Sweet and juicy roasted strawberries with a bold strawberry flavor. Eat them on their own, or use as a topping for yogurt, ice cream, oatmeal, pancakes, or cake.

1 pound fresh strawberries, hulled
2 tablespoons white sugar, or more to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Quarter large strawberries and halve smaller ones. Place strawberries in a 9-inch pie plate. Sprinkle sugar on top and toss several times.
  • Roast in the preheated oven, stirring once, until strawberries are soft and juices are thick and bubbly, 15 to 20 minutes. Cool completely.

Roasting strawberries concentrates their natural sugars for a sweeter, deeper and richer strawberry flavor! The berry juices and maple syrup combine, forming a sticky, thick syrup with floral vanilla notes that's equally valuable.

2 pints fresh strawberries (1.5 pounds or about 4 cups sliced )
1-2 tablespoons maple syrup (or honey, date syrup, sugar, or another sweetner of your choice)
1 vanila bean (or 1 tablespoon of vanilla bean paste)
1 cinnamon stick (optional)
3 fresh thyme sprigs (optional)
pinch kosher salt

Steps:

  • Pre-heat oven to 350 F degrees.
  • Rinse and hull strawberries. Leave tiny ones whole, halve or quarter the rest so they're all roughly the same size and cook at about the same rate. Add strawberries to a baking dish.
  • Add maple syrup (or sweetener of choice), vanilla, cinnamon sticks and thyme (if using or other spices of choice) to baking dish with strawberries. Toss to coat strawberries evenly.
  • Bake for 20 min, stirring once along the way.
  • Enjoy straight out the oven or store in an airtight container in the refrigerator.

1 pound/450 grams strawberries (washed in cold water and hulled)
3 dessertspoons caster sugar (about 2 1/2 tablespoons)
3 tablespoons balsamic vinegar
Optional: black pepper

Steps:

  • Gather the ingredients.
  • Preheat oven to 300 F. Put washed strawberries in roasting tray, making sure they are in 1 layer. Dust with sugar and then sprinkle with vinegar.
  • Roll strawberries around by tipping tray from side to side, making sure that all berries are covered.
  • Cover tray with a tea cloth and leave to marinate for 20 minutes.
  • Put tray into center of oven and roast for 20 minutes. The strawberries will soften but keep their shape. The vinegar and sugar will start to caramelize; make sure, though, that it does not burn.
  • Take roasting tray from oven, leave to cool until cold. The syrup will thicken and become very tasty. Transfer strawberries to a jar and close. Store in fridge. They will keep for several weeks.
  • Serve with vanilla ice cream, and a little sprinkling of black pepper, if desired.

Easy yogurt bowl with delicious pan roasted strawberries! Roast your strawberries and enjoy for breakfast, snack, or dessert.

1 lb / 450 gr fresh strawberries, stems removed and sliced lengthwise
2 tablespoons date syrup or 1 tablespoon pure maple syrup (optional)
1 teaspoon vanilla bean extract
1 cup of your favorite unsweetened plant-based yogurt such as soy yogurt, coconut yogurt, oat yogurt or almond yogurt
1/3 cup muesli or oat granola (per person), like a mixture of fine rolled oats, roasted buckwheat groats and sunflower seeds

Steps:

  • Wash the strawberries and remove the stems. Slice the strawberries lengthwise.
  • Add to a non-stick pan, I use this pan. Heat the pan to medium heat.
  • Toss strawberries with the date syrup on medium heat.
  • Stir occasionally so all strawberries will release moist and are covered with the date syrup.
  • Roast until caramelized and juicy (but not falling apart) for about 10-20 minutes. In the last minutes add the vanilla extract.
  • To make the roasted strawberry yogurt bowl, serve strawberries warm over yogurt with fine rolled oats, roasted buckwheat and sunflower seeds. Or a any other topping you prefer.
  • Serve immediately or let cool and serve cold with cold yogurt.

ROASTED STRAWBERRY FROZEN YOGURT

I put this together hoping to make a rich frozen yogurt. Instead of plain whole-milk yogurt I used honey whole-milk yogurt so I omitted the 2 tablespoon of honey. My ice cream maker can only accommodate a small amount of ingredients, I reduced the yogurt from 3 to 2 cups.

3 cups strawberries (hulled, halved or quartered)
1 cup sugar
1 teaspoon vanilla
1 pinch sea salt
2 cups Greek yogurt, whole-milk
1/2 cup heavy whipping cream
1 tablespoon corn syrup
2 tablespoons honey

Steps:

  • Preheat oven to 425°F. Combine strawberries, vanilla, salt and sugar in a 13x9x2" baking pan. Roast berries, stirring occasionally, until juices are bubbling, 15-20 minutes. Let cool.
  • Purée berries, juices and remaining ingredients in a blender until smooth. Process mixture in an ice cream maker according to manufacturer's instructions until the texture of soft serve ice cream. Transfer mixture to an airtight container, press a piece of parchment or plastic wrap against the top of the yogurt to prevent ice crystals from forming. Freeze until ready to serve.
