Oven-Roasted Vegetables image

This is an excellent side dish to almost any meal. It is healthy, and you can tailor it to fit any vegetables that are in season (grape tomatoes are good, but they do tend to explode, though). I find that this recipe is great for large groups, because, aside from the prep (a bunch of cutting and chopping), it is easy to make a lot of food with minimal effort. Be creative, and enjoy!

2 sweet potatoes, cubed
3 new potatoes, cubed
1 red onion, quartered and pieces separated
2 zucchini, sliced 1-inch thick
2 summer squash, sliced 1-inch thick
1 (8 ounce) bag baby carrots
8 ounces button mushrooms, ends of stems cut off
1 tablespoon fresh thyme, chopped (1 tsp. dried)
2 tablespoons fresh rosemary, chopped (2 tsp. dried)
1 teaspoon dried basil (optional)
3 teaspoons garlic, minced
1/4 cup olive oil
2 tablespoons balsamic vinegar
salt (a shake or two)
black pepper (a shake or two)

Steps:

  • Chop all the vegetables, as specified in the ingredient list.
  • Preheat oven to 450 degrees F.
  • Mix thyme, rosemary, basil (if using), garlic, olive oil, balsamic vinegar, salt, and pepper together in a bowl; set aside.
  • Put the chopped vegetables in a large bowl, then pour the oil/vinegar/herb mixture over the vegetables.
  • Stir until all the vegetables are coated evenly.
  • Line a baking sheet or roasting pan tray with aluminum foil, and lightly spray with cooking spray.
  • Spread the vegetables evenly on the pan and pour the remaining oil/vinegar/herb mixture on top (you can also put additional salt and/or pepper on now, if you want to).
  • Roast for 40 minutes, stirring every 15-20 minutes, or until potatoes are soft when poked with a fork.

1/2 lb (2-1/2 cups) Brussels sprouts (trimmed and halved)
1 medium carrot (peeled and sliced into 1/2" thick rounds)
1 medium sweet potato (peeled and cut into cubes)
1/2 lb (2-1/2 cups) baby potatoes (halved)
4 Tablespoons olive oil (or more as needed)
1 teaspoons sea salt (or to taste)
1/2 teaspoon black pepper (or to taste)
1 teaspoons Italian seasoning
1 teaspoons garlic powder (or 3-4 cloves fresh garlic, minced)
1/4 cup Panko crumbs
1/4 cup finely grated Parmesan cheese
Broccoli, Cauliflower, Rutabaga, Butternut Squash can be be swapped in or added in addition to the other vegetables.

Steps:

  • Preheat oven to 425 F. Lightly grease or line a large rimmed baking sheet (13x18 or a 10x15) with parchment paper, set aside
  • Combine all the ingredients to a large mixing bowl. Toss to coat well.
  • Spread the vegetables evenly in a single layer over a prepared baking sheet, arranging the Brussels sprouts cut-side down. (do not overcrowd - use two baking sheets as needed)
  • Roast in preheated oven for 25 to 35 minutes (stirring half-way through) or until vegetables are tender and lightly browned. If you like them slightly charred, you can leave them in longer.
  • Remove from oven and transfer to serving dish.

1 tablespoon olive oil
1/2 lb sweet potato, peeled & cut in 3/4 inch cubes
1 lb turnip, peeled & cut in 3/4 inch cubes
10 cloves garlic, unpeeled,but cleaned

1/2 lb carrot, peeled cut in 1/2 inch pieces

Steps:

  • Heat oven to 450 degrees F.
  • Heat a large roasting pan in the oven for 15 minutes.
  • Drizzle 1/2 tbsp oil into the pan.
  • Put in all the veggies and toss to mix.
  • Drizzle remaining oil over the veggies.
  • Season with salt& pepper.
  • Cover tightly with foil and roast for 30 minutes remove foil and bake a further 15-20 minutes or until the veggies are cooked but still slightly crisp.

1 medium red onion
2 large parsnips (about 8 ounces)
1 head garlic, cloves separated, and peeled (about 16)
2 tablespoons extra-virgin olive oil, plus more for drizzling
1 1/2 teaspoons kosher salt

Steps:

  • Place 2 baking sheets in the oven and preheat to 425 degrees F.
  • Cut all the vegetables into 1 1/2-inch pieces. Cut the onions through the base core to keep some of the layers in chunky pieces. Toss all the vegetables with garlic, olive oil and salt in large bowl. Season generously with pepper.
  • Carefully remove the heated baking sheets from the oven, brush or drizzle with olive oil. 1 eggplant, peeled and diced
8 carrots, diced
16 cherry tomatoes
2 red onions, sliced
1 red bell pepper, sliced

1 teaspoon dried thyme
2 bay leaves, crushed
1 teaspoon dried oregano

3 large zucchini (about 1 1/4 pounds), cut on diagonal into 1/2-inch-thick slices
3/4 pound asparagus, ends trimmed
2 large red bell peppers, cut into 2-inch wedges
12 large garlic cloves, unpeeled
2 large russet potatoes, peeled, cut lengthwise into 1/2-inch wedges
4 large carrots, peeled, cut on diagonal into 1/2-inch-thick slices
2 large turnips, peeled, cut into 1/2-inch wedges

Steps:

  • Position 1 rack in bottom third and 1 rack in top third of oven and preheat to 450°F.. Whisk oil, vinegar and oregano in small bowl to blend. Season dressing with salt and pepper. Combine zucchini, asparagus, bell peppers and garlic in large bowl. Add 1/4 cup dressing and toss to coat. Arrange on large baking sheet. Sprinkle with salt and pepper.
