PEPPER JACK MEATLOAF

This Pepper Jack Meatloaf is absolutely delicious. Especially if you like the flavor of Pepper Jack Cheese.

1 Egg
1 Cup Seasoned Bread Crumbs
1/4 Cup Yellow Onion (Finely Diced )
1 Tsp Salt
1/2 Tsp Ground Black Pepper
2 lbs Lean Ground Beef
1 Cup Pepper Jack Cheese (Shredded )
Salsa

Steps:

  • Preheat Oven to 350°F.
  • In a large mixing bowl, combine the egg, bread crumbs, onion, salt and pepper.
  • Add the ground beef to the mixture and mix well. Press half of the beef mixture into the bottom of a greased loaf pan. Sprinkle 3/4 cup of the pepper jack cheese over meat to within 1/2 inch of sides. Press remaining beef mixture over cheese.
  • Bake uncovered for 50-55 minutes or until the meat is no longer pink. Sprinkle the remaining cheese over meatloaf and bake an additional 5 minutes until cheese is melted.
  • Let meatloaf stand for 10 minutes before slicing. Serve with salsa if desired.

1 cup seasoned bread crumbs (I use pepperidge farms)
1/4 cup chopped onion
1/2-1 teaspoon salt
1/2 teaspoon pepper
1 1/2 lbs lean ground beef
1 cup shredded monterey jack pepper cheese or 1 cup monterey jack cheese, divided

Steps:

  • In a large bowl,combine the egg,bread crumbs,salt and pepper.
  • Crumble beef over mixture and mix well.
  • Press half the beef mixture onto the bottom and halfway up the sides of a greased 8x4x2 inch loaf pan.
  • Sprinkle 3/4 cup of the cheese over meat to within 1/2 inch of sides.
  • Pat remaining beef mixture over cheese.
  • Bake uncovered at 350 for 50-55 minutes or until meat is no longer pink.
  • Sprinkle with remaining cheese.
  • Bake 5 more minutes or until cheese is melted.
  • Let stand for 10 minutes before slicing.

1-1/2 pounds lean ground beef (90% lean)
1/2 c crushed and seasoned pork rinds
1 cup (4 ounces) pepper jack cheese, divided
1 cup salsa, optional

Steps:

  • 1. In a large bowl, combine the egg, seasoned pork rinds , onion, salt and pepper. Crumble beef over mixture and mix well. Press half of the beef mixture onto the bottom and halfway up the sides of a greased 8-in. x 4-in. loaf pan. Sprinkle 3/4 cup cheese over meat to within 1/2 in. of sides. Pat remaining beef mixture over cheese. Bake, uncovered, at 350° for 50-55 minutes or until meat is no longer pink and a meat thermometer reads 160°. Sprinkle with remaining cheese. Bake 5 minutes longer or until cheese is melted. Let stand for 10 minutes before slicing. Serve with salsa if desired.

3 large baking potatoes, peeled and quartered lengthwise
2 large eggs, lightly beaten
1 large onion, chopped
1 can (8 ounces) tomato sauce
3/4 cup crushed saltines
1/2 cup ketchup
3 garlic cloves, minced
2 teaspoons Worcestershire sauce
1/2 teaspoon seasoned salt
1/2 teaspoon seasoned pepper
3 pounds ground beef
1 pound spicy bulk pork sausage
SAUCE:
1 cup ketchup
1/3 cup packed brown sugar
1-1/2 teaspoons ground mustard
1/2 teaspoon ground nutmeg

Steps:

  • Cut three 25x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on bottom and up sides of a 6- or 7-qt. slow cooker. Coat strips with cooking spray. Top with potatoes., In a large bowl, combine eggs, onion, tomato sauce, saltines, ketchup, garlic, Worcestershire sauce, seasoned salt and seasoned pepper. Add beef and sausage; mix lightly but thoroughly. Shape into a loaf; transfer to slow cooker. Combine sauce ingredients; pour over top., Cook, covered, on low until a thermometer inserted into meat loaf reads at least 160° and potatoes are tender, 6 to 6-1/2 hours. Using foil strips as handles, remove meat loaf to a platter.

1 lb ground beef, turkey or chicken
1 cup celery, diced
1/2 cup onion, diced
1 cup oatmeal or crumbled saltine cracker
2 eggs
2 cups pepper jack cheese shredded
1/4 cup ketchup
1/8 tsp chili powder
Salt and pepper

Steps:

  • Preheat oven to 400 degrees F. Grease a loaf pan. Mix meat, celery, onion, oatmeal or crackers, eggs together well. Press half of the meat mixture into prepared loaf pan. Place cheese over meat mixture. Top with remaining meat mixture and press down to seal. Spread ketchup over top of meat loaf...sprinkle with chili powder, salt and pepper. Bake, covered lightly with foil, for 30 minutes. Increase oven temperature to 425 degrees F, remove cover and continue to bake for 20 minutes or until edges are bubbling and knife inserted in center comes out clean. Let sit for 5 minutes then slice and serve.

I had some leftover Pepper-Jack cheese from a picnic which we didn't use. My family will not eat this cheese on sandwiches or burger so I thought I'd try making a meat loaf with it. Oh my this was a good combination of ingredients!

2 lb 90% lean ground beef
1 tsp salt
1/8 tsp pepper
1/2 Tbsp chili powder
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp dried mexican oregano.
1/2 tsp paprika
1/2 tsp ground cumin
1/2 c plain dry bread crumbs
1/4 c rolled oats
1 small onion, grated
2 eggs, lightly beaten
5 slice pepper jack cheese

Steps:

  • 1. Preheat oven to 350°F.
  • 2. In large bowl, thoroughly combine all ingredients except cheese slices.
  • 3. Spray a 2-1/2-Quart Oval Casserole Dish or large loaf pan lightly with cooking spray. Turn meat mixture into casserole and mold into a loaf shape.
  • 4. Bake 1 hour then layer pepper-jack cheese over top and bake for another 10 minutes. Meatloaf should not be pink in center and the juices should show no pink color. Let stand 5 minutes; drain off any grease before slicing.

  • Preheat the oven to 350 degrees F (175 degrees C).

4 bacon strips, optional

Steps:
