This creamy version has one powerful advantage for the cook: There's no need to preboil the pasta. It cooks in the oven, absorbing the liquid from the dairy products.

2 tablespoons unsalted butter
1 cup cottage cheese (not low-fat)
2 cups milk (not skim)
1 teaspoon dry mustard
Pinch of ground cayenne
Pinch of ground nutmeg
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1 pound sharp or extra-sharp Cheddar, grated
1/2 pound elbow pasta, uncooked

Steps:

  • Heat oven to 375 degrees and position an oven rack in upper third of oven. Use 1 tablespoon butter to grease a 9-inch round or square baking pan.
  • In a blender, purée cottage cheese, milk, mustard, cayenne, nutmeg and salt and pepper. Reserve 1/4 cup grated Cheddar for topping. In a large bowl, combine remaining grated Cheddar, milk mixture and uncooked pasta. Pour into prepared pan, cover tightly with foil and bake 30 minutes.
  • Uncover pan, stir gently, sprinkle with reserved cheese and dot with remaining tablespoon butter. Bake, uncovered, 30 minutes more, until browned. Let cool at least 15 minutes before serving.

This is our version of another recipe here that my whole family just scarfs down. I've made it to take to church and gotten great reviews. The key is just obscene amounts of cheese. It includes velveeta which we love. I love that it cooks in just one pot. You can eat it right then or bake it as the directions state, it is great either way.

1 lb elbow macaroni
1/4 cup butter or 1/4 cup margarine
1 (13 ounce) can evaporated milk
1/4 cup milk
1 lb sharp cheddar cheese, grated
1/2 lb monterey jack cheese, grated
1 lb Velveeta cheese, cubed
1/8 teaspoon ground cayenne pepper
salt and pepper

Steps:

  • In a large pot, cook the noodles according to the package directions, leaving them al dente. Drain the pasta and return it to the pot.
  • Stir in all the other ingredients. I usually put the pan back on the burner so all the cheese will melt, on occasion I even have to turn the burner back on to low to get everything melted. You can add a little more milk if the consistency seems too thick.
  • Pour the mixture into your greased baking dish and bake for 30 to 35 minutes or until the top is browned and bubbly.

2 cups milk (for a more rich taste use evaporated milk for part of the milk)
1/4 lb Velveeta cheese, cut up
2 cups sharp cheddar cheese, shredded
2 cups elbow macaroni, cooked, drained
2 tablespoons seasoned dry bread crumbs (optional)

Steps:

  • Melt 3 tablespoons of the butter in large saucepan on low heat.
  • Blend in flour and salt; cook and stir 1 minute.
  • Gradually add milk; cook, stirring constantly, until thickened.
  • Add prepared cheese product and 1-1/2 cups of the shredded cheese; stir until melted. Stir in macaroni.
  • Pour into lightly greased 1-1/2-quart casserole.
  • Melt remaining 1 Tablespoon butter; toss with bread crumbs.
  • Sprinkle casserole with remaining 1/2 cup cheese and bread crumb mixture.

300 g macaroni (not the quick cook stuff, which really doesn't work in this recipe)
30 g butter
25 g flour
500 ml milk
1 tsp Dijon mustard ((or to taste))
200 g mature cheddar ((or to taste), grated)
Salt and pepper to taste

Steps:

  • Preheat the oven to 220C / 200C Fan / Gas Mark 7.
  • Cook the macaroni until it's a bit less done than normal - a couple of minutes less than you would usually do. The brand I use takes 10 minutes normally, so I give it 8 minutes for macaroni cheese.
  • While the macaroni is cooking, make the cheese sauce. Melt the butter in a medium sized pan on a low heat. When the butter is foaming, add the flour and stir until it's mixed in. Then keep cooking for 2 minutes, stirring frequently. It takes guts to do this. It looks like something is going to go wrong but it doesn't!
  • Very gradually add the milk, stirring constantly. Make sure each bit of milk is incorporated before adding the next bit. If you do this slowly on a very low heat, you should end up with a perfectly smooth cheese sauce with no lumps and no need to whisk. However, if it does go wrong for some reason, you can always use a whisk to beat out the lumps.
  • When all the milk is incorporated, add the mustard, salt and pepper. (N.B. I use slightly salted butter, so I don't add any extra salt here.) Then add half the cheese, stir to combine and turn off.
  • When the pasta is done, drain it, retaining a little bit of the cooking water.
  • Tip the pasta and a couple of tablespoonfuls of the cooking water into the cheese sauce and stir.
  • Pour the macaroni cheese into a shallow ovenproof dish and sprinkle over the remaining cheese.
  • Bake in the oven for 10 minutes. The top should be brown but the bottom should still be saucy and the macaroni should be perfectly cooked.

Cook the flour and butter, over low heat, for 5 to 7 minutes, add the hot milk in a steady stream. Cook the white sauce for 10 minutes. Add the salt, pepper, mustard, cayenne pepper, Colby and Cheddar cheeses and cook for 2 minutes over low heat. Drain the pasta and place into a baking casserole dish large enough to hold the pasta and all of the sauce. Add the cheese sauce by pouring over the top. Sprinkle the bread crumbs and Parmesan cheese over the top and bake for 15 minutes or until the top is well browned and crusty.;
