GREEN BEAN "FRIES"

2 tablespoons olive oil
1/2 pound green beans, trimmed
1/4 teaspoon kosher salt
Serving suggestions: your favorite dip or lemon wedges

Steps:

  • Heat a large skillet over medium-high heat for 3 minutes. Add the oil and heat another minute.
  • Scatter the beans evenly in the pan and sprinkle with the salt (see Cook's Note). Allow the beans to cook undisturbed until browned, blistered and beginning to split on the first side, about 3 minutes. Using tongs or a slotted spatula, flip the beans and continue to cook another 2 minutes. Flip one more time and cook until all the beans have a good amount of golden brown, an additional minute. Remove to a paper towel-lined plate to drain. Serve with your favorite dip or simply with a squeeze of lemon.

1 pound fresh green beans, trimmed
3 tablespoons capers
3 tablespoons chopped pecans
2 tablespoons panko breadcrumbs
2 tablespoons coconut oil
2 tablespoons grated Parmesan
1 tablespoon grated lemon zest
1 large shallot, cut into julienne
Kosher salt

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the green beans, capers, pecans, breadcrumbs, coconut oil, Parmesan, lemon zest, shallots and 1/2 teaspoon salt in a large bowl; toss to coat. Pour onto a baking sheet and spread into an even layer.
  • Bake for 8 minutes. Stir and continue to bake until the beans are just tender and the skins are golden and blistery, about 8 minutes more.
  • Serve immediately.

4 tablespoons margarine, divided
1/2 cup chopped onion
1/2 cup chopped celery
1 tablespoon flour
1 teaspoon sugar
3/4 teaspoon seasoning salt
1/4 teaspoon white pepper
1 cup half-and-half cream
3 (15 ounce) cans French style green beans, drained
3/4 cup crushed corn flakes
1 cup shredded swiss cheese

Steps:

  • Melt two tablespoons margarine in skillet and saute onion and celery.
  • Stir in flour, sugar, salt, and pepper. Cook 1 minute on medium heat, stirring constantly.
  • Reduce heat and slowly add cream and stir until smooth.
  • Cook and stir over low heat for 2 minutes until mixture is thick. DO NOT BOIL.
  • Fold in green beans, and spread into greased 9x13 inch baking dish.
  • Melt remaining margarine and toss with cornflake crumbs, mix in cheese, and sprinkle over the top of casserole.
  • Bake uncovered at 325 degrees for 25 minutes or until heated thoroughly.

1 garlic clove, minced
1 (11 ounce) can water chestnuts, sliced
1/8 cup half-and-half cream
4 ounces colby-monterey jack cheese, shredded
1/2 cup sliced almonds
1 (8 ounce) can French-fried onions

Steps:

  • Place the green beans and waterchestnuts in a lightly greased casserole dish.
  • Combine the dressing mix, soup, half-n-half, and garlic in a bowl; pour over the beans.
  • Sprinkle with cheese and nuts; top with onions.
  • Bake at 350 degrees for 25 minutes.

DIA'S GREEN BEAN DELIGHT

My daughter K'Dia loves when I make these green beans. She asks me to cook this side dish all the time. She could eat this everyday if I would cook it.

1 lb green beans, fresh
1/2 stick butter, room temperature
3 Tbsp minced onions
1/2 pinch salt and pepper
1 Tbsp accent
1 c water, boiling

Steps:

  • 1. First, you will wash and snap the ends off the green beans. Do not break them like green beans. You are to leave them whole and long. In a saucepan, you will add the green beans to the saucepan along with 1 cup of water. Allow the green beans to steam cook for 5 minutes.
  • 2. You don't want the green beans to cook all the way. You want it to change a darker green but still crunchy to the bite. (taste a green bean to see if its halfway done but still has a crunchy taste) when the green beans are ready, you are to drain the water off the green beans and return them to the saucepan.
  • 3. Add all of the remaining items and sautee the vegatables until fully coated (3 minutes max). Remove green beans and serve to your family. Enjoy!!!
