Steps:
- Heat the oven to 200C/180C fan/gas 6. Peel the potatoes and cut them into long chip shapes - the thickness is entirely up to you, though the width of a finger is ideal. Rinse under the cold tap and pat dry with a tea towel.
- Spread the chips on a large non-stick baking tray and toss with the olive oil and celery salt. Lie them flat in a single layer - use two trays rather than overcrowd one.
- Roast for 45-50 mins, turning now and then. When cooked they should be golden brown and crisp with a light fluffy centre. Scatter on sea salt to serve.

I OFTEN MAKE this easy potato dish when I invite someone over for lunch. It's a nice accompaniment to salads or sandwiches. OVEN POTATOES
These are a big favorite in our house. It is a healthy alternative to frying the potatoes. The outside of the potato gets crisp and the inside gets soft. I have used several different types of potatoes and have had great results with all of them although the cooking time will need to be varied with the creamer types.

Steps:
- Trim all the rounded edges off the potatoes to make a rectangular block, then cut this into thick batons (save any offcuts to make mash). Drop into a pan of cold salted water with the vinegar and bring to the boil. Simmer for 6-8 mins until the potatoes are just cooked and tender - test with the tip of a knife. Drain carefully, trying not to break any of the chips, and leave to cool completely. Can be prepared up to two days ahead and chilled until needed.
- Heat the oven to 220C/200C fan/gas 9. Pour the oil into a sturdy, rimmed baking tray or shallow roasting tin and heat in the oven. Mix the flours with the baking powder, cayenne and some salt in a shallow dish and gently toss the chips in the floury mixture to coat, then leave in the mixture until needed.
- Carefully remove the pan from the oven - the oil should be shimmering - and lay the chips in a single layer in the pan. Use a thin, flexible spatula to gently turn the chips so they are all coated, then roast for 20 mins. Turn the chips again, then roast for another 10 minutes. Turn one final time, then cook for a futher 10 minutes until crisp and deep golden all over. Drain the chips onto kitchen paper and serve straight away.

OVEN CHIPPED POTATOES
Posted for Zaar 2005 World Tour. This comes from a cookbook of countries along the Danube. The recipe is from Germany. I have not tried this recipe yet. Update: Just tried this the other night. The potatoes have a really nice texture! I could see adding garlic or more onion if you want. I recommend sprinkling the salt more evenly over the potatoes instead of combining it with the butter, but otherwise it's very tasty!

- Preheat oven to highest temperature, generally 240 degrees Celsius.
- Lightly oil a large shallow roasting tin and place it in the oven to get really hot while you prepare the potatoes.
- Cut the potatoes in half lengthwise, then into long thin wedges, or thicker ones if you prefer.
- Brush each side lightly with oil (or just pop them into a large bowl, pour some oil over and mix them around a few times to coat them).
- When the oven is really hot, remove the pan carefully and scatter the potato wedges over it, spreading them out in a single layer over the hot oil.
- Sprinkle the potato wedges with the herbs and salt and roast for about 20 minutes, or longer if they are thicker.
- They will be ready when they are golden brown, crisp and lightly puffy.
- Remove from oven and serve with a dollop of mayonnaise.

- Baked potato. I thought it was impossible to improve on a simple baked potato. I was wrong. Steam the spud for 20 minutes to infuse with moisture, then bake for 40 minutes in a hot oven to get the perfect combo of fluffy inside and extra crisp outside.
- Classic potato salad. Picnics and barbecues would not be the same without a bowl of creamy potato salad on the side. This classic recipe pairs boiled new potatoes with shallots, capers and cornichons for a tangy kick.
- Fondant potatoes. These potatoes may sound fancy but there's no need to whip out your chef whites quite yet! Recreate this traditional French dish with crisp, crunchy edges and a soft, silky middle for an elegant dinner party side or Sunday lunch accompaniment.
- Mashed potato. I’m not going to lie, I have found it hard to do full justice to this most magnificent of side dishes. However, everything improved once I got my head around this hack: after you’ve boiled the potatoes, drain them, return to the pan and cover with a cloth for 10 minutes.
- Rösti. Easier than you think. Grate a potato, squeeze out all the moisture, add rosemary, salt and pepper, then oven bake. Once you’ve flipped it, top with grated Gruyère or a fried egg.
- Crisp sandwich. As if crisps aren’t wonderful enough, it turns out they’re even better between bread. We've seen this trend emerging across the UK restaurant and café scene so it seems only right to replicate it in the comfort of a home kitchen.
- Boiled, squashed and then roasted. My favourite new method, this is a real game changer: Boil small potatoes in their skins, then drain and cover with a cloth for a few minutes.
- Dauphinoise potatoes. We’ve arrived at nirvana – layered potato slices with lots of cream, garlic and melted Gruyère – to be served on feast days on my desert island.
- Oven chips. Some foods are at their peak only when cooked brilliantly using the most expensive ingredients. The potato is not in this category. You can achieve perfectly crispy, golden chips using a home oven, which also takes away the effort of frying.
