- Cut jalapenos in half lengthwise and remove seeds. Place jalapenos on an ungreased baking sheet. Broil 4-in. from the heat for 4-6 minutes on each side or until lightly blistered. Cool slightly., In a small bowl, beat cream cheese and cheddar cheese until blended. Stir in onions. Spoon into pepper halves., Place the flour, egg whites and bread crumbs in separate shallow bowls. Coat jalapenos with flour, then dip in egg whites and coat with crumbs. Place on a greased baking sheet; sprinkle with salt and pepper. Bake at 350° for 18-20 minutes or until lightly browned. , For dip, combine all ingredients in a small bowl. Serve with poppers.

CHIPOTLE DRY-RUB SHRIMP WITH CILANTRO DIPPING SAUCE
My mom clipped this recipe from a June 2000 edition of the Houston Chronicle. It's originally from a cookbook called "Off the Eaten Path: Inspired Recipes for Adventurous Cooks". This is a great, zesty grilled shrimp dish!

Steps:
- Shell and devein the shrimp. Pat dry.
- In a medium bowl, mix the oregano, thyme, lemon-pepper, ground chipotle, salt and pepper. Add shrimp and toss thoroughly.
- Put the cilantro and lime juice in a blender and blend until cilantro is liquified. Pour into a small bowl and stir in sour cream. Refrigerate until the shrimp is cooked.
- Skewer the shrimp or place in a grill basket. Cook on a hot grill about 2 minutes per side, until shrimp are no longer translucent. Brush both sides lightly with oil while cooking.
- Serve hot or at room temperature with the dipping sauce.

STEAMED ARTICHOKE WITH CILANTRO LIME DIPPING SAUCE

Steps:
- Wash artichoke thoroughly (make sure to get under the leaves). Turn it upside and give a good shake and dry with a towel.
- Using a large knife cut off the top 3/4 inch of the tip of the artichoke. Using a pair of kitchen scissors cut off the remainder of the tips of the leaves. Cut the stem off, flush with the base.
- Put about 2 inches water in a pot with a steaming basket. Place artichokes face down in pot, cover and bring to a boil. Reduce to a simmer for about 30 to 45 minutes or until the outer leaves are easily removed and soft.
- For dipping sauce, in a high speed blender, combine cilantro, parsley, juice, zest of limes, garlic, honey, and sea salt. Reduce blender to low and drizzle in olive oil until well combined. Add more sea salt to bring out the flavors.
