HONEY-GINGER GRILLED SALMON



Honey-Ginger Grilled Salmon image

This recipe is simple to make, yet impressive. The marinade gives the fish a sweet taste that my family goes nuts for! If it's too cold out to grill it, you also may broil it.

1 teaspoon ground ginger
1 teaspoon garlic powder
⅓ cup soy sauce
⅓ cup orange juice
¼ cup honey
1 green onion, chopped
1 (1 1/2-pound) salmon fillet

Steps:

  • In a large self-closing plastic bag, combine ginger, garlic, soy sauce, orange juice, honey, and green onion; mix well. Place salmon in bag and seal tightly. Turn bag gently to distribute marinade. Refrigerate for 15 to 30 minutes.
  • Preheat an outdoor grill for medium heat and lightly oil grate.
  • Remove salmon from marinade, shake off excess, and discard remaining marinade. Grill for 12 to 15 minutes per inch of thickness, or until the fish flakes easily with a fork.

1/2 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon ground coriander
4 salmon fillets (6 ounces each)
2 teaspoons olive oil
2 garlic cloves, minced
2 teaspoons lime juice
1/4 to 1/2 teaspoon hot pepper sauce

Steps:

  • In a small dish, combine the salt, pepper and coriander. Sprinkle over salmon. In a nonstick skillet, cook salmon in oil over medium heat for 4 minutes on each side. Add the garlic, lime juice and hot pepper sauce. Reduce heat; cover and cook 3-4 minutes longer or until fish flakes easily with a fork.

I am a big fan of salmon. It is full of omega 3 and generally tasty and good for you. I am always looking for new salmon recipes to add to our rotation. I found this one in the August 2008 copy of BBC Good Food Magazine.

2 (5 ounce) boneless skinless salmon fillets
1 red chili pepper, deseeded and finely chopped
3/4 cup fresh cilantro, chopped
1 lime, halved, for serving
2 tablespoons olive oil
10 1/2 ounces water
1 onion, chopped
1 teaspoon fresh ginger, finely chopped
1 garlic clove, thinly sliced
4 ounces basmati rice

Steps:

  • Heat 1 tablespoon oil in a pan and at the same time put the water in another pot and bring to a boil.
  • Fry the onion for a few minutes until lightly browned.
  • Stir in the ginger and garlic for 1 minute, then stir in the rice.
  • Add boiling water and a little salt, then bring to the boil.
  • Cover and cook for 10-12 minutes until the rice is tender.
  • Heat grill/broiler to medium.
  • Brush a baking tray lightly with a little oil.
  • Put the salmon on top and grill/broil for 4-5 minutes.
  • Scatter with chilli, cilantro, remaining olive oil and seasoning.
  • Grill/broil again for just 4-5 minutes until the salmon is cooked through.
  • Serve with the rice and line halves for squeezing over.

This speedy midweek supper is low in fat but big on flavour. Ready in just 20 minutes, the chilli, lime zest, spring onions and coriander give it Thai appeal

1 tbsp olive oil
4 salmon fillets
knob of butter
6 spring onions , finely sliced
1 large red chilli , halved, deseeded and finely chopped
zest and juice 1 lime
small bunch coriander , chopped

Steps:

  • Heat the oil in a large frying pan and cook the salmon, skin side down, for about 5-6 mins until the skin is crispy and golden. Turn the salmon fillets carefully, then cook for a further 2 mins. Remove from the pan and set aside.
  • Tip the butter in the pan and, when melted, add the spring onions, chilli and lime zest to sizzle in the butter for 2 mins, then add the lime juice. Spoon the chilli and lime butter over the salmon. Scatter with the coriander and serve with boiled rice.

From Falling Cloudberries by Tessa Kiros (my recipe book of choice). Apparently this actually works with most kinds of fish but the recipe states salmon. This works best as a starter and needs to be made around half a day ahead of when you need it. You don't cook it but instead the salmon sort of cooks itself in the lime marinade. Not yet tried.

4 skinned salmon fillets
4 limes, juice of
2 red chilies (more if you like it hotter)
2 tablespoons fresh coriander (chopped) or 2 tablespoons cilantro (chopped)
1/4 teaspoon ground cumin
2 garlic cloves (finely chopped)
4 cm grated fresh ginger

Steps:

  • Shred the salmon into smallish sized pieces and place in a wide, non-metallic bowl.
  • Pour the lime juice, chilli, corriander, cumin and garlic over the fish and season with salt & pepper.
  • Take the grated ginger and firmly squeeze the juice over the salmon. Discard the pulp.
  • Mix well (but gently), cover with cling film and refrigerate for a minimum of 4 hours before serving.

6 tablespoons meyer lemon juice (or regular juice if Meyer lemons are not available)
3 tablespoons low sodium soy sauce
1 1/2 tablespoons canola oil
1 1/2 teaspoons sugar
1 1/2 inches piece fresh ginger, peeled and grated
1 1/2 lbs wild king salmon fillets (preferably skinless)
fresh ground pepper

Steps:

  • In a small bowl or measuring cup whisk together lemon juice, soy sauce, oil, sugar and ginger.
  • Set aside 1/3 of the mixture in a small bowl.
  • Place salmon in a shallow dish and pour the rest of the marinade over the top.
  • Let marinate at room temperature for 20 minutes, turning once or twice.
  • Grill or broil salmon over medium heat, turning once with a wide spatula and brushing with excess marinade until salmon is cooked to your liking (about 10 minutes depending on thickness.)
  • Sprinkle with pepper and serve with reserved marinade for drizzling.

4 (8 ounce) fresh salmon fillets
salt to taste
⅓ cup cold water
¼ cup seasoned rice vinegar
2 tablespoons brown sugar
1 tablespoon hot chile paste (such as sambal oelek)
1 tablespoon finely grated fresh ginger
4 cloves garlic, minced
1 teaspoon soy sauce
¼ cup chopped fresh basil

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Season salmon fillets with salt.
  • Place salmon on the preheated grill; cook salmon for 6 to 8 minutes per side, or until the fish flakes easily with a fork.
  • Combine water, rice vinegar, brown sugar, chile paste, ginger, garlic, and soy sauce in a small saucepan over medium heat.
  • Bring mixture to a boil, reduce heat to medium and simmer until barely thickened, about 2 minutes.
  • Sprinkle basil on top of salmon; spoon glaze over basil.

  • In a medium saucepan, bring 1 1/2 cups of the water and the rice to a boil. Cover, reduce the heat to low and cook the rice for 12 minutes. Remove the pan from the heat and let stand for 5 minutes.
  • Meanwhile, in a mortar, pound the ginger with the sugar, chile and chopped garlic to a coarse paste. Transfer the paste to a bowl and stir in the remaining 1/4 cup of water, the lime juice and the fish sauce. Add the cucumbers.
  • Heat the oil in a large nonstick skillet. Season the salmon with salt and pepper. Add the salmon to the skillet and cook over moderately high heat until lightly browned, about 3 minutes. Add the whole garlic cloves. Turn the salmon and cook over moderate heat until opaque throughout, about 4 minutes.
  • Mound the rice in bowls. Top with the salmon, garlic cloves and ginger-lime sauce with cucumber strips and serve. Pass any extra sauce at the table.
