MIDDLE EASTERN OLIVE CHICKEN STEW WW WEIGHT WATCHERS
Has a delicate fresh flavor, not heavy at all. Got from another site and it was given 8 points per serving. Can serve over basmati rice, couscous, or rice - I served in a bowl as a stew.

Steps:
- Cut chicken into bite size pieces.
- Spray a large pot or Dutch oven with non-fat cooking spray and set over medium high heat.
- Brown chicken and remove chicken and set aside
- Add in garlic and onion and sauté, stirring constantly, until tender, about 5 minute.
- Return chicken to pan, and sprinkle with cumin, paprika, turmeric, cinnamon, nutmeg, salt, & pepper.
- Add in potatoes, tomatoes, and 1-2 cups of broth (use enough broth to cover all the chicken and potatoes).
- Cover and simmer over low heat for 25-30 minutes, stirring occasionally.
- Add in lemon juice, lemon zest, capers olives and parsley and heat through. Add in additional salt and pepper to taste, if desired (I didn't need additional S&P).
- Serve immediately.

SPRING VEGETABLE STRATA - WEIGHT WATCHERS
1 1/2 cups per serving, for a 3 point serving. Serve with a tossed salad (points not included). Also good for OAMC - freeze before baking. It looks impressive, too. I like it for luncheons with the gals or for dinner.

Steps:
- Preheat oven to 375°F.
- Coat a 1 1/2-quart casserole dish with cooking spray. Place bread cubes evenly on bottom of dish, sprinkle with cheese and set aside.
- Melt margarine in a nonstick skillet over medium heat. Sauté carrots, mushrooms, onion and garlic until tender, about 3 to 5 minutes. Stir in tomato and asparagus and cook 2 minutes more. Season to taste with salt and pepper; spoon vegetable mixture over cheese.
- Combine egg substitute and milk in a small bowl; pour over vegetable mixture. Bake until knife inserted in center comes out clean, about 40 minutes. Let stand for 10 minutes before serving. Yields about 1 1/2 cups per serving.

- Heat 1 teaspoon of the oil in a Dutch oven over medium-high heat. Add the chicken and cook, turning occasionally, until browned, about 4 minutes. Transfer to a bowl; set aside.
- Add the remaining 1 teaspoon oil to the Dutch oven, then add the fennel, carrots, leek, tomato, and garlic. Cook over medium-low heat, stirring occasionally, until the vegetables are tender but not browned, about 8 minutes. Stir in the broth, wine, potatoes, and bay leaf; bring to a boil. Reduce heat and simmer, covered, until the potatoes are almost tender, about 10 minutes.
- Add the clams and cook, covered, 3 minutes. Add the mussels, shrimp, thyme, and the browned chicken. Simmer, covered, until the shrimp are just opaque in the center, the clams and mussels open, and chicken is cooked through, about 3 minutes longer. Discard any clams or mussels that do not open. Remove the bay leaf before serving. Yields 2 cups per serving.
