Try this dazzling take on the classic chilled Spanish soup - this version is made with green veg, herbs and yogurt. Add edible flower ice cubes for extra special presentation

100g bag baby spinach
2 garlic cloves
1 large cucumber , deseeded and chopped
½ green chilli , deseeded
½ small pack parsley
½ small pack basil
½ small pack mint
1 ripe avocado , stoned and peeled
4 spring onions , topped and tailed
200g natural yogurt
2 tbsp sherry vinegar
drizzle of extra virgin olive oil or rapeseed oil
handful pea shoots
edible flowers ice cubes, to serve (see tip, below)

Steps:

  • Put all the ingredients, except the oil, pea shoots and ice cubes, into a food processor with a good pinch of salt and pepper and blitz, adding enough water to get a soupy consistency. Taste, and add a little more vinegar and seasoning if necessary. Chill for up to 24 hrs, or at least 2 hrs.
  • To serve, divide between shallow soup bowls, float a few ice cubes in each bowl (see tip, below) and add a scattering of pea shoots and a drizzle of oil before serving.

4 cups water
2 cups split peas
1 large shallot, minced
2 1/2 tablespoons unsalted butter
3 cups low sodium vegetable broth
3 mint sprigs
1/2 cup heavy cream
1 dash fresh ground salt and pepper
1/4 cup sour cream
1/4 cup half-and-half cream

Steps:

  • In medium size saucepan bring water to a boil and add split peas. Reduce heat, cover, and simmer peas until soft, approximately 20 minutes. Drain and set aside.
  • Rinse saucepan. Using the same saucepan, melt butter on medium heat. Add shallots and cook until softened (not browned) for a couple of minutes.
  • Add broth and mint sprigs to the shallots, increase heat and bring to a boil. Add drained split peas and salt and pepper to taste. Reduce heat and simmer, stirring occasionally for approximately 5 minutes while flavors blend.
  • Discard the mint and puree the soup in a large blender until velvety smooth. Be careful the mixture will be hot.
  • Blend in the cream.
  • Salt and pepper to taste.
  • Chill to serve cold.
  • Blend sour cream and half & half together to garnish, adding fresh mint strips if you desire.

My mom used to make split pea soup every fall/winter, but no one else liked it so she and I were the only ones who ate it...Recently I thought of those younger days again and found myself wishing I knew how she'd made it...After a little research and alot of online recipe comparisons, I think I have created a recipe I like and one that I can even do in the slow cooker/crockpot! Serve with hot rolls or biscuits...

1 lb split peas (dried green or yellow)
2 chicken bouillon cubes (low sodium if available)
1 ham hock
1/2 large yellow onion, chopped
2 tablespoons garlic, minced
6 cups water (plus 4 cups water to soak the peas in overnight)
1/2 teaspoon white pepper

Steps:

  • The night before, add 4 cups cold water to slow cooker/crockpot; stir in the dried green split peas; do NOT turn on the slow cooker/crockpot.
  • Cover and let soak overnight; In the morning drain and rinsed the split peas; Return the rinsed peas to the slow cooker/crockpot.
  • Add the chicken bouillon cubes, the onion, the garlic and the pepper; do NOT stir.
  • Place the ham hock on top of everything, in the middle of the slow cooker/crockpot; Slowly pour in the 6 cups of water; do NOT stir.
  • Cover and cook on low for 8-10 hours or on high for 4-5 hours; resist the urge to open the lid for a peek; do NOT stir.
  • When the cooktime is over, remove the ham hock and remove the meat from it; Chop the meat finely and return to the soup.
  • NOW you can stir and see if it is thick enough for you; if not, remove half the soup and puree it in a food processor or a blender.
  • Return the pureed soup to the slow cooker/crockpot and stir; Serve hot with crusty rolls or biscuits.
  • Leftovers may be frozen for OAMC purposes and reheated in the microwave at a later date.
  • Prep time listed does not include overnight pre-soaking of the peas.

Split peas are not just for soup! They shine in this pasta salad recipe with fresh tomatoes and lemon basil dressing.

1/2 cup dried split peas
2 cups water
3 cups farfalle pasta (bow tie pasta)
5 cups water
5 -6 green onions, sliced
2 cups grape tomatoes, sliced in half lengthwise
7 -8 fresh basil leaves, chopped
1 fresh lemon, squeezed
1/4 cup olive oil
1 garlic clove, minced
1 teaspoon oregano
1/8 teaspoon lemon pepper
salt and pepper

Steps:

  • Bring water to a boil and add split peas, reduce heat to a soft boil for approximately 25 minutes or until they are just tender. Drain and rinse until cool while preparing the remainder of the salad.
  • Bring water to a boil, add pasta and reduce heat to a soft boil until pasta is cooked, but not over cooked. Drain and rinse with cold water until cool.
  • In a small saucepan on medium heat, add olive oil, minced garlic and oregano. Sauté until garlic becomes tender and slightly brown, approximately 3 minutes. Remove from heat, add the lemon juice, stir together and set aside until cool.
  • Place all ingredients together and toss with dressing, add some shredded cheese if you like and it is ready to serve.

2 cups lettuce leaves, chopped
2 cups spinach, chopped
3 scallions, diced
1 medium cucumber, peeled, diced
1 tablespoon fresh parsley, chopped
2 cups vegetable broth
3/4 cup sour cream, divided
1/2 cup mayonnaise
1 teaspoon fresh mint leaves, chopped
1/2 teaspoon salt
1/2 teaspoon white pepper

Steps:

  • In a blender, combine lettuce, spinach, scallions, cucumber & parsley, processing until the mixture forms a puree.
  • Gradually add the broth, 1/2 cup of sour cream, mayo, mint, salt & pepper, processing the mixture until it has an even consistency, then refrigerate until ready to serve.
  • Serve in chilled bowls with a dollop of sour cream in the middle of each.

2 cups split peas, dried
1 1/2 cups onions, diced
1 1/2 cups carrots, diced
1 cup celery, diced
3 garlic cloves, crushed
1/2 tablespoon ground ginger
1 tablespoon ground cumin
1 tablespoon ground coriander
1 teaspoon ground cardamom
1 tablespoon ground turmeric
1 tablespoon lemon juice
1 tablespoon cayenne pepper, to taste
6 cups chicken broth (or 3 broth, 3 water)
1 chicken bouillon cube
salt, to taste
pepper, to taste

Steps:

  • Set slow cooker to high. Preheat 6 cups of water to boiling and add to slow cooker with cover.
  • While the water is heating, sort out any unwanted material from the dried green split peas. Rinse split peas well and add to the heated water in the slow cooker.
  • Wash and peel the onions and carrots. Dice and place in crockpot.
  • Wash and dice celery and add to the onions and carrots. Clean and crush or mince garlic and add it to the rest of the vegetables in the crockpot.
  • Add all the seasonings and the lemon juice to the slow cooker and mix well.
  • Cover and leave on high setting. Stir occasionally, checking to see if more hot broth/water is needed for desired consistency.
  • Let cook for 6 and 1/2 hours or until its at desired thickness.
  • Serve!

3/4 cup frozen spinach
1/2 cup diced carrot
1 1/4 cups dried split peas
broth
1 cup tomato juice
2 1/2 cups water
2 -4 teaspoons minced garlic
1 small onion, sliced
1/4 large tomatoes (1 thick slice)
1 large minced jalapenos or 1 large habanero pepper
1 small onion, diced
spices
1 tablespoon vegetable oil or 1 tablespoon ghee
1 1/2 teaspoons hot curry powder
1/2 teaspoon turmeric
3/4 teaspoon coriander
1/4 teaspoon cayenne pepper
1/4 teaspoon black pepper
1/2 teaspoon salt

Steps:

  • Over high heat in a large soup pot, combine 1/2 tbs of the ghee or oil, garlic, minced pepper, and tomato slice. Saute over high heat until close to burning.
  • Add 1/4 to 1/2 the spice mixture and the rest of the oil, if you need to (sometimes the extra oil is unneccssary).
  • Saute until spices are slightly roasted and everything is nice and melded.
  • Add the tomato juice and water, allow to come to a boil.
  • Add 1/2 of the remaining spice mixture and the split peas.
  • Simmer for 30-35 minutes.
  • Add carrots and last of the spice mixture.
  • Simmer for 10-15 minutes.
  • Mash the split peas with a spoon or potato masher, or use a blender, then return to the pot.
  • Add spinach and spice to taste, simmer for a final 10-20 minutes. Serve hot with rice or roti.

1 large ham bone
2 cups dried split green peas
2 large carrots, peeled and diced small
2 medium onions, chopped small
2 large celery ribs, include leaves, chop small
1 large bay leaf
2 beef bouillon cubes
1 teaspoon salt
1/4 teaspoon black peppercorns, crushed
1 pinch dried thyme

Steps:

  • Rinse peas well in cold water and add to a large cooking pot.
  • Measure 8 cups of water and add to cooking pot.
  • Bring to boil, remove from heat, cover and let sit for 1 hour.
  • Return to stove and bring back to boil.
  • Add ham bone, carrots, onions, celery, bay leaf, beef bouillon, salt, peppercorns and dried thyme.
  • Reduce heat to simmer, cover and cook for about 1 to 1 1/2 hours, stirring occasionally.
  • Remove ham bone and cut off any remaining ham, cut into bite size pieces and return to soup.
  • Discard ham bone.
  • If there are big pieces of ham in the soup, remove, cut into bite size pieces and return to soup.
  • Remove bay leaf and discard.
  • Adjust seasonings to taste.
  • If you desire a smooth soup, then puree' in batches in a food processor or blender.
  • Or eat the soup without puree'ing.
  • If soup is too thick, add more water to your desired consistency.
  • Beef broth or chicken broth may be added, just reduce the water by the amounts used.
  • Smoked ham hocks are excellent to use instead of a ham bone.
  • If there is not enough ham on the ham bone, then add additional ham of your choice.
  • You may also use about 1/4 teaspoon of Liquid Hickory Smoke, to get a smokey flavor.
  • You may also use whole peas, but it will take a bit longer to cook these peas so that they are tender.
