SPINACH, PARMESAN AND TOMATO QUICHE



Spinach, Parmesan and Tomato Quiche image

Speed up the preparation of this savory quiche with a frozen pie shell and frozen chopped spinach.

Number Of Ingredients 9

One 9-inch frozen pie shell
1/4 cup thinly sliced fresh chives
3/4 cup finely grated Parmesan
1/2 cup roughly chopped thawed frozen spinach (squeezed dry)
1/2 cup halved cherry tomatoes
1 1/4 cups heavy cream
1 teaspoon finely chopped fresh rosemary
3 large eggs
Kosher salt and freshly ground black pepper

Steps:

  • For the crust: Par-bake the crust according to package directions. Let cool slightly before adding the filling.
  • Adjust the oven temperature to 350 degrees.
  • For the filling: Sprinkle the chives evenly over the crust. Toss the Parmesan, spinach and tomato in a small bowl and sprinkle it in an even layer over the chives.
  • For the custard: Whisk the heavy cream, rosemary, eggs, 1 teaspoon salt and 1/2 teaspoon pepper together in a medium bowl.
  • Pour the custard over the filling and bake until the quiche is set, 35 to 50 minutes. Let cool at least 30 minutes before serving warm or at room temperature.

The most amazing things happen when you go into the kitchen and experiment. I've always maintained that most chefs are really just mad scientists anyway. This recipe begins with a quiche that I've done for years... this time I varied the cheeses, and came up with a flavorful dish that even my uber-picky relatives liked....

Number Of Ingredients 11

1/2 medium onion, chopped
12 oz frozen chopped spinach, thawed & drained
4 medium eggs, beaten
1 c pepper jack cheese, shredded
1 c colby cheese, shredded
1/2 c sharp cheddar, shredded
1/2 c greek feta cheese, crumbled
1/4 tsp salt, table variety
1/4 tsp freshly ground black pepper
4-6 slice good slab bacon, thick sliced
1 large beefsteak tomato

Steps:

  • 1. Place rack into the middle position, and then preheat oven to 350f (175c).
  • 2. Lightly grease a 9-inch pie pan, and set aside.
  • 3. Dice the bacon, and fry up in a large skillet, at medium-high heat, until nice and crisp.
  • 4. Remove the bacon from the pan, and allow to drain on paper towels. Set aside.
  • 5. Meanwhile, remove all but 2 tablespoons of the bacon fat from the pan, and return to the stovetop.
  • 6. Add chopped onions and cook, stirring occasionally, until onions are soft, about 4 to 6 minutes.
  • 7. Stir in spinach, reduce heat to medium, and continue cooking until excess moisture has evaporated.
  • 8. Chef's Note: You don't want the mixture to dry out... just evaporate off the puddles of liquid.
  • 9. Remove the pan from the heat, and allow to cool slightly.
  • 10. In a large bowl, beat the eggs, then add the cheese, salt and pepper, and combine. Then add the spinach/onion mixture, and the reserved bacon. Blend together until evenly mixed.
  • 11. Chef's Note: Avoid, at all costs, the pre-shredded cheeses that are out there. In order to keep the cheese from clumping, they toss the cheese with things like powdered wood pulp... And if you have any problems with that, don't worry because the USDA says that wood pulp is completely safe for consumption ;-)
  • 12. Chef's Note: I have always maintained that Feta cheese is an acquired taste... But its use in this dish really kicks up the flavor. So, if you've avoided Feta, I would really recommend you give it a try in this dish.
  • 13. Place mixed ingredients into the prepared pie pan, and then add the tomatoes to the top, and slightly press them into the mixture.
  • 14. Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.
  • 15. Cooking Tip: If you have a good cast-iron pan, you could cook the bacon, onions, and spinach, and then add the eggs and cheese, and put the pan into the oven. Making this a rustic, one-pan dish.
  • 16. Presentation Tip: If you have a baking pan that does mini quiches... these make a brilliant appetizer for your guests at your next dinner party.
  • 17. Keep the faith, and keep cooking.

1 9 inch pie crust
3 slices of bacon, cooked crisp and chopped up
1/3 C frozen spinach, thawed, rinsed and squeezed dry (1/3 C after squeezing dry)
3 tbsp onion, chopped
4 large eggs, beaten
1 C half and half
1/2 C milk
1/2 C shredded Swiss cheese
1/2 C shredded cheddar cheese
1/2 tsp ground pepper
1/8 tsp seasoned salt
3/4 of a tomato, thin sliced, slices halved

Steps:

  • Place the pie crust in a 9″ round cake pan. Freeze for 15 minutes. Bake the pie crust at 350 for 15 minutes. In a mixing bowl, combine the beaten eggs, cheeses, milk, half and half, bacon, spinach, onion, pepper and seasoned salt. Pour the mixture into the prepared pie crust and even out if needed. Top with the sliced tomatoes. Bake at 350 for 45 minutes or until a toothpick inserted into the center comes out clean. Cool on a wire rack for at least 15 minutes before serving.

A friend of mine made this, and I just had to have the recipe. And it is the best tasting quiche I have had in years. Never any complaints when I make it. Great for a fall/winter dinner with a cup of soup.

¾ pound sliced bacon
1 (9 inch) single refrigerated pie crust
6 eggs, beaten
1 ½ cups heavy cream
salt and ground black pepper to taste
2 dashes Worcestershire sauce
5 dashes hot pepper sauce, or to taste
1 (10 ounce) package frozen chopped spinach - thawed, drained and squeezed dry
1 ½ cups shredded Cheddar cheese
½ cup chopped green onion
¼ cup grated Parmesan cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. Chop when cool.
  • Fit the pie crust into a 9-inch pie dish, and set aside.
  • In a bowl, whisk together the eggs, cream, salt, black pepper, Worcestershire sauce, and hot pepper sauce. Spread the spinach into the bottom of the pie crust; top with bacon, Cheddar cheese, and green onion. Pour the egg mixture over the filling, and sprinkle the quiche with Parmesan cheese.
  • Bake in the preheated oven until the top is lightly puffed and browned, and a knife inserted into the center of the quiche comes out clean, 35 to 45 minutes.

This is an impressive looking quiche that's easy to personalise to your own tastes. You may like to try red peppers instead of the tomato, add a few mushrooms, maybe some asparagus...you get the idea! I served this with a nice salad, a vegetable side dish and a cheese plate for a nice summer meal.

1 package frozen shortcrust pastry dough
1 tablespoon olive oil
2 cups packed fresh spinach leaves, trimmed and washed thoroughly
4 large eggs
2/3 cup creme fraiche (you can also use heavy cream or milk)
1/3 cup crumbled feta cheese
6 cherry tomatoes, halved
2 cloves garlic, minced
2 tablespoons fresh chives, chopped
fresh ground black pepper

Steps:

  • Two hours before you want to make the quiche, take the dough out of the freezer to defrost.
  • When you're ready to start, lay the dough into either a 10 inch quiche or springform baking pan, making sure you have enough dough to form a crust around the edge.
  • The crust should come 1 to 1 1/2 inches up the side of the pan.
  • Crumble the feta cheese onto the bottom of the crust.
  • Pour the olive oil into a saucepan and, when it is heated, throw in the spinach and cook until wilted.
  • Spread the spinach over the feta cheese.
  • Beat the eggs, garlic and creme fraiche together.
  • Pour over top of the feta cheese and spinach.
  • Place cherry tomatoes on top of the quiche.
  • Sprinkle chives and ground pepper on top.
  • Bake at 350 F or 180 C for 45 minutes.

2 medium ripe tomatoes, sliced thinly
5 slices turkey bacon, chopped
1 medium red onion, sliced thin
3 eggs
1/2 cup milk

1/8 teaspoon mustard powder

Steps:

  • Place pie crust in pie pan, and prebake it for 10 minutes at 375 degrees.
  • Cook chopped turkey bacon and red onion until carmelized in frying pan, and place in separate dish.
  • Mix eggs, milk, cheese, and seasonings in mixing bowl. Add the onions and bacon, and pour into prebaked pie crust. (Note: pie crust does not have to be browned,only a little hardened.).
  • Place the sliced tomatoes on top, one by one, all around until the top is covered.
  • Bake in a 375 degree oven for 40 minutes, or until knife inserted is 'clean'.
