Baked Parmesan Crusted Salmon with Lemon Cream Sauce image

A simple showstopper salmon recipe! Fantastic centrepiece for a special occasion yet easy enough for midweek. Don't skip the sauce! It makes all the difference to this dish because the salmon is not marinated. Though made with cream, it is not rich, it's quite tangy - perfect pairing with rich salmon.

1 (1 - 1.4 kg / 2 - 2.8 lb) side of salmon ( (Note 1))
3- 4 tbsp Dijon mustard
1 cup panko breadcrumbs ((50g) (Note 2))
Oil spray
50g / 3 tbsp butter (, melted)
1/3 cup grated parmesan (, store bought (1/2 cup fresh grated) (Note 3))
2 tbsp finely chopped fresh parsley
2 tbsp finely chopped fresh dill
Zest of 1 lemon
1/2 tsp salt
Pepper
30g / 2tbsp butter
1 eschallot / finely chopped ((Note 4))
1 1/4 cups dry white wine ((Note 5))
1 1/2 cups heavy cream / thickened cream
1 tbsp Dijon mustard
2 1/2 tbsp lemon juice ((plus more to taste))
1/2 tsp sugar
Salt and pepper
Watercress
Lemon wedges
Fresh dill

Steps:

  • Take salmon out of the fridge to bring to room temperature.
  • Preheat oven to 200°C / 390°F (180°C fan).
  • Spread panko on baking tray, spray generously with oil then bake for 3 to 5 minutes until light golden brown. (Note 6) Scrape into bowl immediately.
  • Add butter and stir, then add remaining Parmesan Crumb ingredients.
  • Line same tray with foil. Place salmon on foil.
  • Spread Dijon on salmon using a butter knife. Just a thin coating - like buttering toast.
  • Sprinkle Crumb all over.
  • Bake for 20 minutes for just cooked juicy perfection, or to taste. (Note 7)
  • Remove from oven. Loosen salmon from foil using egg flip or butter knife - skin will hopefully be stuck to foil.
  • Plate watercress on serving platter.
  • Use foil to lift salmon onto watercress on serving plate, then slide out the foil from under it (see video under recipe). Serve with Lemon Cream Sauce and lemon wedges on the side.

Steps:

  • Preheat oven to 400˚F (200˚C).
  • In a medium bowl, mix the parmesan crust ingredients.
  • In a separate bowl, whisk egg. Dredge the salmon in the egg, then parmesan.
  • Lay the salmon on a baking sheet. Lay asparagus beside the salmon. Drizzle with olive oil, then season with salt and pepper.
  • Bake for 10-12 minutes.

2 Tbsp olive oil, extra virgin
1 tsp oregano, fresh

1 pkg vermicelli, cooked
2 c spinach, fresh

1 bottle white wine

  • 1. Preparation Rinse and pat dry salmon filets Rub salmon filets with olive oil and minced herbs Season with salt, pepper & garlic powder Heat a sauté pan or small skillet on medium heat Add remaining olive oil Pan sear salmon skin side down for 5 min. Turn salmon over and sear presentation side down for 3 min. Or to desired doneness. Let rest for 2 min. Before serving. Deglaze pan with white wine. (use about 1 oz.)

Of all the recipes I make, this one is my husband's favorite for salmon. It's made with panko, or Japanese bread crumbs, which are very light and crunchy, mixed with Parmesan cheese. It's baked in the oven until the panko is nice and toasted.

4 (4 ounce) salmon fillets
1 ½ tablespoons fresh lemon juice
salt and ground black pepper to taste
½ cup panko bread crumbs
¼ cup grated Parmesan cheese
1 tablespoon extra-virgin olive oil
1 teaspoon Italian seasoning
⅛ teaspoon garlic powder

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Lightly grease a 9x13-inch baking pan.
  • Place salmon fillets into the baking pan and sprinkle evenly with lemon juice. Season with salt and pepper.
  • Combine panko, Parmesan cheese, olive oil, Italian seasoning, and garlic powder in a bowl. Sprinkle mixture evenly over the salmon.

4 green asparagus
1/2 tablespoon butter

2 large russet potatoes, peeled and cut into 1/8ths
1/2 cup cream
2 tablespoons butter

Steps:

  • Lightly season the salmon with salt and pepper. Generously coat 1side of the salmon with the finely grated Parmesan. In a non-stick saute pan, add approximately 3 tablespoons vegetable oil and place over high heat. When the oil is hot, carefully place the salmon in the pan cheese side down. Turn temperature down to medium heat and allow the salmon to cook about 4 minutes before flipping over. The idea is to form a nice crispy, lightly brown crust. Turn salmon and allow to cook another 3 or 4 minutes. Remove from pan and set aside in a warm place until plating.
  • Sun-Dried Tomato Pesto Paste:
  • In a blender or food processor, add the sun-dried tomatoes along with their oil, the garlic cloves, and 1/4 cup of extra-virgin olive oil. Process the mixture on high speed approximately 1 minute until almost smooth. The mixture should be slightly chunky. Season with salt and pepper, to taste.
  • Basil Pesto
  • In a blender or food processor, place the extra-virgin olive oil and garlic clove. Process until smooth. Add the basil leaves, and process for about 1 minute until mixture is relatively smooth. Add the Parmesan and process again until fully incorporated. Season the pesto with salt and pepper, to taste.
  • To plate:
  • Place a small mound of mash potatoes in the center of the plate. Place the asparagus on top of the mashed potatoes at an angle. Then put the salmon nicely on the plate, overlapping the asparagus. Drizzle the plate with both pestos and garnish the plate with the Parmesan crisp by securing it in the bed of mashed potatoes.
  • Preheat the oven to 350 degrees F.
  • Heavily grease a cookie sheet (parchment paper is optional, but if using parchment, make sure it is heavily greased). In a 5-inch diameter circle, sprinkle the coarsely grated Parmesan. Make sure there is just enough to fill the circle, don't over do it! Place in oven and bake for approximately 8 minutes, or until golden brown. Remove from oven and allow to cool before lifting from cookie sheet. Be extremely gentle with them they are very brittle when cool.
  • Cut off about 2 inches of the ends of the asparagus, as they tend to be very coarse and tough. Blanch asparagus in boiling, well-salted water until tender. Shock them in ice water to keep them from cooking any further and hold them until you are ready to plate. Right before plating, in a saute pan over a low flame, melt the butter with the asparagus. Once the asparagus are hot, season with salt and white pepper.
  • Place the potatoes in cold, salted water over high heat. Cook thoroughly and strain. In a separate pot, heat heavy cream and butter. Using a potato masher, mash potatoes. Slowly incorporate the cream and butter mixture. Season with salt and white pepper, to taste.

1 (10 ounce) package frozen spinach, thawed
1 tablespoon olive oil
1/4 cup minced shallot
1 teaspoon minced garlic
5 sun-dried tomatoes, chopped
1 pinch salt
1/4 teaspoon red pepper flakes
1/4 teaspoon fresh ground black pepper
1/2 cup part-skim ricotta cheese
1 tablespoon low-fat cream cheese
1 -1 1/4 lb salmon fillet, cut into 4 portions
2 tablespoons mayonnaise
1 teaspoon lawry's lemon pepper
2 tablespoons parmesan cheese
3/4 cup dry breadcrumbs
Pam cooking spray

Steps:

  • For the Spinach mixture (which can be made ahead prior as a time saver for entertaining).Thaw spinach and squeeze of all excess liquid. Set aside. Heat oil in a large skillet, over medium heat and add shallots. Cook, stirring, until soft, about 3 minutes and add garlic; cook 1 minute more. Add spinach, sundried tomatoes, salt, pepper flakes and pepper; cook, stirring, 2 minutes more. Remove from heat; let cool about 15 minutes. Add ricotta and cream cheese; stir to combine.
  • Directions for the Salmon:.
  • 1.Preheat oven to 350°F.
  • 2.Fillet salmon and place skin side down on a glass baking dish.
  • 3.Spread a generous amount of mayonnaise; cover entire top of fish.
  • 4.Sprinkle liberally with bread crumbs mixture. Spray with Pam.
  • 5.Bake about 15-20 minutes, uncovered.
  • 6.Place under broiler until top turns brown.
  • Place a scoop of the spinach on each plate and top the mixture with a piece of salmon.

I was inspired by a Salmon dish that I got at The Keg Steakhouse. It was so tasty!! I love to eat there, but we moved away and no longer have access. :( This is by no means a copycat, but it is very tasty and easy too!!!

1 lb fresh salmon (fillet is best)
1/4 cup mayonnaise
1/3 cup parmesan cheese
1/2 teaspoon garlic powder (or to taste)
1/2 teaspoon dried chives (or to taste)
1/2 teaspoon dried parsley (or to taste)
fresh ground black pepper

Steps:

  • Preheat oven to 375*.
  • Cut fillet into 4 pieces.
  • Rinse and pat dry.
  • Grease baking sheet. (I cover with foil and use a little olive oil. It makes clean up a breeze!).
  • Lay fillet pieces on prepared sheet, skin down.
  • Combine all remaining ingredients and mix well.
  • Slather entire mixture on top of fillet pieces.
  • Bake in preheated 375* oven for 15 minutes or until done. This depends on thickness.
  • Serve with your favorite sides!

8 slices bacon
3/4 cup Miracle Whip
1/2 lemon rind
1/2 lemon juice
2 -4 garlic cloves
1/2 teaspoon salt, to taste
1 onion
1/4 cup butter
3/4 cup parmesan cheese

Steps:

  • Cook Bacon until fat is rendered and starting to get brown.
  • mix lemon juice, lemon rind, garlic and Miracle Whip until combined, set aside.
  • Melt butter and slice onion. Place melted butter in bottom of baking dish and arrange sliced onion on bottom.
  • Place Salmon on top of onion.
  • Spread Miracle Whip mixture over salmon and sprinkle Parmesan on top.
  • Cur bacon into bits and place on top of salmon.
  • Bake at 325 F for 20-25 minutes or until a thermometer reads t he appropriate temperature. It is dependent on the thickness of the cut.
  • Broil for 2-4 minutes until the Parmesan is slightly brown.
  • ENJOY!

4 salmon fillets
2 tablespoons light butter, melted
1/2 teaspoon garlic salt
1/4 teaspoon ground black pepper
3/4 cup breadcrumbs
1/4 cup parmesan cheese, grated
2 tablespoons green onions, thinly sliced
2 teaspoons lemon peel, grated
1/4 teaspoon dried thyme leaves

Steps:

  • Heat oven to 375ºF. Spray shallow baking pan with cooking spray.
  • Pat salmon dry with paper towel. Place salmon skin side down in pan; brush with 1 tablespoon of the butter and sprinkle with garlic salt.
  • Mix bread crumbs, Parmesan cheese, green onions, lemon peel and thyme in small bowl. Stir in remaining 1 tablespoon butter. Press bread crumb mixture evenly on salmon fillets.
  • Bake uncovered 15 to 25 minutes or until salmon flakes easily with fork. Serve immediately in a bed of cooked spinach, rice or pasta.
