PARMESAN CRUSTED TILAPIA WITH LEMON CAPER SAUCE
I don't know where I found this, but I had it printed and decided to make it tonight - YUM! Very light and quick to put together. I had a can of artichoke hearts on hand and added 1/2 of the can in the sauce and it was delicious!

Steps:
- Prepare Parmesan flour by combining 1/2 cup flour and parmesan cheese in shallow pan, set aside.
- Dredge fish in plain flour, shaking off excess flour.
- Dip in egg wash.
- Coat in parmesan flour mixture.
- Heat non-stick frying pan with olive oil (almost smoking).
- Brown fish on both sides, remove from pan and keep warm.
- In the same pan, add more oil if needed, and sauté garlic.
- Add capers, lemon juice, wine and stock, salt and pepper (artichokes if you like).
- Reduce by half, remove from heat.
- Add butter and melt through.

- Heat oven to 375%. Spray a baking pan lightly with cooking oil.
- In a shallow dish, combine melted margarine, garlic powder, and lemon juice. In a separate shallow dish, combine panko and Old Bay seasoning.
- Dip each filet in butter mixture, then roll well in the panko mixture. Place filets in a single layer onto prepared pan.
- Press any remaining panko mixture onto tops of filets.
- Bake 12-14 minutes, until flaky. Serve with lemon wedges.

- Preheat the oven to 425ºF (220ºC). Combine the Parmesan, breadcrumbs, parsley, oregano and paprika. Arrange tilapia on a parchment-lined baking sheet; brush with olive oil and season with salt and pepper.
- Coat the top of the tilapia with the crumb mixture. Bake for 10 to 12 minutes or until fish flakes easily with a fork.
- Meanwhile, prepare the UNCLE BEN'S® BISTRO EXPRESS® Tomato & Herb Flavour rice. Serve fish with rice and lemon wedges.
PANKO-CRUSTED SALMON
Steps:
- Preheat the oven to 425 degrees.
- In a small bowl, mix together the panko, parsley, lemon zest, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Drizzle with the olive oil and stir until the crumbs are evenly coated. Set aside.
- Place the salmon fillets, skin side down, on a board. Generously brush the top of the fillets with mustard and then sprinkle generously with salt and pepper. Press the panko mixture thickly on top of the mustard on each salmon fillet. The mustard will help the panko adhere.
- Heat the vegetable oil over medium-high heat in a 12-inch cast-iron skillet or large heavy, ovenproof pan. When the oil is very hot, add the salmon fillets, skin side down, and sear for 3 to 4 minutes, without turning, to brown the skin.
- Transfer the pan to the hot oven for 5 to 7 minutes until the salmon is almost cooked and the panko is browned. Remove from the oven, cover with aluminum foil, and allow to rest for 5 to 10 minutes. Serve the salmon hot or at room temperature with lemon wedges.
PANKO-CRUSTED TILAPIA
Such a quick and delicious dish. This is inspired by Ina Garten's Panko-Crusted Salmon, although I modified it to use ingredients I already had in my kitchen and to use slightly less oil. It was absolutely perfect paired with roasted asparagus.

- Preheat oven to 400 degrees.
- In a shallow bowl, mix panko, garlic, thyme, cayenne, and a generous pinch of both salt and pepper. Add the olive oil to panko mixture, mixing with fingers so that breadcrumbs are evenly coated. Set aside.
- Spray a baking sheet with non-stick cooking spray. Place tilapia fillets on baking sheet at least 1 inch apart. Spread 1/2 tsp dijon mustard (or more to taste) evenly on each fillet. Press panko mixture on top of the mustard, splitting the panko evenly among the four fillets.
- Bake for 10-12 minutes, until fish is cooked through and will flake with a fork.

Fast, Easy and Healthy! This recipe is for 2, but I have easily doubled it for more. This bakes so quickly that I often make a bunch of these fillets and eat them leftover for lunches.

- Thaw and wash tilapia fillets if frozen. Pat dry on paper towels.
- Combine crumbs, parmesan, italian seasoning and garlic powder on a plate, mixing well.
- On a different plate, pour 1 tbsp lemon juice.
- Working 1 at a time, place a fillet on the plate in the lemon juice, sprinkle with desired amount of kosher salt (be careful about how much salt is in your parmesan, crumbs, and other seasonings), black pepper, and garlic powder. Turn the fillet over in the lemon juice and sprinkle seasoning on the other side.
- Dredge fillet in the parmesan mixture patting it all over to coat.
- Place in an oiled baking dish, repeat with remaining fillets.
- Sprinkle a little lemon juice over fillets and drizzle or spray them lightly with olive oil.
- Bake at 425ºF for about 20 minutes or until they easily flake with a fork and edges are browning (you can sprinkle some more parmesan on top if desired). You can also bake these faster at 450ºF.
