15 oz chickpeas, 1 can, drained and rinsed
1 cup broccoli floret, steamed
½ cup carrot, shredded
½ cup red onion, sliced
¼ cup fresh parsley
¼ cup olive oil
¼ cup red wine vinegar
1 clove garlic, minced
1 teaspoon dried oregano
salt, to taste
pepper, to taste
1 ½ cups cherry tomatoes

Steps:

  • In a large mixing bowl, combine pasta, chickpeas, grape tomatoes, broccoli, carrots, red onion, and parsley.
  • In a small liquid measuring cup, combine olive oil, red wine vinegar, garlic, oregano, salt, and pepper, and whisk to combine.
  • Pour dressing over pasta salad and stir until evenly distributed.
  • Transfer pasta salad into 4 containers and refrigerate for up to 5 days.
  • Enjoy!

8 ounces farfalle (about 2 cups)
2 stalks broccoli, cut into florets
1/2 cup mayonnaise
1/2 cup buttermilk
1/4 cup plus 1 tablespoon chopped fresh chives
1/4 cup chopped fresh parsley
Juice of 1 lime
Freshly ground black pepper
2 avocados, diced
One 12-ounce piece deli ham, diced (about 2 cups)
8 ounces yellow Cheddar cheese, shredded
1 small head romaine lettuce, sliced
2 tomatoes, diced

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook until al dente (about 2 minutes less than the label directs), adding the broccoli during the last 4 minutes of cooking. Drain the pasta and broccoli and rinse under cool water; shake off the excess. Remove the broccoli and pat dry.
  • Whisk the mayonnaise, buttermilk, 1/4 cup chives, the parsley, half of the lime juice, 1/4 teaspoon salt, and pepper to taste. Toss the pasta and a few tablespoons of the dressing in a medium bowl.
  • Assemble the salad: Toss the avocados with the remaining lime juice in a large glass serving bowl and season with salt; arrange in an even layer. Top with layers of the ham, broccoli, pasta, cheese, lettuce and tomatoes. Drizzle some of the remaining dressing on top and sprinkle with the remaining 1 tablespoon chives, or cover and refrigerate the salad and dressing separately up to 6 hours. (Bring to room temperature before serving.)

  • Bring a large pot of salted water to a boil. Add pasta and cook until tender, 6 to 10 minutes (check the package for recommended cook time). Drain and rinse well under cold water.
  • While the pasta cooks, in the bottom of a large bowl, make the dressing. Whisk the red wine vinegar, salt, pepper, oregano, pepperoncini juice (if using), and the olive oil until blended. Add the drained and rinsed pasta to the dressing and mix well.

olive oil, for brushing
8 oz dried orecchiette pasta, cooked according to package instructions
2 cups cherry tomato
½ cup red onion, diced
1 avocado, diced
1 ½ cups fresh cilantro
⅓ cup olive oil
3 tablespoons lime juice
1 clove garlic, roughly chopped
½ teaspoon chili powder
2 teaspoons honey
salt, to taste
pepper, to taste

Steps:

  • Microwave the corn on a microwave-safe plate on high for 7 minutes. Remove from the microwave, and grip the corn with a dish towel. Then cut off the bottom end with a serrated knife. Slide the corn out of the husk. It should come out fairly easily with none of the silky string mess.
  • Brush the corn with olive oil, then place on a cast iron grill pan or outdoor grill over medium-high heat. Grill for 5-6 minutes on each side, until the kernels are slightly charred.
  • Insert the narrow end of an ear of corn into the center hole of a bundt pan. Holding the corn steady with one hand, saw off the kernels with a serrated knife. The kernels will fall into the pan for easy collection.
  • Make the cilantro-lime vinaigrette: Combine the cilantro, olive oil, lime juice, garlic, chili powder, honey, salt, and pepper in a food processor and blend until smooth.
  • In a large bowl, add the pasta, corn, tomatoes, red onion, avocado, and vinaigrette, and mix until well-combined.

2 bottles kraft house Italian salad dressing (it must be this exact type or it won't taste the same!)
1 cup chopped green pepper
1/2 cup chopped white onion
1 cup diced roma tomato
1 1/2 cups chopped cucumbers
3/4 cup sliced black olives
2 tablespoons chopped black olives
1 (6 ounce) container of shredded parmesan cheese (not grated)
1/2-3/4 cup of grated parmesan cheese
salt
pepper
garlic powder

  • Boil pasta, drain well.

Not your typical pasta salad; it's better:D I got it from a coworker and I tweaked it at home. It came out so well I thought I would post it. Its popularity at work was due to adding dressing sparingly. Start with a quarter cup, then taste and adjust if you think it's necessary. I've included instructions for a low-fat Italian dressing that I made with an envelope of Good Seasons Italian dressing mix. If you're not concerned about your fat intake, you can follow package directions (or use your favorite Italian dressing). I was able to make this in 20 minutes by cutting veggies while orzo was cooking and served it as a one dish meal. A good pot luck dish too (can be doubled easily).

  • Cook orzo in 2 quarts water for 8-10 minutes or according to package directions and drain.
  • Add other ingredients up to Italian dressing mix and toss gently with a large spoon.
  • Combine the vinegar with 3 tablespoons water. Add Italian dressing mix and shake well. Add oil and rest of water and shake well. Measure out a quarter cup, pour over salad and toss gently.
  • Taste and add more dressing (a little at a time) if desired. Can be served immediately, at room temperature or chilled.

1 green bell pepper, large (about 1 cup), finely chopped

4 oz pepperoni, chopped (optional)
1 ½ cup mayonnaise
2 tablespoon rice vinegar
1/4 cup granulated sugar
1 teaspoon onion powder
2 tablespoon herby seasoning mix, see Recipe Note #2
1/2 teaspoon coarse salt, (plus more for salting pasta water), or to taste
1/2 teaspoon freshly ground black pepper, or to taste

Steps:

  • Bring a pot of well-salted water to a boil. Cook the pasta according to the directions on the box (see Recipe Note #3).
  • Meanwhile, make the dressing: mix all ingredients for the dressing together in a large food storage container. Mix the cheese cubes into the dressing, making sure that each piece is coated on all sides. Repeat with the pepperoni. Mix in the vegetables.
  • When the pasta is cooked, drain and rinse well with cold water for several minutes.
  • Add about half of the pasta and mix well. Add remaining pasta (see Recipe Note #3) and mix completely. Chill for at least an hour before serving.
