CREAMY CAJUN CHICKEN PASTA | SLIMMING & WEIGHT WATCHERS FRIENDLY
Steps:
- Cook pasta as per instructions on the pack with a little salt.
- Cook the chicken and onions in a few sprays of low calorie cooking spray over a medium heat for 3-5 minutes until the chicken starts to brown and the onions start to soften.
- Mix the cajun seasoning, paprika and Season All together, then add half of it to the pan.
- Stir and cook for a minute or so.
- Add the mushrooms, peppers and carrot. Cook for another minute.
- Add the cherry tomatoes and the chicken stock. Then add the remaining seasoning. Stir well.
- Cook for about 5 minutes, then add the rest of the vegetables. Stir and cook for another 5 minutes.
- In a large bowl (the bowl needs to be big enough to hold the pasta) mix the quark, spreadable cheese and eggs together until it is smooth, then add the chicken and veg mix. Stir well.
- Add the cooked pasta, then serve with some freshly ground black pepper and some grated cheese.

CREAMY CAJUN CHICKEN PASTA WITH LOW-FAT ALFREDO SAUCE
Two recipes from food.com combined into one. (Original version of the Cajun Chicken was delicious, but it was not low fat) Our children don't care for the sun-dried tomatoes, so I normally omit those, although they do add nice color to the dish.

Steps:
- Sauce:.
- Put skim milk, cottage cheese, cornstarch, pepper, parmesan cheese and minced garlic in food processor or blender and blend until smooth. Pour into saucepan and add basil. Cook over medium heat until it starts to thicken.
- Chicken:.
- Place chicken and Cajun seasoning in bowl and toss to coat.
- In a large skillet over medium heat, saute chicken in olive oil until tender, about 5-7 minutes.
- Reduce heat and add green onion, tomatoes, basil and 1/4 teaspoons black pepper. Saute briefly.
- Add Alfredo sauce and mix together. Cook on low 5 minutes to blend flavors.
- Serve over cooked linguine.

Steps:
- Heat oil in a large pot over high heat. Cook the garlic, sausage, and chicken until garlic starts to brown and the chicken is no longer pink.
- Sprinkle over the Cajun seasoning and stir to evenly coat the sausage and chicken.
- Add the cream, and bring to a boil.
- Add the pasta, stirring until evenly mixed.
- To finish, add parmesan and parsley, stirring until cheese melts and pasta is coated with a thick sauce.
- Serve.

CAJUN CHICKEN ONE-POT
Make a crowd-pleasing pasta dish for dinner. We've taken inspiration from creamy alfredo sauce with Cajun-style seasoning to add a bit of punch.

Steps:
- Heat the olive oil in a large, shallow saucepan or deep frying pan over a medium heat, then add the chicken, season lightly and fry for 6-8 mins, stirring occasionally until just golden all over - no need to worry about it being cooked through at this stage.
- Stir in the garlic and cook for 2 mins more, then scatter over the Cajun-style seasoning and stir so the chicken pieces are evenly coated. Tip in the tomatoes, a quarter of a can of water and the stock cube. Stir, then bring to a simmer and cook for 5 mins.
- Meanwhile, bring a large pan of salted water to the boil and cook the pasta for a minute less than pack instructions. Stir the cream into the chicken and continue to simmer gently. When the pasta is cooked, drain well and stir into chicken mixture. Finish cooking the pasta in the sauce over a low heat for 2 mins, then stir in the parmesan and lemon juice, and cook for 1 min more. Serve the pasta straight from the pan, or tip into a large serving bowl. Scatter with parsley, if you like, and extra parmesan.
