1 tablespoon minced fresh tarragon
1 tablespoon olive oil
1-1/2 teaspoons minced chives
1/2 teaspoon grated orange zest

2 salmon fillets (8 ounces each)

Steps:

  • In a large bowl, combine the first eight ingredients. Set aside 2 tablespoons marinade for basting. Pour remaining marinade into a bowl. Add salmon; turn to coat. Cover and refrigerate for 2-3 hours., Drain and discard marinade. Grill, uncovered, over medium heat or broil 6 in. from the heat for 12-15 minutes or until fish flakes easily with a fork. Steps:

  • Whisk together the fresh-squeezed orange juice, olive oil, mustard, ginger, garlic, cayenne pepper, and black pepper in a bowl.

  • Marinate in the refrigerator for 1 hour.

Steps:

  • Glaze: Bring all of the ingredients to a boil in a medium-sized saucepan over medium heat, stirring to melt the preserves and to keep the mixture from burning. Reduce the heat to a simmer and let the glaze reduce until syrupy, about 15 to 20 minutes. Adjust the seasonings with salt and freshly cracked pepper, to taste.
  • Salmon:
  • Heat a grill to medium-high heat.
  • Brush both sides of the fillets with olive oil just before grilling, then season with salt and pepper, to taste. Grill the salmon for about 4 minutes per side, brushing with the glaze during the final few minutes of cooking. Transfer the salmon to serving plates and brush them with the remaining glaze before serving.

1/3 cup orange marmalade
1/2 cup orange juice
1 tablespoon Dijon mustard

  • Rinse salmon fillet under cold water and pat dry with paper towels. Cut into 6 serving portions and place salmon fillets in a large zip-top bag; set aside.
  • In a small bowl stir together remaining ingredients. Pour into zip-top bag. Squeeze air from bag and seal. Marinate in refrigerator for 1 to 2 hours.
  • Remove salmon from refrigerator 30 minutes before cooking, and bring to room temperature.
  • Light broiler and line baking sheet or broiler pan with aluminum foil.

1 russet potato, halved, for rubbing on the grill
One 3-pound boneless salmon fillet, skin on, scales removed (Note: One side of an averagesized salmon is about 3 pounds)
Juice of 1 orange
2 tablespoons olive oil
6 fresh basil leaves
3 or 4 sprigs fresh dill

Fresh Tomato-Orange Chutney
1/2 pint yellow pear tomatoes or cherry tomatoes, cut in half
1/2 pint red grape tomatoes or cherry tomatoes, cut in half
1/4 cup olive oil
2 tablespoons balsamic vinegar
2 large navel oranges
4 scallions, trimmed and minced
2 tablespoons peeled, grated fresh ginger
Grated zest and juice of 1 lemon
1 jalapeño, seeded and minced
1/2 teaspoon mustard seeds
1/2 teaspoon fennel seeds
1 teaspoon cracked mixed peppercorns
5 or 6 fresh basil leaves, cut into very thin strips (chiffonade)
Salt and freshly ground black pepper to taste

Steps:

  • Brush the grill grates lightly with the safflower oil. Prepare a very hot fire in a gas or charcoal grill.The fire should be bright red and flaming hot. Rub the grates with the cut side of the russet potato (the starch from the potato keeps the fish from sticking). (Note:You can use a stove top grill pan instead of an outdoor grill, if desired, although the flavor will not be quite the same.)
  • Place the salmon on a piece of heavy-duty aluminum foil, skin side down. Drizzle the orange juice over the flesh side of the salmon. Coat evenly with the olive oil, basil, dill, salt, and pepper. Lightly press the herb leaves into the flesh so they adhere.
  • Place the salmon flesh side down (skin side up) on the grill (reserve the foil) and cook 6 to 8 minutes.
  • Turn the salmon over and place it skin side down on the foil. Pour the remaining orange juice over the salmon. Put the salmon in the foil on the grates over the fire and cook uncovered 8 to 10 minutes longer, until the fish starts to flake but is still a little fleshy in the center. (Note:The fish will continue to cook as it rests.) Remove from the grill and let rest, loosely covered, for 3 to 4 minutes.
  • Remove the skin and discard. Transfer the fish to a platter or serve portions on individual plates. Serve immediately, topped with chutney and fresh herb leaves.
  • Fresh Tomato-Orange Chutney
  • Preheat the oven to 400 degrees.
  • Toss the yellow pear tomatoes and red grape tomatoes with 2 tablespoons of the olive oil and the vinegar to coat evenly. Spread in a single layer on a baking pan and place in the oven to roast about 30minutes. Remove from the oven and set aside.
  • Grate the zest from the oranges and place the zest in a bowl. Trim the peel and the white pith from the oranges and discard. Cut the oranges into sections and add them to the bowl with the zest.
  • Add the tomatoes, scallions, ginger, and the remaining olive oil, the lemon zest, lemon juice, jalapeño, mustard seeds, fennel seeds, peppercorns, basil, salt, and pepper in a bowl and stir to mix thoroughly. Refrigerate in an airtight container until ready to use or up to 3 days.

Salmon is my version of fast food. It's already so wonderfully flavorful on its own that I don't have to put much effort into it. A brush of oil and a sprinkle of salt and pepper, plus a few minutes in a hot oven or skillet and dinner is ready. In this recipe I whisk together marmalade, soy sauce and some freshly grated ginger, then I add a squeeze of fresh orange juice, pour it over the salmon, and then into the oven it goes. The result is sticky, sweet, tangy and oh so flavorful!

2 salmon fillets (about 8 to 10 ounces each)
Kosher salt and freshly ground black pepper
1/3 cup orange marmalade
1-inch piece fresh ginger, grated (see Cook's Note)
3 tablespoons soy sauce

Juice of 1 orange (about 1/3 cup)

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet or baking pan with foil. Sprinkle the salmon generously with salt and pepper and place on the foil.
  • Whisk the marmalade, ginger, soy sauce, oil and orange juice together in a small bowl. Pour over the salmon. Drop the peel form the orange onto the baking sheet along with the salmon. 1 tablespoon fresh orange juice
1 teaspoon fresh lemon juice, or to taste

eight 1/4-pound pieces of skinned salmon fillet
32 radicchio leaves (about 3 or 4 heads)

Steps:

  • Make the salsa:
  • In a bowl stir together the fennel bulb and leaves, the diced orange, the olives, the capers, the juices, and salt and pepper to taste.
  • In a small bowl stir together the oil, the lemon juice, and salt and pepper to taste. Put the salmon on a large platter, pour the oil mixture over it, and let the salmon marinate, turning it once, for 10 minutes.
  • Grill the salmon, skinned sides down, on an oiled rack set 5 to 6 inches over glowing coals or in a hot well-seasoned ridged grill pan over moderately high heat for 5 minutes, turn it, and grill it for 3 minutes more, or until it is just cooked through.
