WATERMELON GRANITA WITH CHAMPAGNE
This is a wonderful dessert as an end of a warm and romantic dinner!

Steps:
- Place cubed watermelon and sugar in the pitcher of a blender. Blend for 1 minute. Stir in the champagne. Pour the watermelon mixture into a plastic container, cover and place in the freezer. Stir the mixture with a fork every 30 minutes until frozen, about 2 hours.
- Before serving, remove the frozen granita from the freezer and stir well using a fork or place in the food processor and process until it reaches the desired consistency. Serve in tall glasses garnished with sliced watermelon.

- Combine all ingredients in a food processor. Puree until smooth. Pour into a shallow, wide pan and freeze for 1 hour. Rake mixture with fork and freeze for another hour. Rake and freeze for one more hour. Rake and serve in cups.

MELON OR WATERMELON GRANITA
Steps:
- Add sugar and lemon to melon or watermelon juice, to correct flavor. Add liqueur.
- Pour mixture into shallow hotel pans to a depth of approximately 1/4-inch. Place in freezer. (If you pour any deeper, ice crystals will not form properly).
- When you see a layer of ice on the surface, scrape to break it up and put pan back in freezer. Continue this process until completely frozen. Final product should look like sequins.

A few lazy stirs as this granita sets up in the freezer is really the only tricky thing about this easy and refreshing dessert. It's also a perfect midafternoon cooler for a vacation house full of children.

- Cut about 1 pound watermelon into small chunks (discarding the rind), and freeze them. When they're frozen, put them in a blender with 2 tablespoons sugar and 2 tablespoons lemon juice, and blend until the mixture liquefies. Pour the mixture into a shallow glass or ceramic pan, and freeze for about 2 hours, breaking up the ice crystals with a fork every 30 minutes or so. It should be slushy and crunchy.

- Purée all ingredients in a blender until smooth. Pour into a 9x9x2" metal baking pan. Freeze mixture for 1 hour. Stir, mashing any frozen parts with the back of a fork. Cover and freeze mixture until firm, about 2 hours. Using a fork, scrape granita vigorously to form icy flakes. DO AHEAD: Can be made 3 days ahead. Cover tightly with foil and keep frozen. Give it a quick scrape before serving.

- In a food processor, puree watermelon, working in 2 batches. Strain puree through a sieve, reserving liquid; discard solids. In a 9" x 13" metal pan, combine watermelon puree, juice and agave. Freeze, scraping thoroughly with a fork every 20 to 30 minutes, until granita resembles coarse crystals, 2 to 4 hours. Remove from freezer; scrape granita once more with a fork. - Chop Up Watermelon. Chop up watermelon into reasonably sliced chunks, removing the ride and the seeds (if there are any, as there was with mine) as you go, until you have 2 pounds (around 4 cups).
- Blender Watermelon and Sugar. Place chopped up watermelon in a blender or food processor, and add half a cup of granulated sugar. Blend together, for about a minute.
- Add Champagne. Slowly (to maximize liquid and minimize bubbles) measure a cup of champagne and add it to the watermelon-sugar. Mix together, for the champagne likes to separate out from the sugar and the watermelon.
- Freeze. Pop lid onto container and place in the freezer, preferably under ice cream that you already own, for added deliciousness. Remove from freezer every 30 minutes and stir and scrape with a fork, for about two hours.
- Serve! When the granita has reached the proper icy texture, serve in multi-coloured bowls for added prettiness and enjoy! Be sure not to devour it all in one go.
