2 cup chicken (cooked and cubed)
1/2 cup red grapes (cut in half)
2 green onion (chopped)
1/4 cup dried cranberries (use unsweetened for whole 30)
1 apple (for 1 cup diced)
1/2 cup mayonnaise
2 tsp apple cider vinegar
1/4 tsp dried thyme
1/8 tsp black pepper

Steps:

  • In large mixing bowl, combine chicken, grapes, onions, cranberries, and apple.
  • In smaller bowl, whisk together mayonnaise, vinegar, thyme, and black pepper. Pour over chicken mixture. Toss to coat. Refrigerate until ready to serve.
  • For a salad, divide two cups of salad greens onto two plates. Divide chicken salad mixture. Top each plate with 1 Tablespoon sliced almonds.
  • Also good as a sandwich filling.

4 boneless skinless chicken breast halves (5 ounces each)
6 tablespoons thawed apple juice concentrate
1/4 cup canola oil
2 tablespoons vanilla yogurt
8 cups torn mixed salad greens
2 cups chopped apples
1 small red onion, cut into rings
1/2 cup chopped pecans
1/4 cup crumbled Gorgonzola cheese
1 package (2-1/2 ounces) dried apple chips

Steps:

  • Grill chicken on an indoor grill coated with cooking spray for 5-7 minutes or until a thermometer reads 179°. Meanwhile, for dressing, combine the apple juice concentrate, oil and yogurt in a jar with a tight-fitting lid; shake well., On four plates, arrange the salad greens, apples, onion, pecans and cheese. Slice chicken; place over salads. Drizzle with dressing. Sprinkle with apple chips.

10 ounce Chicken Cutlets
1 unit Sweet Potato
1 tablespoon Sweet and Smoky BBQ Seasoning
2 ounce Mixed Greens
1.5 ounce Honey Dijon Dressing
1 unit Apple
½ ounce Pecans
Kosher Salt
Pepper
2 teaspoon Olive Oil
1 teaspoon Cooking Oil

Steps:

  • • Adjust rack to middle position and preheat oven to 425 degrees. Wash and dry produce. • Dice sweet potato into ½-inch pieces. (TIP: Feel free to peel first if you like.) Toss on a baking sheet with a large drizzle of olive oil, 1 tsp BBQ Seasoning (2 tsp for 4 servings), and a pinch of salt and pepper. (You'll use the rest of the BBQ Seasoning later.) • Roast on middle rack, tossing halfway through, until tender and lightly browned, 20-25 minutes. Let cool at least 5 minutes after removing from oven.
  • • While sweet potato roasts, halve and core apple; quarter halves lengthwise, then thinly slice crosswise into triangles. • Place pecans in a medium, preferably nonstick, pan over medium heat. Toast, shaking pan frequently, until fragrant, 2-3 minutes. • Turn off heat; remove pecans from pan.
  • • Pat chicken* dry with paper towels; season all over with remaining BBQ Seasoning, salt, and pepper. • Heat a drizzle of oil in pan used for pecans over medium heat. Add chicken and cook until browned and cooked through, 4-6 minutes per side. • Turn off heat; transfer to a cutting board.
  • • In a large bowl, toss mixed greens, apple, and roasted sweet potato with Honey Dijon Dressing to taste. Season with salt and pepper. • Slice chicken crosswise. • Divide salad between bowls and top with sliced chicken. Garnish with toasted pecans and serve.

1 red apple, diced
3 stalks celery, chopped
30-35 seedless red grapes, halved
3/4 cup mayonnaise
salt and freshly ground black pepper to taste
1/2 cup sliced almonds

Steps:

  • To a bowl, add the chicken add chopped apples, celery, red grapes and mayonnaise. Fold in until ingredients are thoroughly combined. Add desired amount of salt and pepper. Store airtight and place salad in the refrigerator until chilled and ready to serve.
  • To serve, stir salad thoroughly and and fold in slice almonds. Place measured dollops in the center of lettuce cups or on croissants. Makes 6-8 sandwiches or salads.

1 head red leaf lettuce
1 head green leaf lettuce
1 teaspoon lemon juice, a wedge
1 crisp red apple, such as McIntosh or Paula Red, thinly sliced
1 Anjou pear, thinly sliced
2 tablespoons apple cider
2 tablespoons cider vinegar
1 teaspoon sugar
1/3 cup extra-virgin olive oil, eyeball it
Salt and coarse black pepper
8 ounces sharp cheddar, thinly sliced

Steps:

  • Coarsely chop lettuce. Squeeze the a little lemon juice over apples and pears and toss with greens. Combine cider, vinegar and sugar in a bowl and whisk in oil in a slow stream. Pour dressing over salad and season salad with salt and pepper and toss salad to combine and coat evenly. Serve salad with a garnish of sliced sharp cheddar cheese.

  • In a medium bowl toss chopped apples with squeeze of lemon juice.

  • Heat grill to medium heat.
  • Pour 1/4 cup dressing over chicken in shallow dish; turn to evenly coat both sides of each breast. Refrigerate 10 min.
  • Remove chicken from dressing; discard dressing. Grill chicken 6 to 8 min. on each side or until done (165°F). Slice chicken.
  • Cover 4 salad plates with salad greens; top with chicken, peaches, onions and nuts.

I found this recipe when I was looking for this recipe or one close to it. I tried this at Subway and really liked it. Subway always uses light Mayo. In this recipe the salt and pepper are optional. Use more or less mayo to suit your own taste and the same with the fruits. I like to add a few more fruits. There is no cook time unless you are cooking your chicken for this recipe. I use left over or canned.
