This is a simple recipe that everyone loves. For a quick Mediterranean macaroni and cheese, omit the basil. Easily doubled, too!

2 tablespoons butter
1 cup uncooked orzo pasta
1 (14.5 ounce) can chicken broth
½ cup grated Parmesan cheese
¼ cup chopped fresh basil
salt and pepper to taste
2 tablespoons chopped fresh basil

Steps:

  • Melt butter in heavy skillet over medium-high heat. Stir in orzo and saute until lightly browned.
  • Stir in chicken stock and bring to boil. Cover. Reduce heat and simmer until orzo is tender and liquid is absorbed, about 15 - 20 minutes.
  • Mix in Parmesan cheese and basil. Season with salt and pepper. Transfer to shallow bowl. Garnish with basil sprigs.

1 cup orzo pasta
1 1/4 cups low sodium chicken broth
1 1/4 cups water
1/4 cup parmesan cheese, fresh is better

4 teaspoons pine nuts, toasted

Steps:

  • Heat butter in a medium saucepan over medium heat. Add orzo and cook 3 minutes, stirring constantly.
  • Stir in broth and water; bring to a boil. Reduce heat and simmer until liquid is absorbed, and orzo is done, about 15 minutes.
  • Remove from heat; stir in cheese, basil, salt and pepper. Sprinkle with pine nuts. Serve immediately.

2 tablespoon olive oil
4 tablespoon butter (unsalted)
1 small onion (chopped)
4 cloves garlic (minced)
2 cups orzo (dry)
1/2 teaspoon salt (or to taste)
1/4 teaspoon pepper (or to taste)
2 cups chicken broth (low sodium)
2 cups half and half
1 1/2 cup Parmesan cheese (freshly grated)
2 tablespoon fresh parsley (chopped)

Steps:

  • In a large skillet add the olive oil, butter and cook for about 30 seconds until the butter melts. Stir in the onion and garlic and let it cook for about 2 minutes until the onion softens and the garlic becomes aromatic.
  • Add the orzo to the skillet and let it cook for about 2 minutes just in the oil so that it starts to toast lightly, this will give it a nutty flavor.
  • Season with salt and pepper then stir in the chicken broth and half and half. Bring to a boil, then turn the heat down to a medium-low, cover with a lid and let it cook for 5 minutes.
  • Remove the lid and stir in the Parmesan cheese and fresh parsley.
  • Serve immediately.

Steps:

1/4 cup white wine
3½ cups chicken stock

Steps:

  • In a small pot, melt the butter. Saute the minced garlic just until you can smell it then add in the orzo pasta. Cook it until it begins to smell toasty and looks shiny and semi-translucent.
  • Stir in the white wine and cook until it is almost gone. (This is called au sec.) Pour in the chicken stock and cook for about 15 minutes, stirring often. Cook until a thick sauce is made and pasta is al dente. It will absorb most of the chicken broth.

2 cups raw potatoes, peeled and diced
1/2 cup raw carrot, sliced
1 onion, chopped

3 cups water
1 cup parmesan cheese, freshly grated

Steps:

  • Melt butter in a medium saucepan over medium heat; stir in the orzo and garlic and saute until the garlic is fragrant, about 30 seconds.

Number Of Ingredients 6

3 tablespoons unsalted butter
16 ounces orzo
32 ounces chicken or vegetable stock
kosher salt and pepper
½ cup freshly grated parmesan cheese
¼ cup fresh chopped herbs, (or 1 tablespoon mixed dried herbs (basil, parsley, rosemary, thyme, oregano))

Steps:

  • Melt the butter in a saucepan over medium heat. Stir in the orzo and cook for a few minutes, stirring often, so the orzo toasts. Pour in the stock along with a pinch of salt and pepper. Bring the stock to a boil, then reduce it to a simmer and cover. Simmer for 12 to 15 minutes, stirring once or twice so the orzo doesn't stick to the bottom, until the liquid is absorbed.
  • Stir in the parmesan cheese and the herbs. Serve!
