OUTBACK'S AUSSIE CHEESE FRIES RECIPE COPYCAT

Steps:
- In a small bowl combine salt, pepper, garlic powder, and onion salt. Mix well and set aside.
- Cut and peel potatoes into fries size. Submerge fries in water for 30 minutes. Remove the potatoes from the water, pat them dry. Add fries to preheated oil and deep fry until golden brown. Drain on a paper towel. OR - Make the frozen, unseasoned, fries as directed.
- Preheat oven to 400.
- Once fries are done, spread them out on a baking sheet and sprinkle with the seasoning you had set aside earlier.
- Sprinkle with both monterey jack cheese and cheddar cheese.
- Add the cooked and crumbled bacon on top of the fries and cheese.
- Bake for 5 minutes, or until cheese has melted.
- Serve with Blue Cheese or Ranch dressing.

Blot dry. 5 Fry potato slices for 8 to 12 minutes in hot oil until light brown. Drain fries on a rack or paper towels and sprinkle with some of the seasoning. Pile the fries on a plate and serve with ranch dressing on the side, if desired. 6 For the Aussie Cheese Fries: Prepare the clone for the Aussie Chips and arrange the seasoned fries on an oven-safe plate. Preheat oven to 400 degrees. 7 Mix the cheeses together and sprinkle the blend over the fries. Crumble the bacon and sprinkle it over the cheese. - Divide the bag of fries in half and use the other half later.
- Heat oil to 350 degrees. If you do not have a thermometer, make sure the oil is hot enough so that when you set a French fry in the oil, it will cook immediately. If the French fry sinks to the bottom and barely bubbles, it is not hot enough.
- Fry the potatoes in small batches. They are done when they are golden brown and float to the top. (I like to use a Dutch oven). Be sure to drain the potatoes on paper towels. You can keep them warm in the oven while the other fries cooking.
- When all French fries are cooked and drained, place them on a platter.
- Salt the French fries if you like and sprinkle on cheese and cooked bacon.
- Pop these back into a warm oven until the cheese begins to melt.

- Have your GH (Grown Helper) put fries in oven on a cookie sheet. While fries are baking in the oven, have a GH place a sauce pot on the stove and heat it over medium heat. Add butter and melt it. Add the flour and stir. Cook butter and flour together for 1 minute or so. This is called "roux" (like Tiger and Roo with Pooh Bear) and it helps to thicken up sauces. Use a whisk to stir as the milk goes into the pot. Keep stirring until the milk gets thicker. Use a wooden spoon or heat-safe spatula to stir in the cheese. When all of the cheese melts, take the sauce off the heat and stir in 3 squirts of ketchup. This is your SECRET ingredient. When everyone asks what you put in your cheese sauce that makes it taste so good, just say milk and cheese, you can NEVER tell what secret ingredients you add! Tell your GH to keep the secret, too or they can never help you again!
- Pour the sauce over the fries or serve the sauce on the side if you like to dipping better.
