I HAD A NEW YEARS EVE GET TOGETHER N MADE SOOOO MUCH FOOD NO ONE TOUCHD THE ONION DIP....N I JUST COULDNT THROW IT OUT ;) SO I THRU TOGETHER THIS CASSEROLE N IT CAME OUT GREAT....MY HUBBY LOVD IT N TOOK LEFTOVERS TO WORK FOR HIS LUNCH :)

- 1. PREHEAT OVEN TO 350 n PREPARE BAKN PAN WITH COOKN SPRAY...SET ASIDE.
- 2. IN A LARGE PAN HEAT BUTTER WITH OLIVE OIL N SAUTÉ MUSHROOMS UNTIL SLIGHTLY BROWND.
- 3. SPRINKLE IN FLOUR N COOK FOR A MINUTE
- 4. ADD SHERRY (N WHITE WINE IF USING) COOK FOR A MINUTE THEN ADD CHICKEN BROTH...BRING TO FULL BOIL UNTIL THICKEND n REMOVE FROM HEAT
- 5. STIR IN ONION DIP (PREPARED...MINE WASNT TOUCHD FROM NEW YEARS EVE...I HAD TOO MUCH FOOD ;) THEN STIR IN PIECES OF CHICKEN. S n P TO TASTE
- 6. NOW TO START THE LAYERN...FIRST PUT IN HALF OF THE COOKED NOODLES NEXT HALF OF THE BROCCOLI THEN SPOON ON HALF OF CHICKEN ONION DIP MIXTURE N SPRINKLE ON SOME PARMESEAN CHEESE. THEN REPEAT ONCE AGAIN.
- 7. TOP WITH HAVARTI CHEESE (OR WATEVER CHEESE U HAVE). COVER WITH FOIL N COOK FOR 20 MINUTES.
- 8. REMOVE FOIL N SCATTER FRENCH FRIED ONIONS OVER TOP N BAKE FOR ADDITIONAL 15-20 MINUTES OR UNTIL BROWND....ENJOY :)
CHICKEN & CHIP DIP CASSEROLE
This quick, easy & tasty dish is something I created as a newlywed - the idea came from a recipe for chip dip using onion soup mix - and still make many years later. I usually serve it with broccoli and the sauce is very good over rice or noodles.

- Brown chicken pieces in hot oil& place in oven proof casserole dish.
- Sprinkle with salt, pepper& paprika and dot with butter.
- Combine remaining ingredients in a bowl& pour over chicken.
- Bake in preheated 350F oven for 1 1/2 hours.

SOUR CREAM & ONION PARTY DIP
My recipe for a delicious non-vegetarian sour cream and onion party dip (most dips are already non-vegetarian, containing gelatin).

Steps:
- WHIP all ingredients except chives in a medium bowl using a hand-held mixer, on medium-low speed.
- STIR in 1 1/2 tablespoons dried chives (or dried dill).
- REFRIGERATE if desired while onion flakes soften up slightly (however, dip may be served immediately).
- GARNISH as desired.
- SERVE with your favorite dip chips or crackers and ENJOY!

- Place the chicken breasts on a cutting board and cover with parchment paper. Use a meat mallet to pound the chicken breasts to an even thickness of about ½” thick. Pat the breasts dry with a paper towel and sprinkle with a little bit of salt and pepper.
- In a bowl, combine the Greek yogurt with 1 tablespoon of onion powder, the ¼ cup of chives, ¼ teaspoon of salt and 1/8 teaspoon of pepper. Stir together until well combined. Place the chicken breasts in a shallow dish and coat on all sides with the yogurt mixture. Cover and place in the refrigerator to marinate for up to 8 hours (I’d let it sit for at least an hour or two…it helps the flavors to meld and the chicken breasts to stay juicy).
- In a shallow dish, add the panko breadcrumbs and the remaining 1½ teaspoons onion powder, ¼ teaspoon salt, and 1/8 teaspoon black pepper and stir to combine. One at a time, lay each onion dip-coated chicken breast in the crumb mixture and flip to coat. Press any remaining breadcrumb mixture lightly into the chicken breasts.

- Preheat oven to 400°F. Coat an 8-inch square (2-quart) baking dish with cooking spray; set aside. Melt butter in a large nonstick skillet over medium heat. Add onions; cook, stirring occasionally, until translucent and starting to brown, about 20 minutes. Reduce heat to medium-low; cook, stirring often, until the onions are very tender and brown throughout, 15 to 20 minutes. Remove from heat.
- Combine cream cheese, yogurt, salt, pepper, onion powder, garlic powder and cayenne in a large bowl. Beat with an electric mixer on medium speed until smooth, about 1 minute. Fold in chicken, rice and the cooked onions. Spoon the mixture into the prepared baking dish. Sprinkle with crushed potato chips and cover with foil.
- Bake until bubbly, about 30 minutes. Remove the foil and continue baking until the topping is crispy and lightly browned, about 10 minutes. Garnish with chives, if desired.
