SPLIT PEA WITH HAM SOUP

Steps:
- Combine the peas, hocks, carrots, celery and onions in a large soup pot or Dutch oven. Tie the parsley, thyme and bay leaf together with kitchen string. Add the herb bundle, stock and 1 teaspoon salt. Bring to a boil over high heat. Lower the heat to a simmer; cover and cook until the peas are tender, 50 minutes to 1 hour.
- Remove the pot from the heat, and remove the hocks to a bowl to cool. Remove the meat from the hocks, discarding the bones, fat and skin. Cut the meat into cubes. Remove the herb bundle from the soup and discard.
- Puree the soup with an immersion blender or in batches in a blender to desired consistency. Heat the soup to a simmer with the meat and season with salt and pepper. Serve in heated bowls. Serve with the Simple Salad.
- Although the salad is prewashed, still give it a soak in a big bowl of cold water for about 5 minutes. Lift the salad out of the water, so any grit is left in the bowl. Put it in a salad spinner; don't pack it in or the greens will get bruised. Spin dry. If you don't have a spinner, lay on a clean towel and gently pat dry.
- Put the greens in a big bowl. Drizzle 3 tablespoons (a regular soup spoon is fine ¿ you don't need the measuring type) of olive oil over the greens. Drizzle with 1 tablespoon vinegar. Sprinkle with salt and pepper. Using tongs or 2 forks, toss just enough so that all the greens are lightly dressed. Transfer to 4 salad plates and serve immediately.
OLD-FASHIONED SPLIT PEA SOUP WITH HAM BONE

- Sort peas and rinse with cold water. Place peas in a Dutch oven; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 to 4 hours or until peas are softened. Drain and rinse peas, discarding liquid., Return peas to Dutch oven. Add 2-1/2 qts. water, ham bone, onion, salt, pepper, thyme and bay leaf. Bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours, stirring occasionally., Remove the ham bone; when cool enough to handle, remove meat from bone. Discard bone; dice meat and return to soup. Add carrot and celery. Simmer, uncovered, for 45-60 minutes or until soup reaches desired thickness and vegetables are tender. Discard bay leaf.

CURRY SPLIT PEA SOUP
We set out to make some split pea soup and thought the flavor would be improved by adding some curry to it. It's wonderful on its own or over rice.

- In a large soup pot over medium heat, heat the olive oil, and stir in the lemon juice, garlic, carrots, onions, and celery. Cook and stir until the carrots become soft enough to break apart with a fork, about 20 minutes. Transfer the vegetables and their juices into a bowl, and refrigerate. Once slightly cool, place them into a blender, and blend until the mixture forms a smooth puree.
- Pour the water into the soup pot, and stir in the chicken bouillon cubes until they dissolve. Pour in the vegetable puree, and bring the mixture to a boil over medium heat. Stir in split peas, Italian seasoning, cumin, salt, black pepper, cayenne pepper, and curry powder. Reduce heat to medium-low, and cook until the peas soften and break down into a thick soup, at least 45 minutes.

Steps:
- In a large stock pot, cover peas with 2 quarts cold water and soak overnight. If you need a faster method, simmer the peas gently for 2 minutes, and then soak for l hour.
- Once peas are soaked, add ham bone, onion, salt, pepper and marjoram. Cover, bring to boil and then simmer for 1 1/2 hours, stirring occasionally.
- Remove bone; cut off meat, dice and return meat to soup. Add celery, carrots and potatoes. Cook slowly, uncovered for 30 to 40 minutes, or until vegetables are tender.

- Rinse and drain split peas and lentils.
- In a Dutch oven, combine peas, lentils, broth, carrot, celery, red pepper, onion, bay leaf, cumin, and pepper.
- Bake uncovered, in a 350 degree oven, about 2 hours or until lentils and split peas are tender.
- Check seasoning and add salt& pepper if necessary Remove bay leaf.

- rinse the split peas in cold water, then place in a large kettle with all the remaining ingredients except the sausage and bitters,.
- bake, covered for 2 hours.
- remove from oven and cool.
- discard bay leaf and puree the soup in food processor, working in batches, until smooth.
- return to kettle.

SPLIT PEA SOUP
This classic yellow split pea soup has some versatility when it comes to one of the main ingredients: the ham.

- In a large Dutch oven, melt the butter over medium heat; add the carrots, celery, onion and garlic, stirring occasionally, until the mixture has softened and golden, around 15 minutes.
- Add the yellow split peas, bay leaves and thyme. Season with salt and pepper, cooking for about 2 minutes to impart flavours into the peas.
- If using a ham bone, trim off any excess fat.
- Add in the ham and chicken stock, then bring up to a boil. Cover and let simmer and medium-low, stirring occasionally, until the soup has thickened, 1.5 to 2 hours.
- Remove bay leaves. If using ham bone or hock, remove and let cool enough to handle to remove the meat, cut it into bite-sized pieces and put it back into the soup.
- Serve with fresh bread rolls.

- Sauté onion, celery, and carrot in butter for the soup in a large pot, covered, over medium high heat for 3-4 minutes, or until vegetables are soft.
- Deglaze with sherry; reduce until nearly evaporated. Add broth, water, split peas, bacon and seasonings.
- Bring to a boil, and simmer partially covered, 50-60 minutes or until pear are tender.
- Remove bacon and bay leaf.
- Puree 2 cups of soup in a blender; return the pureed mixture to the pot.
- Stir in frozen peas, ham, parsley, butter (if using), salt and pepper.
- Combine sour cream, zest, and mint for the cream in a bow. Garnish soup with a dollop of the cream and sprig of mint if desired.

DUTCH SPLIT PEA SOUP
Keep this on hand when you go out jogging or exorcising. Makes a great rib-sticking soup. I sometimes vary the meat ingredients- in the pic posted, I used little smokies and a ham hock, same amounts.

- Wash and sort peas.
- Combine peas, water, salt, pepper, bay leaf and thyme in a large pot or Dutch oven.
- Press cloves into onion, and add to pot (if using a ham hock you may wish to add it now so it becomes more tender- but NOT the smoked sausage, as they split if overcooked).
- Bring mixture to a boil, then lower heat, cover, and simmer, stirring occasionally, until peas are tender, about 1 hour.
- Remove the onion and bay leaf.
- Puree soup through a coarse sieve or in batches in the blender (be careful not to burn yourself!); return mixture to the pot.
- (I like to leave a little bit not pureed for texture).
- Add potatoes, ham, sausage.
- leek and celery.
- Simmer uncovered about 25-35 minutes, or until potatoes are tender.
- Taste for seasoning and garnish soup with chopped parsley before serving.
CREAMY SPLIT PEA SOUP
This is a wonderful soup for a cold winter's night. My kids love it and ask for it all the time! Its great with fresh out-of-the-oven wheat bread. I often serve it with a dollop of cottage cheese (cools it down for the kids and adds protien). Enjoy!
