick, add milk a few tablespoons at a time until it reaches your desired consistency.
  • Reheat instructions: Add pasta to pot with milk. Heat until warmed through, adding 1/4 cup of milk at a time until desired constancy is reached.
  • Freezing instructions: Allow pasta to come to room temperature. Place in resealable plastic bag or container. If using a container press a small piece of plastic wrap over top to avoid freezer burn. Will keep for up to 6 months. To reheat, that pasta and follow reheat instructions.

1 package (9 ounces) refrigerated linguine
1 medium onion, chopped
1 tablespoon canola oil
2 garlic cloves, minced
2 tablespoons all-purpose flour
1-1/2 cups heavy whipping cream
3 eggs, lightly beaten
8 cooked bacon strips, chopped
1/2 cup grated Parmesan cheese

Steps:

  • Cook linguine according to package directions. Meanwhile, in a large skillet, saute onion in oil until tender. Add garlic; cook 1 minute longer. , In a small bowl, whisk flour and cream until smooth; stir into the pan. Bring to a boil, stirring constantly. Reduce heat; cook and stir for 1 minute or until thickened. Remove from the heat. Stir a small amount of hot mixture into eggs; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer., Drain linguine; add to the pan. Stir in bacon and cheese; heat through.
