BAKED MACARONI AND CHEESE

Baked Macaroni and Cheese image

A friend of mine sent this recipe to me when I got my first apartment, because she knows how much I hate cooking! It's really easy -- even I can make it -- and tastes great. I'm not sure where she found the recipe, but it included the note 'Good source of protein, vitamin A, B group vitamins, calcium.'

THE EASIEST BAKED MACARONI & CHEESE

The Easiest Baked Macaroni & Cheese image

There may be lots of recipes out there for macaroni and cheese, but this is the first one I ever found that you don't have to cook the macaroni before you bake it. It is also really simple to put together - all in the casserole dish you are baking it in! I got this from a newsletter of an organization. I take this to potlucks all the time and I always come home with none of it left. It's a dish I'm constantly handing out the recipe for; be sure not to use cheese that has been frozen and thawed because it will ruin the consistency of the dish. You can also cut down on the butter if you would like to lose some of the fat. This is not a real creamy cheesy type of macaroni and cheese, which can sometimes be a little too rich for our tastes. I've made those, but my family prefers this kind over any other.

Categories     Cheese

Time 1h10m

Yield 4-6 serving(s)

Number Of Ingredients 6

2 1/2-3 cups elbow macaroni, uncooked
3 tablespoons butter, melted
1/4 teaspoon pepper
1 teaspoon salt
2 cups sharp cheddar cheese, shredded
4 cups milk

Steps:

  • Preheat oven to 350 degrees.
  • Melt butter in microwave.
  • Pour macaroni in 2-3 quart casserole dish. Pour butter over macaroni. Stir well to coat.
  • Add salt and pepper. Stir well.
  • Add cheese. Sometimes I may use a mixture of monterey, colby and cheddar, depending on what I have at the time. Mix well.
  • Add milk. Do not stir.
  • Bake uncovered in oven for 60 minutes. I do think this tastes best when it is still hot from the oven.

BAKED MACARONI WITH THREE CHEESES

Baked Macaroni With Three Cheeses image

This macaroni and cheese features a creamy sauce and crisp topping. A great macaroni and cheese requires perfect melding of the pasta and the cheese sauce. To get that, you'll need to ignore conventional wisdom about cooking pasta until just tender (al dente). To help the cheese sauce stick to the pasta, the macaroni is cooked until just beyond al dente, which makes it more absorbent and starchier. This recipe calls for a 3-quart casserole dish, but multiple smaller baking dishes could be used. I clipped this recipe from a newspaper.

Provided by CookingONTheSide

Categories     Cheese

Time 45m

Yield 6 serving(s)

Number Of Ingredients 11

1/2 cup unsalted butter
2 tablespoons unsalted butter
1 lb elbow macaroni
1 tablespoon olive oil
3 1/2 cups whole milk
1/2 cup all-purpose flour
ground black pepper, to taste
2 cups sharp cheddar cheese, grated
2 cups monterey jack cheese, grated
1 cup parmesan cheese, grated
1 cup panko breadcrumbs or 1 cup other coarse breadcrumbs

Steps:

  • Heat the oven to broil.
  • Use 1 T of butter to generously coat a 3-quart casserole dish.
  • Bring 6 quarts of water to a boil in large stockpot.
  • Add 2 T of salt, stir briefly, then add the pasta.
  • Cook until tender and just past al dente, about 10-13 minutes, or slightly longer than package directions.
  • Drain the pasta, then transfer it to a large bowl.
  • Drizzle the olive oil over the pasta, then toss to coat; set aside.
  • To make the sauce, in a small saucepan over low heat, bring the milk to a simmer.
  • Remove the pan from the heat.
  • In medium saucepan over medium heat, melt 1/2 cup of the remaining butter, using a whisk to swirl it to ensure the butter melts completely and does not turn brown.
  • If the butter begins to brown, lower the heat.
  • While whisking, sprinkle in the flour.
  • Continue to whisk until the mixture just bubbles, about 2 minutes.
  • Do not let the mixture brown.
  • While whisking, slowly pour the milk in the saucepan.
  • Continue whisking until there are no lumps.
  • Bring the sauce to a boil, then reduce the heat to low and season with salt and pepper.
  • Continue whisking until the sauce reaches the consistency of heavy cream and coats the back of a spoon, about 2 minutes.
  • Remove the sauce from the heat.
  • Whisk in 1 1/2 cups of the cheddar cheese, all of the Monterey Jack cheese and 1/2 cup of the Parmesan cheese.
  • Whisk until the cheese is completely melted and the sauce is smooth.
  • Pour the sauce over the pasta and gently toss to coat.
  • Transfer the pasta and sauce, using a rubber spatula to scrape the bowl, to the prepared casserole dish.
  • Set aside.
  • In small microwave-safe bowl, melt the remaining 1 T of butter by microwaving on high for about 20 seconds.
  • Add the breadcrumbs and remaining cheddar and parmesan cheeses; toss well.
  • Spread the bread crumb mixture evenly over the pasta.
  • Place the dish on the oven's middle rack and broil for 6-8 minutes, or until the edges are bubbly, and a crunchy crust forms on top.
  • Cool briefly before serving.

BAKED MACARONI AND CHEESE (BY MARK BITTMAN)

Baked Macaroni and Cheese (By Mark Bittman) image

From How to Cook Everything by Mark Bittman. The original recipe called for an entire pound of pasta; however, I found it way too dry with that sauce-to-pasta ratio, so I halved the amount of pasta. I also used rotini and sharp cheddar when I made it. I haven't tried any of the variations yet.

Provided by Sammy Mae

Categories     Cheese

Time 45m

Yield 4-6 serving(s)

Number Of Ingredients 10

salt (to taste)
2 1/2 cups milk (low-fat is fine)
2 bay leaves
1/2 lb pasta (elbow, shell, ziti, or other cut, I like rotini)
4 tablespoons butter
3 tablespoons all-purpose flour
1 1/2 cups grated cheese (like sharp cheddar or Emmental)
1/2 cup freshly grated parmesan cheese
fresh ground black pepper (to taste)
1/2 cup breadcrumbs, preferably fresh (can use more)

Steps:

  • Preheat the oven to 400°F Bring a large pot of water to a boil and salt it.
  • Cook the milk with the bay leaves in a small saucepan over medium-low heat. When small bubbles appear along the sides, about 5 minutes later, turn off the heat and let stand.
  • Cook the pasta to the point where it is almost done but you would still think it needed another minute or two to become tender. Drain it, rinse it quickly to stop the cooking, and put it in a large bowl.
  • In a small saucepan over medium-low heat, melt 3 tablespoons of the butter; when it is foamy, add the flour and cook, stirring, until the mixture browns, about 5 minutes. Remove the bay leaves from the milk and add about 1/4 cup of the milk to the hot flour mixture, stirring with a wire whisk all the while. As soon as the mixture becomes smooth, add a little more milk and continue to do so until all the milk is used up and the mixture is thick and smooth. Add the cheddar and stir.
  • Pour the sauce over the noodles, toss in the Parmesan, and sprinkle with salt and pepper. Use the remaining 1 tablespoon butter to grease a 9 x 13-inch or similar-size baking pan and turn the pasta mixture into it. Top liberally with bread crumbs and bake until bubbling and the crumbs turn brown, about 15 minutes. Serve piping hot.
  • Simpler Macaroni and Cheese.
  • Here the ingredients are just layered and cooked together: Proceed with Steps 1-3 as directed. Butter the baking pan with an extra 1 or 2 tablespoons butter. Layer one-third of the pasta, sprinkle with half of the flour, fleck with half of the butter, cover with about 1/2 cup of the cheddar, pour half of the heated milk over the top, and sprinkle with salt and pepper. Repeat the layers, using the remaining flour, butter, and milk, and top with the remaining pasta, cheese, and bread crumbs. Bake until bubbling and browned on top, about 30 minutes.
  • Rich Macaroni and Cheese.
  • Super-creamy and decadent; make this even more special with some sautéed wild mushrooms: Reduce the milk to 3/4 cup. Omit the bay leaves, the first 3 tablespoons butter, and all of the flour. Substitute mascarpone cheese for the grated cheese. Add about a cup or so sautéed wild mushrooms, if you like, and 1 tablespoon chopped fresh sage leaves (or 11/2 teaspoons dried sage). Cook the pasta as directed. Mix together the milk, mascarpone, and Parmesan in a large bowl. Add the cooked pasta and the sage, sprinkle with salt and pepper, and combine. Proceed with Step 5.
  • Nutty Macaroni and Blue Cheese.
  • Substitute 1 cup blue cheese for the Parmesan and reduce the cheddar by 1/2 cup; use a mild or medium cheddar. Add 3/4 cup roughly chopped walnuts. Fold the blue cheese and walnuts into the pasta mixture in Step 5 (melting the blue cheese in the sauce will make it gray and not so attractive).
  • Macaroni and Goat Cheese with Roasted Red Peppers.
  • Nice and tangy from the goat cheese, while rich and sweet from the roasted peppers: Add 2 roasted red peppers, peeled and chopped, and 1/2 cup each chopped fresh basil leaves and toasted pine nuts. Substitute 1 cup soft goat cheese for the Parmesan, and reduce the grated cheese by 1/2 cup. Omit the bay leaves. Proceed with the recipe, stirring in the peppers, basil, and pine nuts with the pasta in Step 5.
  • Macaroni and Chile Cheese.
  • For a spicy dish, use a hotter chile or add a tablespoon chopped chipotle chile with adobo sauce: Use grated Jack or cheddar for all 2 cups of the cheese. Add 2 medium poblano or other mild green fresh chiles, roasted, cleaned, and chopped, 1/4 cup or so chopped fresh cilantro leaves, and 1 medium tomato, sliced. Proceed with the recipe, stirring in the chiles and cilantro with the pasta in Step 5, then top with the tomato slices and bread crumbs.

BAKED MACARONI

Baked Macaroni image

I suggested using a glass dish because you can see how brown the casserole is getting (and brown is a good thing). My family loves the crispy sides and topping.

Categories     Weeknight

Time 1h20m

Yield 6-8 serving(s)

Number Of Ingredients 8

1 (16 ounce) box ziti pasta, cook per directions
1 (16 ounce) box Velveeta cheese, cut in chunks
1/2 cup butter (divided 1/4 cup and 1/4 cup)
3 tablespoons flour
1 1/2 cups milk or 1 1/2 cups nonfat milk
salt and pepper, to taste
Ritz cracker
butter (to be mixed with the Ritz crackers)

Steps:

  • Mix together the flour, 1/4 cup butter and the milk.
  • Add cheese chunks and allow to melt (continually stirring and watching so cheese does not burn).
  • Add the salt and pepper.
  • Combine the ziti and cheese sauce.
  • Put into casserole dish (I use glass) which has been well buttered with the remaining 1/4 stick of butter (use it all).
  • Mix Ritz with enough butter to moisten the crackers (amount is entirely up to you, but make enough to cover the casserole completely) The more the better.
  • Bake@ 350 degrees for approximately1 hour.
  • Serve immediately.
