Yield Makes about 3 cups

Number Of Ingredients 7

1 cup sugar
1 1/2 teaspoons salt
1 tablespoon English-style dry mustard
1 cup tarragon vinegar
1 cup vegetable oil
1/4 cup minced onion
1 papaya, halved, reserving 3 tablespoons of the seeds and reserving the fruit for another use

Steps:

  • In a blender or food processor blend the sugar, the salt, the mustard, and the vinegar until the mixture is smooth. With the motor running add the oil in a stream and blend the dressing until it is emulsified. Add the onion and the reserved papaya seeds and blend the dressing until the papaya seeds are the consistency of ground pepper. The dressing keeps, covered and chilled, for 2 weeks.

1/2 cup toasted sesame seeds
1 cup fresh papaya
2 cups red wine vinegar
2 tablespoons Dijon mustard
1/4 cup lime juice

2 teaspoons sesame seed oil
2 cups canola oil

  • Blend papaya sees until resembles fresh cracked pepper.

1 fresh lime
1 papaya, peeled, sliced, and seeds removed and reserved
1 teaspoon Dijon mustard
1/4 cup rice wine vinegar
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 cup extra-virgin olive oil
6 cups mixed fresh greens, soaked in salt water to remove grit, rinsed and dried in a salad spinner
2 tablespoons chopped fresh cilantro leaves

Steps:

  • To make the dressing, microwave lime in a small bowl to release essential oils, and set aside until cool enough to handle. Through the feed opening of a running blender add, 1 at a time, the papaya, papaya seeds, Dijon mustard, vinegar, salt, pepper, and juice from the microwaved lime. (Note: If you squeeze the lime with the sliced side against your palm, the seeds are likely to stay in the rind.) Then with the blender still running, add the olive oil in a slow thin stream. Please note that the edible papaya seeds lend a wonderful mustard-y taste to the dressing, but are coarse in texture. If you find the texture to be too coarse for you, strain the dressing before use.
  • Toss the greens and cilantro with enough of the dressing to coat, serving additional dressing on the side.

FRESH PAPAYA SEED DRESSING

Don't throw those delicious fresh papaya seeds out! Make this wonderful dressing with them. :) I have also dried papaya seeds and used them chopped or crushed in recipes. They're very good for the digestion and have a slight peppery flavor.

1 tablespoon fresh papaya seeds
1/2 small onion
1/4 cup raspberry vinegar (or other try other flavors)
1/4 cup sugar
1/4 teaspoon salt
1 teaspoon dry mustard
1/2 cup vegetable oil

Steps:

  • In a food processor, whir together the papaya seeds and onion until finely chopped.
  • Add the vinegar, sugar, salt, and mustard and pulse 3 or 4 times.
  • With the processor running, gradually add the oil in a thin stream until dressing emulsifies.
  • Use on your favorite salad greens.
  • Good with a bit of crumbled feta added, too!

4 tablespoons fresh papaya seeds
1/2 cup plain low-fat yogurt
4 tablespoons tahini
1 tablespoon lemon juice
1 tablespoon olive oil

Steps:

  • Blend papaya seeds, yogurt, tahini, and lemon juice in the blender. (If you're having trouble with the tahini stubbornly sticking to the blades or sides, you can premix it by hand with the lemon juice, and then some of the yogurt.) The papaya seeds should be coarsely ground, looking somewhat like poppy seed dressing.
  • With the blender running, drizzle in the olive oil. (Use good quality oil, the flavor is going to come through in the dressing.).
  • Chill in the refrigerator for at least several hours, until the consistency is thickened.
  • The original recipe also included 1 tablespoon of honey. It's not really necessary to add sweetness to a dressing for fruit, but if you have a varietal honey whose flavor will go with your fruit, it makes a lovely treat.

2 stalks green onions, chopped
1/2 cup white vinegar
1 cup extra virgin olive oil

Steps:

  • In a food processor or blender, add sugar, dry mustard, salt, papaya seeds, green onions and white vinegar.
  • Process until smooth.
  • On low speed, drizzle olive oil and process until well blended.
  • This dressing is excellent on almost any green salad.
  • Keep refrigerated in a glass jar with a lid.

Steps:

  • Scrape seeds from papaya and coarsely chop enough seeds to measure 2 tablespoons. Discard remaining seeds, then peel papaya halves and slice.
  • Press ginger in a fine-mesh sieve or a garlic press into a small bowl to extract juice (about 1 teaspoon), discarding pulp. Whisk in chopped papaya seeds, onion, tarragon, garlic, mustard, lemon juice, salt, and pepper and add oil in a slow stream, whisking until emulsified.
  • Divide lettuce and papaya slices among 4 plates and drizzle with dressing.
