Grilled radicchio has a wonderfully nutty flavor and a vibrant purple color. Add some olive oil, balsamic vinegar, and grated Pecorino, and you've got an easy side dish in minutes!

3 garlic cloves, chopped
1/2 teaspoon mustard
1/4 cup balsamic vinegar
1 teaspoon kosher salt, plus more to taste
1/2 cup extra virgin olive oil, plus more to coat the radicchio
2 heads radicchio
Freshly ground black pepper, to taste
Pecorino or Parmesan cheese, grated

Steps:

  • Make the dressing: Put the garlic, mustard, balsamic vinegar, and salt into a food processor or blender and pulse to combine. With the motor running, slowly drizzle in the olive oil until the dressing comes together.
  • Preheat the grill: Prepare your grill with direct high heat.
  • Chop into bite-sized pieces: Chop the radicchio into small pieces and and toss with the dressing and some black pepper.
  • Serve hot or at room temperature: Garnished with your choice of grated Pecorino or Parmesan cheese.

3 tablespoons extra-virgin olive oil plus additional for drizzling
1 tablespoon chopped fresh dill
1 tablespoon Sherry wine vinegar
2 teaspoons Dijon mustard
1 teaspoon honey
6 green onions, trimmed
1 head of romaine lettuce, quartered lengthwise with some core still attached to each piece
1 large head of red leaf lettuce, quartered lengthwise with some core still attached to each piece
1 medium head of radicchio, quartered through core, with some core still attached to each piece

Steps:

  • Whisk 3 tablespoons olive oil and next 4 ingredients. Season with salt and pepper.
  • Arrange green onions, lettuces, and radicchio on baking sheets. Drizzle lightly with oil. Sprinkle with salt and pepper.
  • Prepare barbecue (medium-high heat). Grill vegetables until beginning to wilt, 1 minute per side for red leaf lettuce, 1 1/2 minutes per side for romaine, 2 minutes per side for green onions, and 3 minutes per side for radicchio. Transfer vegetables to baking sheets.
  • Cut cores from all grilled greens. Cut grilled radicchio crosswise into 1-inch-wide strips. Cut grilled lettuces crosswise into 2-inch-wide strips; chop green onions. Place vegetables in large bowl. Drizzle with dressing; toss to coat.

Balsamic reduction, for drizzling
½ cup (120 ml) toasted, chopped hazelnuts

  • Leaving stem intact, slice heads of radicchio in half.
  • Rub halves with olive oil and sprinkle with salt and pepper.
  • Grill over medium-high heat until slightly wilted and charred, 2-3 minutes, turning once. Transfer to a large platter.

1/2 cup plain whole Greek yogurt, such as Trader Joe's organic cream top
1/2 lemon zested and juiced
1/2 lime zested and juiced
1 tablespoon honey
Kosher salt and freshly ground black pepper
Half a cantaloupe (about 1 pound), rind and seeds removed and cut into 1-inch-thick slices
2 small heads radicchio, trimmed and quartered but leave enough of the core so the quarters hold together
2 to 3 tablespoons olive oil
Kosher salt and freshly ground black pepper
5-ounce container baby arugula

Steps:

  • For the Lemon-Lime Dressing: Add the yogurt, lemon and lime zest and juice and the honey to a small bowl. Whisk together well and season to taste with salt and pepper. Reserve in the fridge if not using right away.
  • For the Salad: Preheat an outdoor grill to medium. Place the cantaloupe and radicchio on baking sheets and brush with the olive oil. Sprinkle with salt and pepper. Place the cantaloupe and radicchio on the grill (you may have to do this in batches) and grill the cantaloupe until you see grill marks, 1 to 2 minutes a side. Grill the radicchio until soft and browned on the outside, 2 to 3 minutes per side. Cut the cantaloupe into cubes.
  • Arrange a bed of baby arugula on a platter, top with the grilled cantaloupe and radicchio and drizzle with the dressing.

1 can (15 ounces) sliced beets, drained
1/4 red onion, very thinly sliced
Balsamic vinegar, for drizzling, about 1 1/2 tablespoons

Steps:

  • Preheat a grill pan over high heat. Pour a couple of tablespoons of extra-virgin olive oil into a small dish. Slice radicchio heads into quarters and remove core. Brush quarter heads with oil on both sides and grill wedges 3 minutes or so on each side. Season with salt and pepper. Arrange wedges of grilled radicchio on a platter. Pile sliced beets at the center of the platter. Sprinkle platter with red onion and drizzle salad with balsamic vinegar and oil. Adjust salt and pepper and serve.

  • For vinaigrette:
  • Whisk all ingredients in medium bowl to blend. Season dressing to taste with salt and pepper. (Can be made 6 hours ahead. Cover and refrigerate. Rewhisk before using.)
  • For salad:
  • Prepare barbecue (medium-high heat). Place beans, radicchio, and artichoke hearts in large bowl. Add 6 tablespoons dressing and toss to coat. Grill vegetables until crisp-tender and browned in spots, turning occasionally, about 3 minutes. Cut beans in half crosswise. Coarsely chop radicchio. Return vegetables to same bowl. Add greens and Asiago cheese. Toss with enough dressing to coat. Season salad to taste with salt and pepper. Serve warm.

I'm sure I wouldn't like raddichio without the dressing because of the bitter taste. The dressing is great with it. And I like that it's grilled. It reminds me of when we cook romaine lettuce on the bbq.

2 large heads radicchio, about 10 ounces each
3 to 4 tablespoon extra-virgin olive oil, more to taste
1/4 teaspoon salt, more to taste
2 pounds sweet or hot Italian sausages
1 lemon, halved
Basil leaves, for serving

Steps:

  • Light or heat up the grill. Halve radicchios lengthwise through stem end, and toss with 1 tablespoon olive oil (or more if you need it to coat) and 1/4 teaspoon salt.
  • Put radicchios, cut side down, and sausages on the grill and cover. Let cook for 2 to 3 minutes, until outer radicchio leaves are dark brown. Transfer to a cutting board and let cool while sausages finish cooking, about 5 minutes more.
  • When cool enough to handle, thinly slice radicchios. The outsides should be charred, and the insides should still be crisp and raw. Combine in a bowl with another 2 tablespoons olive oil and the juice of half a lemon. Taste and correct seasonings, adding lemon juice, salt and olive oil to taste.
  • Spread radicchio on a platter and top with grilled sausages. Garnish with basil and serve.
