Steps:
- In large mixing bowl, combine chicken, grapes, onions, cranberries, and apple.
- In smaller bowl, whisk together mayonnaise, vinegar, thyme, and black pepper. Pour over chicken mixture. Toss to coat. Refrigerate until ready to serve.
- For a salad, divide two cups of salad greens onto two plates. Divide chicken salad mixture. Top each plate with 1 Tablespoon sliced almonds.
- Also good as a sandwich filling.

- Grill chicken on an indoor grill coated with cooking spray for 5-7 minutes or until a thermometer reads 179°. - • Adjust rack to middle position and preheat oven to 425 degrees. Wash and dry produce. • Dice sweet potato into ½-inch pieces. (TIP: Feel free to peel first if you like.) Toss on a baking sheet with a large drizzle of olive oil, 1 tsp BBQ Seasoning (2 tsp for 4 servings), and a pinch of salt and pepper. (You'll use the rest of the BBQ Seasoning later.) • Roast on middle rack, tossing halfway through, until tender and lightly browned, 20-25 minutes. Let cool at least 5 minutes after removing from oven.
- • While sweet potato roasts, halve and core apple; quarter halves lengthwise, then thinly slice crosswise into triangles. • Place pecans in a medium, preferably nonstick, pan over medium heat. Toast, shaking pan frequently, until fragrant, 2-3 minutes. • Turn off heat; remove pecans from pan.
- • Pat chicken* dry with paper towels; season all over with remaining BBQ Seasoning, salt, and pepper. • Heat a drizzle of oil in pan used for pecans over medium heat. Add chicken and cook until browned and cooked through, 4-6 minutes per side. • Turn off heat; transfer to a cutting board.
- • In a large bowl, toss mixed greens, apple, and roasted sweet potato with Honey Dijon Dressing to taste. Season with salt and pepper. • Slice chicken crosswise. • Divide salad between bowls and top with sliced chicken. Garnish with toasted pecans and serve.

- To a bowl, add the chicken add chopped apples, celery, red grapes and mayonnaise. Fold in until ingredients are thoroughly combined. Add desired amount of salt and pepper. Store airtight and place salad in the refrigerator until chilled and ready to serve.
- To serve, stir salad thoroughly and and fold in slice almonds. Place measured dollops in the center of lettuce cups or on croissants. Makes 6-8 sandwiches or salads.

COPYCAT SUBWAY® ORCHARD CHICKEN SALAD SUB
I found this recipe when I was looking for this recipe or one close to it. I tried this at Subway and really liked it. Subway always uses light Mayo. In this recipe the salt and pepper are optional. Use more or less mayo to suit your own taste and the same with the fruits. I like to add a few more fruits. There is no cook time unless you are cooking your chicken for this recipe. I use left over or canned.
