3/4 pound shredded mozzarella-provolone mix (50/50)
1/4 pound grated Romano
1/4 cup chopped fresh flat leaf parsley
1 1/2 tablespoons ground black pepper
5 eggs
1/8 cup extra-virgin olive oil
26 lasagna noodles, cooked to al dente
24 ounces Nana's Sunday Sauce, recipe follows
1 pound cooked and sliced Italian rope sausage
6 cooked Nana's Giant Meatballs, recipe follows
1/2 pound sliced provolone
1/4 cup grated Romano
3/4 cup extra-virgin olive oil
1/4 pound pork neck bones
1/4 pound pork rib tips
1 teaspoon garlic salt
1/2 cup chopped fresh garlic
1/4 cup chopped fresh flat leaf parsley
1 medium yellow onion, chopped fine
3 pounds canned crushed tomatoes
1/4 cup chopped fresh basil
3 pounds tomato paste
1 teaspoon salt
1 teaspoon ground black pepper
1/2 pound ground beef
1/2 pound ground pork
6 ounces breadcrumbs
3 tablespoons chopped fresh basil
3 tablespoons chopped garlic
1/4 teaspoon salt
1/2 teaspoon ground black pepper
1 egg
1/2 medium diced yellow onion
Extra-virgin olive oil, for rolling meat

Steps:

  • For the cheese filling: Preheat oven to 350 degrees F.
  • Mix together the ricotta, mozzarella mix, Romano, parsley, pepper and eggs in a large bowl.
  • For the lasagna: Coat bottom of a 9-by-13-by-3-inch baking pan with the olive oil. Layer 14 lasagna noodles overlapping each other in bottom of pan. Add 8 ounces Nana's Sunday Sauce spread evenly over pasta, then pour in half of the cheese filling. Evenly spread all of sausage on top of the cheese filling and add 7 more lasagna noodles. Add 8 ounces Nana's Sunday Sauce and the remaining cheese filling. Crumble Nana's Giant Meatballs over cheese filling and add 8 slices provolone to cover the meatball layer. Cover the provolone with remaining lasagna noodles. Spread the remaining Nana's Sunday Sauce over noodles and top with Romano. Cover with foil and bake for 3 hours.
  • Heat olive oil in a large Dutch oven and add neck bones and rib tips. Sprinkle with garlic salt and brown the meat, about 15 minutes. Add garlic, parsley and onion and cook until translucent, about 15 minutes.
  • Add crushed tomatoes and basil. Cook down, stirring continuously, about 20 minutes.
  • Add tomato paste, salt and pepper and 26 cups water. Bring to a boil, then simmer until reduced by a quarter, about 2 hours.
  • Preheat oven to 375 degrees F.
  • Mix beef, pork, breadcrumbs, basil, garlic, salt, pepper, egg and onion in a bowl and form into 4-ounce balls. Roll in olive oil and place on a sheet pan. Bake until roasted to golden brown, about 20 minutes.

This is just a variation of my own lasagna recipe. I say variation because I make it differently every time depending on what I have on hand and my mood. This is the first time I've written my lasagna recipe down. Although I have made literally thousands of pans of lasagna throughout my years (I worked as a cook), I find this one perfectly acceptable (and I consider myself a lasagna snob). So you should certainly enjoy this, if not make it the only lasagna recipe you make from now on.

2 tablespoons olive oil
1 large sweet onion, chopped
1 lb ground beef
1/2 lb bulk Italian sausage
3 -4 cloves garlic, minced
2 tablespoons chopped fresh basil or 2 teaspoons dried basil
1 tablespoon chopped fresh oregano or 1 teaspoon dried oregano
2 tablespoons chopped parsley
1 teaspoon kosher salt
1/2 teaspoon black pepper
2 (15 ounce) cans tomato sauce
6 ounces tomato paste
2 tablespoons brown sugar
12 pieces uncooked lasagna noodles
2 (15 ounce) containers ricotta cheese
2 large eggs
1/4 cup grated parmesan cheese (for ricotta)
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons chopped parsley
16 ounces grated mozzarella cheese
8 ounces thinly sliced pepperoni
1/4 cup grated parmesan cheese (to garnish)

Steps:

  • Cook onion in olive oil in a large skillet until tender, several minutes.
  • Add garlic, ground beef, italian sausage, basil, oregano, parsley, salt and pepper to pan and cook until meat is thoroughly browned and breaking up lumps as it cooks.
  • Drain fat.
  • Add tomato sauce, tomato paste, and brown sugar to pan, mixing well.
  • Reduce heat, cover, and simmer for 25-30 minutes.
  • Meanwhile, cook lasagna noodles in plenty of boiling salted water for ten minutes, then drain.
  • In a mixing bowl, stir together ricotta cheese, eggs, parmesan, salt, pepper, and parsley until smooth.
  • Preheat oven to 375°F.
  • In a large lasagna baking pan, place 1/3-1/2 of meat sauce in bottom of pan (just enough to cover).
  • On top of the meat sauce in pan, layer the lasagna as follows: 4 noodles (to cover pan), 8 ounces shredded mozzarella, 4 ounces sliced pepperoni, 4 more noodles, ricotta cheese mixture, 4 more noodles, remaining meat sauce mixture, 8 ounces mozzarella, 4 ounces of pepperoni, and 1/4 cup parmesan.
  • If any corners of noodles try to stick up past the sauce in the pan, tuck them under the sauce.
  • Bake at 375F for 30-40 minutes or until heated through and cheese is golden and bubbly.
  • Allow to rest for 10-15 minutes before slicing and serving.

I have tried different combinations of meat, cheese and sauce, and this is the one my husband and I both love the most. Any other lasagna just doesn't compare. Occasionally I have had to use just ground beef, or just mozzarella, depending on what I had, but they just don't turn out as yummy as this combination.

1 lb ground meat (I use the mix of beef, pork, and veal)
2 (680 ml) cans pasta sauce (I use Primo, one can of garlic and herb, one can of romano cheese and basil)
1 (380 g) package of kraft mozza-cheddar grated cheese
grated parmesan cheese, to preference
12 lasagna noodles (I use PC Blue Menu, whole wheat noodles)

Steps:

  • Brown the meat, and drain.
  • Add both cans of sauce to the meat mixture, and heat on low, covered, making sure to stir every few minutes.
  • While the sauce is heating, boil the noodles according to package directions, and preheat the oven to 350 degrees.
  • When the noodles are ready, drain them and run cold water over them so that they are not too hot to touch.
  • Put a little bit of the meat sauce on the bottom of a 9 x 13 baking dish.
  • Do 2 layers of: 4 noodles, meat sauce, parmesan cheese, mozza-cheddar cheese.
  • Final layer is 4 noodles, meat sauce, and parmesan cheese (mozza-cheddar layer gets added later, so it won't burn).
  • Bake in oven for 20-25 minutes.
  • Take out of the oven and put a final layer of mozza-cheddar cheese on top; bake another 10 minutes or until cheese is bubbly and just starting to brown, don't let it get overdone.
  • Let sit for 10 minutes before cutting.

My family came up with this concept one day when we were making lasagna and had some pepperoni left over from making some homemade pizza. It has been a staple ingredient ever since!! Caution: may cause family and friends to invite themselves over for dinner!!

lasagna noodle
16 ounces mozzarella cheese or 16 ounces Italian cheese blend
16 ounces ricotta cheese
1 lb ground Italian sausage
1 lb ground beef or 1 lb ground turkey, if you prefer
pepperoni (the pre-sliced is easiest)
1 tablespoon parsley
1 tablespoon oregano
71 ounces tomato sauce (Favorite brand or flavor, get one extra large jar and one small)
2 eggs
1 tablespoon olive oil
1 teaspoon salt
2 tablespoons parmesan cheese

Steps:

  • Pre-heat oven to 350 degrees. Put ricotta cheese into mixer on low. While ricotta is mixing, brown ground sausage and place in med mixing bowl.
  • Boil water for noodles. Add olive oil and salt to water.
  • Add 1/2 Mozzarella/Italian cheese to ricotta and continue to mix on low. Brown ground beef/turkey while this is mixing. Add ground meat to ground sausage.
  • Add water to noodles and cook to package directions. Add the other half of cheese when mixture becomes evenly blended.
  • Add eggs, parsley, and oregano to cheese mixture, then drain noodles.
  • Begin to layer your ingredients in 13 x 9 x 2 inches glass baking pan. Start with sauce to prevent noodles from sticking and crisping to the bottom. Then do a layer of noodles, then the cheese mixture.
  • Lay out the pepperoni in rows following the pasta line. Try to space out according to how you will cut the lasagna. Sometimes,for convenience, we mix the tomato sauce with the meat mixture, if so, save about a 1/2 cup of sauce for the top. If you decide not to mix, then you will just have an extra step in the layering with meat, then sauce.
  • Repeat layering until you reach the top layer. The top should have noodles, then simply sauce (without meat). Sprinkle top with Parmesan cheese.
  • Put in oven for 30-45 minute Remove from oven and let sit for 5-10 minutes (good time to pop in some garlic bread) then serve.

It takes a bit of effort to make, but with your help we've created a great recipe for this layered dish. In my first question to you about this recipe, I asked what direction we were going for the noodles. When 64% of you said you wanted to use OG (dried) lasagna noodles, I knew we were in for a classic version. Make no mistake, this is a meat lasagna, because 84% of you wanted to push the veggies aside. Which brings me to the cheese: This lasagna is loaded with so much of it, I expect to see plenty of cheese pulls on social media (tag me)! Mozzarella and ricotta were the top picks, so we piled them on - along with a dusting of Parmesan. Once you bake your lasagna, try this tip: Use the tines of a fork to perforate the cheesy top into squares so you don't drag your cheese along with the knife when you're serving it. 2 tablespoons extra-virgin olive oil, plus more for the dish
1 onion, chopped
3 cloves garlic, chopped
2 teaspoons dried oregano

1 pound ground beef
8 ounces sweet Italian sausage, casings removed if links
1/4 cup tomato paste
1/4 cup dry vermouth or white wine
1 28-ounce can crushed tomatoes
Pinch of sugar, as needed
Kosher salt
12 lasagna noodles (about 10 ounces; not oven-ready or no-boil)
2 large eggs
1 32-ounce container whole-milk ricotta cheese
2/3 cup plus 1/4 cup grated Parmesan cheese
1/4 cup finely chopped fresh parsley
Freshly ground pepper
2 8-ounce bags shredded mozzarella cheese (about 4 cups)

Steps:

  • Preheat the oven to 400˚ F. Rub the bottom and sides of a deep 9-by-13-inch baking dish (about 5 quarts) with olive oil. Set aside.
  • Make the sauce: Heat the olive oil in a large pot over medium-high heat. Add the onion, garlic, 1 teaspoon oregano and a pinch each of salt and pepper. Cook, stirring, until golden, 4 to 5 minutes. Add the beef and sausage and cook, breaking up the meat into crumbles with a spoon, until no longer pink, about 5 minutes. Stir in the tomato paste and cook until everything is well coated and the tomato paste is a shade darker, about 2 minutes. Add the vermouth and cook, scraping up any browned bits from the bottom of the pot, until almost dry. Add the crushed tomatoes, 1 1/2 cups water, the remaining 1 teaspoon oregano, 1 teaspoon salt and a generous amount of pepper. Bring to a simmer, reduce the heat to low and simmer gently until the sauce reduces slightly, 20 to 25 minutes. Season with salt and pepper; add a pinch of sugar if the tomatoes taste sharp.
  • Meanwhile, cook the noodles: Bring a large pot of salted water to a boil. Add the noodles and cook, stirring, until just al dente and pliable, about 6 minutes. Transfer to a colander; run cool water over the noodles and separate them.
  • Make the filling: Lightly beat the eggs in a medium bowl. Add the ricotta, 2/3 cup Parmesan, the parsley, 3/4 teaspoon salt and a few grinds of pepper and stir until combined.
  • Assemble the lasagna: Spread a thin layer of sauce (about 1 cup) in the bottom of the baking dish. Top with 3 noodles, laying them lengthwise. Top the noodles with one-quarter of the remaining sauce (about 2 cups). Dollop one-third of the ricotta mixture (about 1 1/2 cups) on top and spread in an even layer. Top with 3/4 cup mozzarella and 1 tablespoon Parmesan. Repeat these layers two more times (noodles, sauce, ricotta mixture, mozzarella and parmesan). For the last layer, add the remaining 3 noodles, sauce, mozzarella and Parmesan.
  • Cover the baking dish with foil, sealing the edges (do not press the foil into the cheese). Bake until the lasagna is hot and bubbly, 35 to 40 minutes. Uncover and continue baking until golden brown, 20 to 30 more minutes. Let cool at least 20 minutes before slicing.

4 lbs blocks cheddar cheese
2 (16 ounce) cans grated parmesan cheese
3 quarts ricotta cheese
3 quarts cottage cheese
2 lbs sausage
3 lbs hamburger
1 (4 ounce) jar cocktail onions
2 (12 ounce) cans medium olives
2 (12 ounce) cans tomato sauce
3 (12 ounce) cans tomato paste
3 (12 ounce) cans mushrooms
6 (1 quart) jars spaghetti sauce (i use different flavors Ragu pizza sauce, for variety)
8 (1 lb) packages lasagna noodles
4 eggs
2 ounces olive oil
2 ounces vegetable oil
2 garlic cloves
1 medium white onion
1 medium red onion
1/4 teaspoon celery powder
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/4 teaspoon white pepper
1/2 tablespoon basil
1 tablespoon oregano
1 tablespoon cocoa powder
1 tablespoon seasoning salt
1/4 cup italian seasoning
1/4 cup medium salsa
1/4 cup coffee (brewed)

Steps:

  • Cut mozzarella and cheddar blocks the long way into 2 by 2 inch slabs the length of the block; wrap each slab in plastic wrap and freeze. At least 2 days before starting sauce.
  • Cook heat brown sausage and hamburger in 1 oz vegetable oil and 1/4 cup water until done but not brown, preserving the flavor but not searing the meat.
  • In a large kettle add seasonings to sauce over medium heat.
  • Drain and rinse olives and mushrooms to remove packing salt, dice thoroughly and add to sauce.
  • Drain cocktail olives and cut into quarters, add to sauce.
  • Dice and crush garlic and brown in 1 oz vegetable oil and add to sauce.
  • Finely dice onion, over medium heat clarify in olive oil and add to sauce.
  • Add meat and let simmer 4 hours, stirring regularly to prevent scorching.
  • Turn heat off, letting sauce rest a few hours. (3 to 4).
  • On medium low add jars to sauce, simmering for 3 to 4 hours.
  • Add tomato paste to sauce. Continuing to simmer 3 to 4 hours more.
  • For more even flavor, simmer 4 hours, then allow to cool 6 to 8 hours and simmer 4 hours again.
  • This allows flavors to blend and ages the sauce. (I repeat this process for 2 days, sometimes 3).
  • Some assembly required. Invite friends.
  • With shredder blade on food processor, grate frozen cheeses than add Parmesan, mix well.
  • In large bowl mix ricotta, cottage cheese and eggs.
  • Remove sauce and set aside.
  • In large kettle cook noodles 8 or 10 at a time. (I have 2 kettles going at once, 10 minutes apart).
  • Spread bottom of 9 by 13 by 2 inch pan with a little sauce.
  • Alternating layers of.
  • Noodles the long way (3 strips).
  • Sauce.
  • Shredded cheese.
  • Noodles the wide way (5 strips).
  • Cheese paste.
  • Shredded cheese.
  • until pan is full.
  • Kitchen scissors or pizza wheel are great for cutting noodles right length.
  • Thin layers make for better mix of flavors.
  • Cover final layer a spread of sauce. (And extra parmesan if you want).
  • Bake at 425º for 1 hour.
  • Let stand 15 minutes before cutting.
  • Cooled pans can easily be covered and frozen for later.
  • Reheat at 375º for 1 hour.

Easy 6 ingredient Triple meat (pepperoni, sausage and hamburger) lasagna made easier by using frozen cheese ravioli instead of the noodles & ricotta mixture. Tastes just like regular lasagna but much better with the meat combination. A must if you are a meat lovers pizza fan. (and fabulous even if your not). A wonderful new spin on lasagna that I just threw together for a birthday dinner.

1 (30 ounce) package frozen cheese ravioli
1 (26 ounce) jar spaghetti sauce
1 (16 ounce) package pork sausage (in the roll shaped package, not links)
1 1/2 lbs ground beef
1/2 lb sandwich pepperoni (from grocery store deli)
2 medium onions, roughly chopped
2 teaspoons garlic powder
3 cups mozzarella cheese (1-1/2 bags pre-shredded)

Steps:

  • In a large frying pan, cook the sausage and ground beef together with the chopped onions until no longer pink and drain all grease.
  • Cook ravioli according to package directions (only for about 3 minutes or so I think) Drain and rinse in cold water.
  • In a 13x9 baking dish, spread a small amount of sauce (just enough to cover bottom) and layer enough ravioli to cover.
  • Stack the slices of pepperoni and cut them into narrow strips and spread half of it over the ravioli.
  • Now spread all the meat over that and pour the remaining sauce on top of it.
  • Sprinkle with 1-1/2 cups mozzerella cheese, then layer the remaining ravioli and cheese and sprinkle all of the garlic powder on it.
  • Spread the remaining half of pepperoni strips on top of cheese.
  • Cover with foil and bake at 375* for about 20-25 minutes.
  • Remove foil and bake uncovered another 10 minutes or until cheese and pepperoni are golden.
  • Serve with no yeast Beer Bread (recipe# 73440).

THREE LAYER LASAGNA

Easy and yummy three layer lasagna found on Barilla's website. This would also be good adding 1/2 onion, 2 cloves garlic and 1/2 diced pepper to the meat as you brown it. This is a very basic recipe with lots of possibilities.

1 lb wavy lasagna noodle (Barilla brand preferred, should be 1 box)
2 (24 ounce) jars spaghetti sauce (Barilla brand preferred)
1 lb ground beef, Cooked and Drained (Sausage can be substituted)
15 ounces ricotta cheese
4 cups mozzarella cheese, Shredded (or your favorite cheese)
1/2 cup parmesan cheese, Grated
2 eggs, Lightly Beaten

Steps:

  • Preheat oven to 375°F.
  • Cook Lasagna noodles according to package cooking time, drain and separate.
  • Combine cooked meat and 1-1/2 jars sauce in a large saucepan.
  • Combine eggs, ricotta, 3-1/2 cups mozzarella, and Parmesan cheeses in a large bowl.
  • Spray or grease a 9x13-inch baking dish or two 8x8-inch baking dishes with cooking spray. Spread 3/4 cup sauce over the bottom of the baking dish.
  • Place 3-4 Lasagna noodles over the bottom, slightly overlapping. Spread half of the cheese mixture over noodles and cover with 1/2 of the meat sauce. Repeat layers. Cover last layer with remaining noodles and sauce. Sprinkle with remaining mozzarella cheese.
  • Cover with foil and bake for 30 minutes. Remove foil and bake an additional 10 minutes. Let stand 10 minutes before serving.
  • OAMC DIRECTIONS.
  • Assemble lasagna in a foil lined baking dish and then place in freezer. No prior baking needed. Freeze until firm enough to remove from baking dish. Cover completely with another layer of heavy foil, then place in a gallon sized freezer bag and label.
  • To Serve: Place frozen foil wrapped lasagna back into baking dish originally used. Thaw and bake covered at 375 degrees for 45 minutes. Uncover and bake an additional 15 minutes. Let stand 10 minutes. To bake from the frozen stage, and 30 minutes to total baking time.

1 (26 ounce) jar marinara sauce (I use my mother's homemade recipe)

1 (8 ounce) package shredded whole-milk mozzarella cheese (I use Polly-O)
1/3 cup grated parmesan cheese
1 large egg

Steps:

  • Preheat oven to 375*F.
  • Cook the noodles according to the package instructions; drain.
  • In a non-stick skillet over medium-high heat, cook the onion and sausage until the sausage is no longer pink, 6-8 minutes; drain the fat.
  • Reduce the heat to medium; stir in the tomato paste, 1/2 tsp.
  • salt, 1/2 tsp.
  • garlic powder, 1/2 tsp.
  • Italian seasoning, and 1/4 tsp.

  • Add the milk; cook, stirring, until thickened, about 3 minutes.

  • Spread 1/2 cup of the reserved marinara sauce in the bottom of an ungreased 13x9" baking dish; top with 4 whole noodles, 1/3 of the cheese mixture, and 1/3 of the sausage mixture.
  • Repeat twice, ending with the noodles; top with the remaining sauce and sprinkle with the remaining mozzarella.
  • Cover the pan with foil.
  • **(At this point, I usually like to refrigerate the lasagna for about 1 hour to let the flavors blend--if you choose to do it this way, preheat the oven when you're ready to bake.)** Bake until bubbly, 40 minutes; uncover the pan and bake 5-10 minutes longer.
  • Serve hot.
