TRADITIONAL RICE STUFFING

My mother passed this recipe on to her daughters as it was passed on to her from her mother. It is a delicious alternative to traditional bread stuffing, and my family always requests it when a chicken or turkey is on the menu. It will be a stunning addition to your Sunday night dinner table. As with any good recipe, adjust the seasonings to your taste. This recipe quantity is for an approximately 5-pound chicken.

2 tablespoons butter
1 onion, finely chopped
3 cups water
2 teaspoons dried dill weed, or to taste
2 teaspoons poultry seasoning, or to taste
1 tablespoon dried parsley
ground black pepper to taste
2 tablespoons chicken bouillon, or more to taste
1 ½ cups long grain white rice

Steps:

  • Heat butter in a large saucepan over medium heat. Stir in onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Add water, dill weed, poultry seasoning, parsley, ground black pepper, chicken bouillon, and rice; bring to a boil. Reduce heat to medium-low, cover, and simmer until water is absorbed and rice is just slightly undercooked, 12 to 14 minutes. Stir, taste, and adjust seasonings if desired. Cool completely before using to stuff a chicken.

8 ounces applewood-smoked bacon, chopped into 1/2-inch pieces
4 1/2 cups low-salt chicken broth
3 tablespoons chopped fresh thyme
1 1/4 cups short-grain brown rice
1 1/4 cups wild rice
2 tablespoons unsalted butter, at room temperature
2 tablespoons extra-virgin olive oil
One 14-ounce bag frozen pearl onions, thawed
1 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
12 ounces (3 large) portobello mushrooms, shredded or thinly sliced
8 ounces Brussels sprouts, trimmed and thinly sliced
1/2 cup hazelnuts, toasted, husked, coarsely chopped, optional

Steps:

  • Cook the bacon in a large skillet over medium heat until crisp, 8 to 10 minutes. Using a slotted spoon, drain the bacon on paper towels.
  • For the rice: In a heavy saucepan or Dutch oven, bring the broth and thyme to a boil over medium-high heat. Add the brown and wild rice. Cover the saucepan and simmer until the rice is tender but still chewy, 30 minutes. Turn off the heat and allow the rice to stand for 10 minutes. Fluff with a fork.
  • For the vegetables: In the same skillet used to cook the bacon, heat the butter and oil over medium-high heat. Add the onions and season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook, stirring occasionally until light golden, about 5 minutes. Add the mushrooms, 1/4 teaspoon salt and 1/4 teaspoon pepper. Cook until softened, about 8 minutes. Add the Brussels sprouts and the remaining 1/4 teaspoon salt and 1/4 teaspoon pepper. Cook for 5 minutes.
  • Transfer the vegetable mixture to the saucepan of cooked rice. Add the hazelnuts and cooked bacon. Toss until all the ingredients are mixed. Transfer to a large bowl and serve.

BACON-RICE STUFFING

  • Combine 8 cups cooked brown rice, 1 pound chopped cooked bacon, 1 1/2 pounds chopped roasted parsnips, 1 cup chopped chestnuts and 1/2 cup chopped parsley. Bake as directed for Herbed Rice Stuffing.
  • Herbed Rice Stuffing: Brown 2 cups each chopped onions and celery in 6 tablespoons butter. Toss with 8 cups al dente cooked white rice, 1/4 cup each chopped parsley and chives, and
  • 1 tablespoon chopped thyme; add salt and pepper. Transfer to a buttered baking dish, drizzle with 1/4 cup chicken or turkey broth and dot with butter. Cover and bake at 375 degrees F, 50 minutes.

If you are looking for a decadent stuffing, this is it. Tender rice is mixed with smoky bacon, wine, butter, onion, and celery and is used to stuff a turkey before roasting.

4 cups cooked long grain rice, cooled completely
2 cups thinly sliced celery
1/4 cup chopped fresh parsley
1/3 cup melted butter
1/4 cup white wine or chicken broth
1 medium onion, chopped
1 pound crisply cooked bacon, coarsely chopped
1/4 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Combine the cooked rice, celery, parsley, melted butter, wine, onion, bacon, salt, and pepper in a bowl. Mix well. Eight cups of the rice stuffing will stuff a 12-14 pound turkey. cook's notes Wild rice or brown rice can be used in place of the white rice.

This is one of my favorite recipes for stuffing. It's especially good served with Cornish Game Hens. I've made this stuffing for years but I don't remember where the recipe came from. There's no name on my recipe card! The recipe calls for white rice but I'm sure there's no reason you couldn't use wild rice or brown rice if you want to.

2 1/2 cups water
1 tablespoon butter or 1 tablespoon margarine
1 cup white rice, uncooked
6 slices bacon
3 slices bread
1 cup chopped onion
1/2 teaspoon salt
1/4 teaspoon marjoram
1/4 teaspoon sage
1/4 teaspoon thyme
1/4 teaspoon tarragon
1/4 teaspoon pepper

Steps:

  • Bring water and butter to a boil.
  • Add rice, cover, and cook for 20- 25 minutes or until rice is cooked.
  • Remove from heat.
  • While rice is cooking, saute bacon until crisp and reserve 2 T bacon drippings.
  • Crumble bacon into pieces.
  • Saute onion in bacon drippings until tender.
  • Add cooked rice.
  • Tear bread into small pieces and add remaining ingredients.
  • Combine with rice and bacon.
  • If dressing seems too dry, water, chicken broth, or melted butter can be added.
  • Pour stuffing into a greased casserole dish.
  • Bake, covered, at 350 degrees for 45 minutes.
  • Remove baking cover and continue baking for 15 minutes longer.

1 loaf bread, sliced (dried overnight on a rack)
4 slices bacon, finely chopped
1 onion, finely chopped
1 stalk celery, finely chopped
1 tablespoon butter
2 eggs, lightly beaten
1 tablespoon fresh herb, finely chopped (parsley, sage, thyme)
1 1/2 cups chicken broth (low-sodium)

Steps:

  • Preheat oven to 400°F.
  • Break dry bread inot bite-size pieces and place in a large bowl.
  • Fry bacon on medium-high heat until crisp; add onion, celery, and butter. Sauté for 5 minutes. Set aside.
  • Add egg, herbs, chicken stock and slightly cooled bacon/vegetable mixture to the bread. Mix well.
  • Spoon stuffing into a lightly greased 9x5 loaf pan and bake at 400F for 45 minutes.
  • Remove pan from the oven, invert onto a serving plate, slice and serve.

WILD RICE AND SAUSAGE STUFFING

A picture of this dish should be in the dictionary under "savory". Made this a few times, years ago, to rave reviews and have been looking for the recipe ever since. Found it. I recommend baking it separately in a casserole and don't wait for a holiday. This is good anytime. If you prefer, leave out the bacon and sausage, it's still great. Cooking wild rice is not included in prep or cook times.

3 cups cooked wild rice
8 ounces mild sausage
4 slices bacon, cut into 1 ",pieces
1 1/2 cups onions, chopped
8 ounces mushrooms, sliced
1 cup celery, chopped
1 teaspoon crushed leaf oregano
1/2 teaspoon crushed sage leaf
2 cups breadcrumbs
salt and pepper

Steps:

  • Crumble and cook the sausage, drain and set aside.
  • Wipe out skillet and add bacon, onion, mushrooms and celery; saute until bacon is crisp and vegetables are slightly softened.
  • Add this to the wild rice, along with the oregano, sage and bread crumbs; add cooked sausage; add salt and pepper to taste.
  • Bake, covered, in an oiled casserole at 350° for 30-40 minutes; add 1/4 to 1/2 cup stock, if needed, for moisture.
