  • Heat oil in large skillet on medium heat. Add eggs; cook until set, stirring occasionally. Remove from skillet.

  • Stir in cooked eggs. Serve immediately.

A very easy recipe. If you have left over rice and you are in a hurry this is the recipe to make. The rice needs to be cold in order to fry right. You can use less rice if you like or more hot pepper flakes if you like it really hot.

1/2 cup diagonally sliced celery
2 cups diced pork roast
1 tablespoon minced garlic
2 tablespoons oil
3 cups cold cooked rice (rice needs to be cold in order to fry right)
1 cup sliced water chestnuts
1/8 teaspoon pepper
1/4 teaspoon salt
1 egg, slightly beaten
1 pinch hot pepper flakes
2 -3 tablespoons soy sauce (to taste)

Steps:

  • Saute onions, celery and pork in oil until vegetables are tender crisp.
  • Add rice and water chestnuts.

This classic Korean dish, Gungjung Tteokbokki, translates to Royal Court Rice Cakes. It was a meal for kings and queens (gungjung means "royal court") in the Joseon Dynasty, the longest imperial period in Korea (1392-1910). The dish is traditionally prepared with long cylindrical Korean rice cakes, but you can also use sliced disk-shaped rice cakes, like we did in this recipe.

8 ounces shiitake mushrooms, thinly sliced
6 cloves garlic, finely minced
3 tablespoons plus 1 teaspoon soy sauce
3 tablespoons toasted sesame oils
1 tablespoon sugar, plus more for seasoning
8 ounces rib-eye, sirloin or other tender cut of beef, sliced 1/4 inch thick
1 pound cylindrical rice cakes (tteokbokki tteok)
2 tablespoons vegetable oil
1/2 onion, thinly sliced
1 carrot, halved lengthwise and thinly sliced on an angle
1 zucchini, halved lengthwise and thinly sliced on an angle
Kosher salt and freshly ground pepper

Steps:

  • Combine the shiitakes, garlic, 3 tablespoons soy sauce, 1 tablespoon sesame oil and the sugar in a large bowl. Add the beef and toss to coat well; set aside.
  • Bring a large pot of water to a boil over medium-high heat. Add the rice cakes and cook, stirring to prevent sticking, until softened, about 1 minute. Drain and transfer to a large bowl; toss with 1 tablespoon sesame oil and the remaining 1 teaspoon soy sauce.
  • Heat the vegetable oil in a large nonstick skillet over medium-high heat. Add the onion, carrot and zucchini; season with salt and pepper. Cook, stirring, until just tender, about 5 minutes. Add the vegetables to the bowl with the rice cakes.
  • Add the shiitakes and beef to the empty skillet and cook, undisturbed, until browned, 1 to 2 minutes. Flip over to finish cooking the other side, about 1 more minute.
  • Return the vegetables and rice cakes to the skillet. Drizzle with the remaining 1 tablespoon sesame oil and toss well to combine. Season with salt and pepper.

1 1/2 cups chicken broth (25% less sodium)
2 teaspoons oil, divided
2 eggs, lightly beaten
1 lb boneless pork steak, cut into bite-size pieces
2 cups frozen peas, thawed

1/4 cup asian sesame dressing

Steps:

  • Combine rice and broth in microwaveable bowl; cover. Microwave on high 5 minutes. Let stand 5 minutes or until liquid is absorbed.

1 cup uncooked white rice
1 2/3 cups water
1 1/4 cups beef broth
1/3 cup oyster sauce
2 tablespoons cornstarch
2 tablespoons fresh minced garlic (or to taste)
2 teaspoons dried chili pepper flakes (or to taste)
1 lb sirloin beef (thinly sliced, or use flank steak)
1 -2 tablespoon vegetable oil
5 cups vegetables (use your favorite assorted stir-fry veggies)
salt and pepper
1 cup green onion, chopped
1 prepared unbaked pie shell

Steps:

  • Set oven to 350 degrees.
  • Prepare a 10-inch pie plate or a 9-inch square baking dish or a 1-1/2-quart baking dish.
  • In a saucepan cover the rice with 1-2/3 cup water; bring to a boil over high heat, cover, reduce heat and simmer for about 15 minutes; remove from heat and let stand for 15 minutes longer.
  • Meanwhile mix 1 cup beef broth with oyster sauce, cornstarch, garlic and chili flakes; set aside.
  • Heat oil in skillet over high heat; add in the beef slices; cook until meat is no longer pink (about 4 minutes).
  • Add in the remaining 1/4 cup broth with the 5 cups veggies and green onions; cook for about 3 minutes, or until veggies are bright green.
  • Stir in the seasoned beef broth mixture; bring to a boil, cook until thickened (about 1-2 minutes) transfer to a large bowl.
  • Add in the cooked rice; mix to combine and season with salt and pepper.
  • Spoon the mixture into prepare dish.
  • Place the prepare pastry over the mixture and fold the edges under, flute as desired.
  • Make a couple of slits on top of the pastry.
  • Place the baking dish or pie plate on a baking sheet to catch any spills.
  • Bake for about 1 hour, covering the pastry loosley with foil if overbrowning.

2 cups rice
2 cups beef stock
1 tablespoon oil (flavoured infused oil works very well)
250 g bacon (cut into strips)
1 onion (sliced)
1 teaspoon minced garlic
1 cup frozen mixed vegetables (corn kernels and peas will do)
2 tablespoons soy sauce

Steps:

  • Turn Rice Cooker onto cook.
  • Add oil, bacon, onion and garlic to Rice Cooker.
  • Stir frequently until onion is soft.
  • Add rice to Rice Cooker and coat in oil.
  • Add frozen vegetable and beef stock and mix well.

This Chinese fried rice has the flavor those other recipes are missing. Tastes like takeout. I want to dedicate this dish to Bergy, whose recipe "AM & B's Indonesian Mehoon" has inspired this dish. Make sure you season your rice with salt before it cooks. Add some butter to the cooking water, as well. Other seasonings should be added before you cook, as well, so it has time to get inside the rice. If you like sesame flavor, add 1 tsp. of it after you add the green onions, but do not use it as a cooking oil because it easily burns.

3/4 cup finely chopped onion
2 1/2 tablespoons oil
1 egg, lightly beaten (or more eggs if you like)
3 drops soy sauce
3 drops sesame oil
8 ounces cooked lean boneless pork or 8 ounces chicken, chopped
1/2 cup finely chopped carrot (very small)
1/2 cup frozen peas, thawed
4 cups cold cooked rice, grains separated (preferably medium grain)
4 green onions, chopped

  • Heat 1 tbsp oil in wok; add chopped onions and stir-fry until onions turn a nice brown color, about 8-10 minutes; remove from wok.

  • Mix egg with 3 drops of soy and 3 drops of sesame oil; set aside.
  • Add 1/2 tbsp oil to wok, swirling to coat surfaces; add egg mixture; working quickly, swirl egg until egg sets against wok; when egg puffs, flip egg and cook other side briefly; remove from wok, and chop into small pieces.
  • Heat 1 tbsp oil in wok; add selected meat to wok, along with carrots, peas, and cooked onion; stir-fry for 2 minutes.
  • Add rice, green onions, and bean sprouts, tossing to mix well; stir-fry for 3 minutes.
  • Add 2 tbsp of light soy sauce and chopped egg to rice mixture and fold in; stir-fry for 1 minute more; serve.
  • Set out additional soy sauce on the table, if desired.

1 tablespoon canola oil
1 1/2 cups chopped frozen broccoli, partially thawed
1 cup julienned carrot
1 cup yellow squash, cut into small bite sized pieces
