I combined a favorite bar recipe and cookie recipe to come up with these cookies. They stay chewy and keep well.

1 cup butter, softened
1-1/2 cups packed brown sugar
2 eggs
1/3 cup molasses
1 teaspoon vanilla extract
4 cups quick-cooking oats
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup chopped walnuts
1 cup semisweet chocolate chips
1 cup butterscotch chips
1 package (5 ounces) dried cranberries

Steps:

  • In a large bowl, cream butter and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in molasses and vanilla. Combine the oats, flour, baking powder, salt and cinnamon; gradually add to creamed mixture and mix well. Stir in walnuts, chips and cranberries., Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 375° for 10-12 minutes or until edges are lightly browned. Remove to wire racks to cool.

1 1/2 cups all-purpose flour (spooned and leveled)
1 teaspoon baking soda
1 teaspoon salt
1 cup unsalted butter, room temp
3/4 cup light brown sugar (packed)
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla
2 1/2 cups rolled oats
2 cups raisins
1 cup sweetened flaked coconut

Steps:

  • Preheat oven to 350°F; in a medium bowl, mix together flour, baking soda and salt; set aside.
  • With an electric mixer, cream butter and sugars until light and fluffy. Beat in eggs and vanilla, scraping down sides of bowl as needed. Add flour mixture; beat just until combined. Stir in oats,raisins and coconut, beat just until combined.
  • Drop level 1/4 cup measures of dough 1 1/2 inches apart onto baking sheets. (I use parchment paper).
  • Bake until cookies have spread and are golden brown and soft to the touch, 18 to 20 minutes, rotating sheets halfway through. Cool 5 minutes on sheets; transfer to wire rack to cool completely. Makes 20 large cookies.

1 1/2 cups flour
1 cup brown sugar
1 cup butter
1/2 teaspoon baking soda
1 (10 ounce) jar preserves (apricot is tasty)

Steps:

  • combine all ingredients, except preserves.
  • reserve 1 cup mixture.
  • press remaining mixture into a greased 9x13 inch pan.
  • spread with preserves to 1/2 inch of pan.
  • Sprinkle with remaining mixture.
  • Bake at 400* for 25-30 minutes , until golden.

1 large egg
1/3 cup milk
1 1/2 tsps. vanilla extract
3 cups old-fashioned rolled oats
1 cup Pillsbury BEST® All Purpose Flour
1/2 tsp. baking soda
1/2 tsp. salt
1/4 tsp. ground cinnamon
1/2 cup raisins
1/2 cup coarsely chopped walnuts

Steps:

  • HEAT oven to 350 degrees F. Coat baking sheets lightly with no-stick cooking spray.
  • COMBINE shortening, brown sugar, egg, milk and vanilla in bowl of electric mixer; beat at medium speed until well blended.
  • COMBINE oats, flour, baking soda, salt and cinnamon. Mix into shortening mixture at low speed just until blended. Stir in raisins and walnuts. Drop by rounded measuring tablespoonfuls of dough 2 inches apart onto prepared baking sheets.
  • BAKE 8 to 10 minutes or until lightly browned. Cool 2 minutes on baking sheets. Place on cooling racks to cool completely.

1 cup water
3 ½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 cup shortening
1 ¾ cups white sugar
2 eggs
1 teaspoon vanilla extract
½ cup chopped walnuts

Steps:

  • Place water and raisins in a small saucepan, and bring to boil. Boil 3 to 4 minutes. Set aside to cool.
  • Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • Combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg; set aside.

Steps:

  • In a large bowl, combine the oats, sugar and cocoa. With clean hands, mix in the water, vanilla and butter to form a dough. Wash hands, then roll the dough into balls 1 to 2 inches in diameter.
