Our family often took this decadent breakfast souffle to a local park on Father's Day. It's easy to make the night before, pop in the oven the next morning and go!-Sharon Ricci, Mendon, New York

1/2 cup orange juice
3/4 cup dried cherries, divided
6 large eggs
2 cups 2% milk
1/4 cup sugar
1 tablespoon grated orange zest
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon salt
8 cups cubed brioche or egg bread
1-1/2 cups cubed Havarti cheese
1 cup maple syrup
Confectioners' sugar

Steps:

  • Pour orange juice over 1/2 cup cherries in a small bowl; let stand 15 minutes. In a large bowl, whisk eggs, milk, sugar, orange zest, vanilla, cinnamon and salt until blended. Stir in cherry mixture. Gently stir in bread cubes; transfer to a greased 8-in. square baking dish. Sprinkle with cheese. Refrigerate, covered, several hours or overnight., Preheat oven to 350°. Remove souffle from refrigerator while oven heats. Bake 45-55 minutes or until puffed, golden and a knife inserted in the center comes out clean. Let stand 10 minutes before cutting., In a small saucepan, combine maple syrup and remaining cherries; heat through. Serve with souffle; dust with confectioners' sugar.

ROAST DUCK BREAST WITH DRIED CHERRIES AND PORT



Roast Duck Breast With Dried Cherries and Port image

Number Of Ingredients 12

2 (1-pound) or 4 (8-ounce) Moulard duck breasts
Kosher salt and freshly ground black pepper
1 tablespoon canola oil
2 tablespoons unsalted butter
1/2 cup minced shallots (2 shallots)
1 1/2 tablespoons good sherry wine vinegar
3/4 cup ruby Port wine
1/2 cup good chicken stock, preferably homemade
1/2 cup dried cherries
1/4 cup creme fraiche
1 teaspoon grated orange zest
1/4 cup freshly squeezed orange juice

Steps:

  • Wrap each duck breast in plastic wrap and pound them with a meat mallet until each breast is about 1 inch thick. Place the duck on a plate, sprinkle both sides with a total of 4 teaspoons salt, cover with plastic wrap, and refrigerate for at least 6 hours or overnight.
  • When ready to cook the duck, preheat the oven to 375 degrees F.
  • Score the skin of the duck breasts with a sharp knife, making a crosshatch pattern but not cutting down to the meat.
  • In a large (12-inch) heavy-bottomed, ovenproof skillet, heat the oil over medium heat. Place the duck breasts in the pan, skin side down. Cook uncovered over medium heat for 12 to 15 minutes, discarding the fat from the pan occasionally, until the skin is very browned. Turn the duck with tongs, place the skillet in the oven, and roast for 12 to 18 minutes, until the internal temperature of the duck is 120 degrees F for rare. Remove from the oven, cover the pan tightly with aluminum foil, and allow the duck to rest for 10 minutes.
  • Meanwhile, make the sauce. Melt the butter over medium-high heat in a medium saucepan. Add the shallots and saute for 2 minutes, until tender. Add the vinegar and cook for one minute. Add the Port, chicken stock, cherries, 1 teaspoon salt, and 1/2 teaspoon pepper, bring to a boil, lower the heat, and simmer for 15 minutes. Stir in the crème fraîche, orange zest, and orange juice and keep warm over low heat.
  • Transfer the duck to a cutting board and slice diagonally, fanning the slices out on 4 dinner plates. Spoon the sauce generously on top, sprinkle with salt, and serve hot with extra sauce on the side.

SIMPLE DRIED CHERRY AND ORANGE SCONES

2 cups flour
2 Tablespoons sugar
1 Tablespoon baking powder
1/4 teaspoon salt
2 teaspoons orange zest
5 Tablespoons cold butter, cut into tablespoons
1 cup dried cherries
1 egg
2/3 cup heavy whipping cream

Steps:

  • Preheat oven to 400F. Line two baking sheets with parchment paper. Set aside.
  • In a small bowl, add the cherries. Pour in some hot water and let seep until plump, about 10 minutes or so. Drain and pat dry.
  • In a large bowl, whisk together the flour, sugar, baking powder, salt, and orange zest. Drop in the butter pieces and toss with flour. Using either your fingertips or a pastry cutter, cut the butter into the flour mixture until the mixture is pebbly. Add the cherries.
  • Beat the egg into the cream then pour the cream into the dry ingredients and stir until everything comes together. The dough will be wet and sticky. Gently knead the dough a few times inside the bowl.
  • Lightly dust a work surface with some flour and turn out the dough. Roll out the dough until it is about 1/4 inch high. Cut out circles with a 2.5-inch cutter and place them onto the cookie sheets. Gather up the scraps and reroll again until all of the dough is gone.
  • Bake for 10-12 minutes or until golden brown. If serving warm, cool for 10 minutes. If not, cool until room temperature.

1/2 cup red onion, finely chopped
1/4 teaspoon fresh ground black pepper
1/4 teaspoon kosher salt
1/2 cup dried cranberries
2 satsuma oranges, peeled & separated (can sub fresh mandarin oranges)
1/4 cup sliced almonds, toasted
4 ounces blue cheese, crumbled
1/2 cup poppy seed dressing or 1/2 cup raspberry salad dressing

Steps:

  • Place all ingredients except cheese and dressing in a large bowl.
  • Drizzle dressing around inside edge of bowl. Using tongs, gently toss to coat everything with dressing.
  • Divide salad among 4 chilled plates and sprinkle with blue cheese. Also great served with spiced pecans and grilled chicken.

4 navel oranges
1 shallot, chopped (about 2 Tbs)

1 (9 ounce) bag Baby Spinach
1/2 cup dried cherries

Steps:

  • Cut and peel white pith from oranges. Cut between membranes to release orange segments into a small bowl.
  • Combine shallot with balsamic vinegar in bowl. Whisk in olive oil and season with salt and pepper to taste.
  • Place orange segments, spinach, and cherries in salad bowl, and toss with dressing. Break apart pecans and add to salad. Sprinkle goat cheese on top and serve.

Steps:

  • Preheat oven to 375 degrees F.
  • For the topping, combine flour, sugar and cinnamon in a small bowl; mix well. Cut in butter until mixture resembles coarse crumbs; set aside.
  • For the muffins, combine flour, sugar, baking powder, baking soda and salt in a large mixing bowl. In another bowl, combine eggs, sour cream, oil and milk; mix well. Add egg mixture, cherries and pecans to flour mixture; stir only until combined.

1 cup long-grain rice
1/2 teaspoon salt
1/2 cup French green lentils
1/4 cup finely chopped shallot
2 tablespoons red-wine vinegar

1/3 cup dried cherries, chopped, or currants
1/4 cup olive oil
1/3 cup chopped fresh flat-leaf parsley

Steps:

  • Boil water, rice, and salt in a 1 1/2-quart heavy saucepan, uncovered and undisturbed, until steam holes appear and surface looks dry, about 8 minutes. Reduce heat to very low and cook, covered and undisturbed, 15 minutes more.
  • While rice cooks, simmer lentils in water to cover by 2 inches 18 to 20 minutes, or until just tender, then drain.
  • Stir together shallot, vinegar, and lemon juice and let stand. Finely grate zest from orange and cut away remaining peel and pith. Cut sections free from membranes and cut sections into 1/2-inch pieces. Toss warm rice with lentils, shallot mixture, orange, zest, cherries, oil, and parsley and season with salt and pepper. 2 teaspoons sugar

2 teaspoons orange blossom water
1/2 cup dried cherries
1/4 cup toasted almond, chopped

Steps:

  • Peel the skin and pith from the oranges with a knife.
  • Section the oranges between membranes so that there is nothing left but the flesh.
  • Allow the excess juice to drip away from the oranges (unless you want the finished product to be wetter).
  • Place the orange sections in a bowl; add all ingredients but the mint and toss to mix.
  • Garnish with the mint.
