This is a recipe that I created by modifying my mother's recipe. My boyfriend is a fettuccine Alfredo connoisseur and he scrapes the pan every time! I get nothing but rave reviews when I make this dish. I must warn you, this recipe is not for the health conscious. Enjoy!

24 ounces dry fettuccini pasta
1 cup butter
¾ pint heavy cream
salt and pepper to taste
1 dash garlic salt
¾ cup grated Romano cheese
½ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add fettuccini and cook for 8 to 10 minutes or until al dente; drain.
  • In a large saucepan, melt butter into cream over low heat. Add salt, pepper and garlic salt. Stir in cheese over medium heat until melted; this will thicken the sauce.
  • Add pasta to sauce. Use enough of the pasta so that all of the sauce is used and the pasta is thoroughly coated. Serve immediately.

1 lb. fettuccine noodles
1 stick butter
1 c. heavy cream
Salt and pepper, to taste
2 c. freshly grated Parmesan cheese

Steps:

  • Cook pasta according to package directions.
  • In a saucepan or skillet, warm butter and cream. Season with salt and freshly ground black pepper.
  • Grate Parmesan cheese and place half of it into a large serving bowl. Pour warm butter/cream mixture over the top.
  • Drain pasta and immediately pour it into the bowl.
  • Toss a couple of times, then sprinkle in the other half of the Parmesan.
  • Toss to combine, thinning with pasta water if necessary.
  • Serve immediately as a main course or accompaniment to meat or salad. Delicious!

2 garlic cloves, crushed
2 cups broccoli florets
2 cups cream
1 cup drained canned crushed tomatoes, in little pieces of pureed
5 ounces prosciutto, cut into julienne strips
1 lb fettuccine pasta
1/2 cup grated pecorino cheese (or more)
fresh parsley

Steps:

  • Heat butter over moderately-high heat until foam subsides.
  • Saute garlic and broccoli, stirring, for 2 minutes.
  • Remove with slotted spoon and transfer to a plate.
  • Add cream to skillet and simmer, stirring, for 3-5 minutes, or until thickened slightly.
  • Stir in tomatoes, prosciutto and broccoli and cook, stirring, for 2 minutes; season to taste (I now puree the tomatoes before using as one of my kids does not like tomato 'pieces' in his food).
  • Cook fettucine until al dente.
  • In a large bowl, toss fettucine with 1/3 of the sauce until coated well.
  • Transfer to serving plates and spoon remaining sauce and vegetables over.
  • Sprinkle with cheese and garnish with parsley.

1 cup freshly grated Parmesan Cheese ((divided))
1/2 cup butter ((divided))
2 cups long pasta ((I used fettuccine))
black pepper to taste

Steps:

  • In a large pot of boiling salted water cook the fettuccine al dente.
  • in a medium pan add 1/2 the butter, 1/4 cup Parmesan cheese and 1/2 -1 ladle of hot pasta water (about 3-5 tablespoons). On low medium heat, whisk together to make a cream.
  • Add the drained pasta, another 1/2-1 ladle of hot pasta water (or a little more if needed) the remaining butter and parmesan cheese, gently toss together on low heat (for about 1 minute) and serve immediately, sprinkle with parmesan cheese and black pepper. Enjoy!

1 pound dried fettuccine
6 tablespoons unsalted butter
1 shallot, minced
1 cup heavy cream
1 cup finely grated Parmigiano-Reggiano
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Fresh parsley, for garnish, optional

Steps:

  • Cook the fettuccine in a pot of rapidly boiling salted water until al dente. Drain in a colander, reserving 1/4 cup of the pasta cooking liquid.
  • While the pasta is cooking, melt the butter in a medium saucepan over medium-high heat. Add shallots and saute until tender. Add heavy cream and bring to a boil. Cook until sauce has reduced slightly, about 5 minutes. Remove from the heat.
  • Return the pasta to the pot it was cooked in, set over medium-high heat along with the reserved cooking liquid. Add the butter-cream mixture and half of the Parmesan and toss to combine thoroughly. Season with salt and pepper, to taste. Sprinkle with remaining Parmesan and garnish with parsley, if desired. Serve immediately.

Steps:

  • Heat butter in saucepan on low. When melted, add basil, onion, pepper, and garlic.
  • SLOWLY add the heavy cream. when mixed, turn heat to medium. Stir occasionally for five minutes. Add a dash of lime.
  • Add small amount of bleu cheese and parmesan. Stir until melted and mixed. Repeat every 3 minutes until no cheese is left.
  • Let sauce thicken. Serve over fettuccine.

1 medium onion, minced
1/2 cup (1 stick) butter
1/2 cup all-purpose flour
1 cup hot milk
1/2 cup grated Parmesan
1 pound penne pasta
1 (8-ounce) package frozen peas, blanched in salt water
Salt and white pepper

Steps:

  • Bring a pot of water to boil for the pasta.
  • For the sauce, melt butter in a saucepan which will be large enough to accommodate the pound of cooked pasta, and saute onion until it becomes translucent. Mix in the flour to make a roux. Gradually add milk and allow thickening over low heat. Remove from heat and whisk in Parmesan. Immediately cover surface of sauce with a sheet of plastic wrap and set aside briefly.
  • Boil the pasta until al dente and drain. Add the cooked pasta and the blanched peas to the pan containing the sauce and fold to coat pasta. Season with salt and pepper, as needed.

  • Make the sauce: Melt the butter in a skillet over medium heat. Add the garlic and lemon zest and cook until the garlic is slightly soft, about 1 minute. Add in the flour and cook, stirring with a wooden spoon, 1 minute. Whisk in the milk and 3/4 teaspoon salt and cook, whisking constantly, until just thickened, about 3 minutes. Add the Neufchâtel and parmesan cheese; whisk until melted, about 1 minute. Stir in the chopped parsley.

  • Prepare the fettuccini as directed on the package.

6 ounces unsalted butter
6 ounces parmigiano-reggiano cheese, grated (aged 24 months)

Steps:

  • Cook the fettuccine noodles in 1 gallon of salted boiling water for three minutes.
  • At the same time, mix the butter at room temperature in a bowl with the grated cheese until the cheese almost dissolves, forming a smooth cream. If using a mixer, this should not take more than three minutes at which time the noodles will be ready.
  • Strain the pasta leaving just a small amount of water and toss the noodles with the Alfredo sauce. Plate the preparation.
  • Cheese lovers may want to sprinkle additional grated cheese on top.

You will not find a better Fettuccine Alfredo other than at Alfredo's in Rome, Italy. The secret to his sauce is in the Parmigiano-Reggiano cheese (don't even try this recipe without it), the balance of the pepper and nutmeg. For some reason restaurants never get it right. 2 cups heavy cream
2 cups chicken broth or 2 cups vegetable broth
3 tablespoons minced garlic
1/2 cup diced onion
1 tablespoon cornstarch, mixed with small amount water
1 tablespoon minced fresh parsley
salt & fresh ground pepper
3/4 cup fresh shredded parmesan cheese

Steps:

  • Melt butter in large saute pan.
  • Add garlic and onions, saute until brown.
  • Add broth and cream and reduce for several minutes.
  • Slowly add the cornstarch/water mixture stirring until the sauce begins to thicken slightly.
  • Do not over thicken as the parmesean cheese will also act as a thickener.
  • Add the parmesan cheese, parsley, and salt & pepper.
  • Taste test and add more seasoning if needed.
  • Combine with fettuccini noodles and toss.
  • Serve immediately in warm bowl.
