THE GREATEST QUESADILLA

Steps:
- Toss together the Cheddar, Monterey Jack and pepper jack in a bowl; set aside.
- Heat 2 tablespoons of the butter in large skillet over medium heat. Place a single tortilla in the skillet. Sprinkle a little less than a third of the cheese blend over the tortilla. Sprinkle with salt and pepper. Add about a third of the diced tomato and a third of the chiles. Sprinkle a touch more cheese over the whole thing and gently top and press with a second tortilla. Cook until golden on the bottom, about 3 minutes.
- Carefully flip the quesadilla to the other side. Continue cooking until the second side is golden, 3 to 4 minutes more. Repeat with the remaining ingredients. Slice each quesadilla into wedges and garnish with cilantro sprigs.
HOT & FRUITY QUESADILLA
This is a tasty fruit version of a quesadilla, great for breakfast or dessert. Make sure to use butter & not cooking spray or oil. The final result would taste different. Fruit preserves can be substituted for the jam but do not use jelly.

- Divide the jam in half then spread on 2 tortilla shells. Leave about 1/2 inch on all the sides clean.
- Melt half the butter in a small frying pan over medium heat. Place one jam covered tortilla into the pan (jam side up). Cover with another plain tortilla.
- Cook until the bottom turns golden. Carefully turn over & cook the other side. Take out of the pan & cut into quarters. Serve warm.
- Repeat the previous steps for the other quesadilla.

VEGETARIAN BREAKFAST QUESADILLA
I got the idea from a recipe at Mr.Breakfast, but added some things of my own! It's pretty quick and delicious! Much better than cereal and milk again... About the "Mexican cheese", my local grocery store sells a bag that's a mix of three different cheeses, it's already shredded! They call it Mexican for some reason, and I always use it for this sort of thing.

- Slice the onions, tomatoes, broccoli and veggie ham into small pieces. Mix in the vegetable oil.
- Heat a frying pan to medium-high. Add the vegetable mixture.
- Meanwhile, whisk the egg, salt, and pepper in a bowl. Add to pan with the veggie mix when the broccoli is a little golden. Mix up to get a scrambled egg texture!
- Once the eggs look done, put this mixture in a bowl.
- Clean your frying pan (or get a new one) and rub 1 teaspoon of margarine around in it. Once it melts, put one tortilla in it, and spread some of the shredded cheese on top of it.
- Once the cheese starts to get a bit melty, spread the egg/veggie mixture you've set aside on top of it. Add the rest of the cheese on top of this, and then put the other tortilla on top!
- Spread the rest of the margarine on the top of the new tortilla, and check the bottom one to see if it's golden-brown. If it is, flip the quesadilla over with a spatula and heat the other side until that's golden-brown!
- Put on a plate, cut into slices, and serve!

HOT DOG QUESADILLA

Steps:
- Place 3 tortillas on a work surface.
- Divide cheese and hot dog slices evenly among tortillas.Sprinkle each portion with 1 tsp chives, a pinch of chili powder and a pinch of ground cumin. Top each with remaining tortillas.
- In a medium skillet, heat 1 tsp oil over medium heat.
- Put 1 quesadilla in pan, then rest a small plate on top of quesadilla to weigh it down. Cook for 2 minutes, until golden.
- Remove plate, flip quesadilla with a spatula, weigh down with a plate and cook until cheese is melted and tortilla is crisp (about 2 minutes).
- Remove from pan and keep warm.
- Repeat with remaining oil and tortillas.
- Cut each quesadilla with a pizza wheel into 4 equal wedges. Serve with salsa and sour cream if desired.
