OVEN-ROASTED CHIPS

Oven-roasted chips image

Try these oven-roasted chips, far less fatty than their fried cousins

Provided by Jo Pratt

Categories     Dinner, Lunch, Supper, Vegetable

Time 1h

Number Of Ingredients 4

6 large floury potatoes, such as Maris Piper, King Edward, Desirée (about 1.6kg)
2 tbsp olive oil
1 tsp celery salt
sea salt, to serve

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Peel the potatoes and cut them into long chip shapes - the thickness is entirely up to you, though the width of a finger is ideal. Rinse under the cold tap and pat dry with a tea towel.
  • Spread the chips on a large non-stick baking tray and toss with the olive oil and celery salt. Lie them flat in a single layer - use two trays rather than overcrowd one.
  • Roast for 45-50 mins, turning now and then. When cooked they should be golden brown and crisp with a light fluffy centre. Scatter on sea salt to serve.

OVEN POTATOES

Oven Potatoes image

These are a big favorite in our house. It is a healthy alternative to frying the potatoes. The outside of the potato gets crisp and the inside gets soft. I have used several different types of potatoes and have had great results with all of them although the cooking time will need to be varied with the creamer types.

BEST EVER OVEN CHIPS

Best ever oven chips image

Make your own crispy, golden oven chips and save yourself some money. They're also much easier to cook than their fried counterparts

Provided by Barney Desmazery

Categories     Side dish, Snack, Supper

Time 1h

Number Of Ingredients 7

1kg large Maris Piper potatoes , peeled
1 tbsp white or malt vinegar
75ml vegetable oil
2 tsp plain flour
2 tsp cornflour or potato flour
½ tsp baking powder
small pinch cayenne

Steps:

  • Trim all the rounded edges off the potatoes to make a rectangular block, then cut this into thick batons (save any offcuts to make mash). Drop into a pan of cold salted water with the vinegar and bring to the boil. Simmer for 6-8 mins until the potatoes are just cooked and tender - test with the tip of a knife. Drain carefully, trying not to break any of the chips, and leave to cool completely. Can be prepared up to two days ahead and chilled until needed.
  • Heat the oven to 220C/200C fan/gas 9. Pour the oil into a sturdy, rimmed baking tray or shallow roasting tin and heat in the oven. Mix the flours with the baking powder, cayenne and some salt in a shallow dish and gently toss the chips in the floury mixture to coat, then leave in the mixture until needed.
  • Carefully remove the pan from the oven - the oil should be shimmering - and lay the chips in a single layer in the pan. Use a thin, flexible spatula to gently turn the chips so they are all coated, then roast for 20 mins. Turn the chips again, then roast for another 10 minutes. Turn one final time, then cook for a futher 10 minutes until crisp and deep golden all over. Drain the chips onto kitchen paper and serve straight away.

HOMEMADE OVEN CHIPS

Homemade Oven Chips image

Learn the secret to making beautifully crispy chips in the oven! No need to par-boil the potatoes, and even peeling those spuds is optional!

Provided by Nicky Corbishley

Categories     side dish

Time 30m

Number Of Ingredients 6

4 tbsp olive oil ((or other neutral tasting oil - such as sunflower or vegetable))
700 g (1 1/2 lbs) of floury potatoes
1 tbsp cornflour (cornstarch)
1 tsp salt
½ tsp black pepper
½ tsp paprika

Steps:

  • Preheat the oven into 200C/400F

  • Cut the potatoes into 1 cm (about 3/8 of an inch) thick slices (no need to peel).
  • Sprinkle the sliced potatoes with the 1tbsp of cornflour and transfer to the oiled baking tray.
  • Sprinkle with the 1tsp salt, 1/2 tsp pepper and 1/2 tsp paprika, then drizzle on the rest of the oil (3 tbsp).
  • Toss everything together with your hands so the fries are fully coated in the oil and arrange the chips in a single layer. Try to ensure they're not touching too much.
  • Cover the tray in a piece of foil that's been greased with a little vegetable oil.
  • Place in the oven for 10 minutes, then remove the foil and cook for a further 10 minutes.
  • Turn the fries over using a spatula and cook for a final 5-10 minutes until golden brown and crisp.
  • Transfer to a serving dish and serve.

This easy alternative to deep fried chips tastes just as good and is easier to cook. You can substitute any seasonings you like for the herbs and sea salt. Adapted from Alex Barker's cookbook "Potato - a celebration of the world's most versatile vegetable".

Provided by NotQuiteVegetarian

Categories     Potato

Time 30m

Yield 4-6 serving(s)

Number Of Ingredients 5

150 ml olive oil
4 potatoes, medium to large
5 ml dried herbs
flaked sea salt
mayonnaise, to serve

  • Brush each side lightly with oil (or just pop them into a large bowl, pour some oil over and mix them around a few times to coat them).
  • When the oven is really hot, remove the pan carefully and scatter the potato wedges over it, spreading them out in a single layer over the hot oil.
  • Sprinkle the potato wedges with the herbs and salt and roast for about 20 minutes, or longer if they are thicker.

  • Remove from oven and serve with a dollop of mayonnaise.

TOP 10 POTATO RECIPES | BBC GOOD FOOD

  • Baked potato. I thought it was impossible to improve on a simple baked potato. I was wrong. Steam the spud for 20 minutes to infuse with moisture, then bake for 40 minutes in a hot oven to get the perfect combo of fluffy inside and extra crisp outside.
  • Classic potato salad. Picnics and barbecues would not be the same without a bowl of creamy potato salad on the side. This classic recipe pairs boiled new potatoes with shallots, capers and cornichons for a tangy kick.
  • Fondant potatoes. These potatoes may sound fancy but there's no need to whip out your chef whites quite yet! Recreate this traditional French dish with crisp, crunchy edges and a soft, silky middle for an elegant dinner party side or Sunday lunch accompaniment.
  • Mashed potato. I’m not going to lie, I have found it hard to do full justice to this most magnificent of side dishes. However, everything improved once I got my head around this hack: after you’ve boiled the potatoes, drain them, return to the pan and cover with a cloth for 10 minutes.
  • Rösti. Easier than you think. Grate a potato, squeeze out all the moisture, add rosemary, salt and pepper, then oven bake. Once you’ve flipped it, top with grated Gruyère or a fried egg.
  • Crisp sandwich. As if crisps aren’t wonderful enough, it turns out they’re even better between bread. We've seen this trend emerging across the UK restaurant and café scene so it seems only right to replicate it in the comfort of a home kitchen.
  • Boiled, squashed and then roasted. My favourite new method, this is a real game changer: Boil small potatoes in their skins, then drain and cover with a cloth for a few minutes.
  • Dauphinoise potatoes. We’ve arrived at nirvana – layered potato slices with lots of cream, garlic and melted Gruyère – to be served on feast days on my desert island.
  • Oven chips. Some foods are at their peak only when cooked brilliantly using the most expensive ingredients. The potato is not in this category. You can achieve perfectly crispy, golden chips using a home oven, which also takes away the effort of frying.
