Number Of Ingredients 11

1-1/2 cups all-purpose flour
3/4 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 medium orange, unpeeled and cut into eight wedges
1/2 cup orange juice
1 egg
1/4 cup canola oil
1/2 cup raisins, optional
1/2 cup chopped walnuts, optional

Steps:

  • In a small bowl, combine the flour, sugar, baking powder, baking soda and salt. In a blender, combine the orange, orange juice, egg and oil; cover and process until blended. Gradually add dry ingredients just until moistened. Stir in raisins and walnuts if desired., Fill greased muffin cups three-fourths full. Bake at 375° for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks.

Number Of Ingredients 8

1 orange, quartered and seeds removed (with peel)
1/2 cup orange juice
1 large egg
1/2 cup butter or 1/2 cup margarine
1 3/4 cups all-purpose flour
3/4 cup white sugar
1 teaspoon baking powder
1 teaspoon baking soda

Steps:

  • Preheat oven to 400F; spray a muffin tin (12) with non-stick cooking spray like Pam and set aside.
  • Put orange quarters in food processor (or blender) along with orange juice and process or blend until pureed.
  • Add egg and butter to food processor and combine; pour into large bowl.
  • Combine dry ingredients together in a separate bowl, then add all at once to orange mixture.
  • Stir to combine.
  • Fill muffin cups about 3/4 full.
  • Bake in preheated oven for 20 minutes; remove from oven and let stand in tin for 5 minutes before removing muffins.

These muffins are very tender and moist with a light orange flavor. They're terrific eaten plain or served warm with a dab of real butter (my favorite). You'll start eating them right out of the oven!

2 1/4 c Flour
1/3 c Sugar
1/2 tsp Salt
1 Tbsp Grated orange peel
1 pkg Dry yeast
1/2 c Milk
1/4 c Water
1/3 c Butter or margarine
1 Egg
ORANGE GLAZE
1 c Powdered sugar
1 Tbsp Grated orange peel
1-2 Tbsp Orange juice

Steps:

  • 1. In a bowl, combine 1 c flour, sugar, salt, peel and yeast throughly.
  • 2. In saucepan combine milk, water and butter. Heat over low heat until very warm about 120 degrees. Butter does not need to melt.
  • 3. Gradually add liquid to flour mixture and beat 2 minutes at medium speed of electric mixer scraping bowl occasionally. Add egg and 3/4 c flour. Beat at high speed 2 minutes, scraping bowl occasionally.
  • 4. Stir in enough additional flour to make a stiff batter.
  • 5. Cover and let rise in a warm place until doubled in bulk, about 1 hour. Stir dough down.
  • 6. Spoon into greased muffin pans. Cover and let rise in warm place until doubled, about 1 hour.
  • 7. Bake at 375F for 20 minutes. Remove from pans and cool on wire rack.
  • 8. Drizzle with glaze, if desired by combining sugar, peel and enough juice to make a thick glaze.

2 cups all-purpose flour
½ cup white sugar
3 teaspoons baking powder
½ teaspoon salt
¾ cup orange juice
⅓ cup vegetable oil
1 egg
1 tablespoon orange zest

Steps:

  • Heat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 muffin cups or line with baking cups.
  • In a medium bowl, combine flour, sugar, baking powder, orange peel and salt; mix well. In a small bowl, combine orange juice, oil and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.)
  • Fill cups 2/3 full. Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Serve warm.

In the mood for bread but not all the work? These fit the bill. These have the texture of a muffin but with all the taste of a sour-dough bread. Yummy when spread with butter, jam, OR eaten on their own. I found this recipe from Mary Bowles on Astray and want to give credit. I couldn't find this recipe on Zaar and think it would be a lovely addition to the database. If you do not have self rising flour on hand don't shy away! Its very easy to make. 1 1/2 tsp. baking powder and 1/2 tsp salt for every cup of all purpose flour.

1/4 ounce yeast, one package
2 cups warm water
3/4 cup butter, melted
1/4 cup granulated sugar
1 egg, beaten
4 cups self rising flour

Steps:

  • Preheat oven to 350 degrees.
  • To your self rising flour add sugar and yeast.
  • Pour in egg, butter, and water. Stir to combine. Do not over-mix. Lumps are OK.
  • Cover your mixing bowl with tin foil and refrigerate for 2 hours.
  • Spoon batter into muffin tins that have been greased filling each 3/4 full.
  • Bake 20-25 minutes.
  • The texture of this muffin is a bit unstable right out of the oven. It is best for these to sit and cool till warm before serving.

2 cups whole wheat flour
1/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 large egg
1-1/2 cups orange juice
1/4 cup canola oil
1 cup fresh or frozen cranberries, halved

Steps:

  • Preheat oven to 400°. In a large bowl, whisk flour, sugar, baking powder, baking soda and salt. In another bowl, whisk egg, orange juice and oil until blended. Add to flour mixture; stir just until moistened. Fold in cranberries., Coat muffin cups with cooking spray or use paper liners; fill three-fourths full. Bake 15-20 minutes or until a toothpick inserted in center comes out clean. Cool 5 minutes before removing from pan to a wire rack. Serve warm.

3 large oranges
1/4 cup sugar
2 tablespoons water
5 tablespoons unsalted butter
2 cups flour
1 1/4 teaspoons baking powder
1 teaspoon baking soda
1/4 cup sugar (additional, not a mistake)
1/2 teaspoon salt
2 eggs
3/4 cup plain yogurt
3/4 cup milk
1 1/2 tablespoons fresh squeezed orange juice (from oranges above)
3/4 cup confectioners' sugar, sifted
1 1/2 teaspoons orange zest

Steps:

  • Preheat oven to 375F (190C) and butter or spray standard muffin tins.
  • Finely grate the zest from the oranges (zest only the bright orange portion of the peel)- you will end up with approximately 1/4 c of zest.
  • In a small saucepan, combine the zest, first 1/4 cup of sugar and the water; stir together over medium heat for about 2 minutes until sugar dissolves.
  • Add the butter and stir until melted, about 1 minute more.
  • Set aside orange zest mixture.
  • In a medium bowl, stir together the flour, baking powder, baking soda, salt and the second 1/4 cup of sugar.
  • In a large bowl, whisk together the eggs, yogurt, milk and reserved orange zest mixture until smooth.
  • Add the flour mixture and stir just until blended (do not overmix).
  • Spoon into prepared muffin tins, filling each cup three-quarters full.
  • Bake for 15-20 minutes, or until pick inserted in center comes out clean.
  • Cool in tins for 3-5 minutes and then remove and cool completely on wire rack.
  • ****FOR GLAZE****.
  • Combine all the ingredients for the glaze in a small bowl and whisk together briskly until smooth and very well blended.
  • If glaze is too stiff, beat in a few more drops of orange juice.
  • Brush or spoon over the muffins while they are still a bit warm.
  • You will end up with almost 1/2 cup of glaze which should be enough for the 18 muffins.

1 cup warm water (105-115°F)
⅔ cup rye flour

1½ teaspoons finely grated fresh orange zest
¾ teaspoon salt
¼ teaspoon anise seeds
¼ teaspoon ground cumin
¾ teaspoon caraway seeds
2 tablespoons unsalted butter, melted and cooled, plus additional for greasing
2 tablespoons molasses (not blackstrap)
Vegetable oil for greasing
1 large egg, lightly beaten, for egg wash
½ teaspoon flaky sea salt such as Maldon
Special Equipment
an instant-read thermometer; 2 nonstick mini-muffin pans with 12 (1¾-inch-wide) muffin cups

Steps:

  • Stir together yeast, brown sugar, and ¼ cup warm water in a large bowl until yeast is dissolved. Let stand until foamy, about 15 minutes. (If mixture doesn't foam, discard and start over with new yeast.)
  • Whisk together rye flour, 1 cup all-purpose flour, zest, salt, anise seeds, cumin, and ½ teaspoon caraway seeds. Add flour mixture along with melted butter, molasses, and remaining ¾ cup warm water to yeast mixture and beat with an electric mixer at medium speed 5 minutes. Reduce speed to low and add ½ cup all-purpose flour, beating until combined. Add remaining ¼ cup plus 1 tablespoon all-purpose flour and beat until incorporated. (Dough will be very sticky.) Scrape down dough from side of bowl with a rubber spatula and let rise, bowl covered tightly with plastic wrap, in a draft-free place at warm room temperature until doubled in bulk, about 1½ hours.
  • Put oven rack in middle position and preheat oven to 350°F. Butter muffin pans.
  • Stir down dough (it will be too sticky to punch down). Divide dough evenly among 24 muffin cups, about a rounded tablespoon per cup. (Grease tablespoon with oil as necessary to prevent sticking.) Let dough rest, uncovered, in a draft-free place at warm room temperature 30 minutes. Gently brush tops of muffins with some of egg wash, then sprinkle with sea salt and remaining ¼ teaspoon caraway seeds.
  • Bake until muffins are puffed and a wooden pick or skewer inserted into center comes out clean, 25 to 35 minutes. Turn out muffins onto a rack and cool to warm or room temperature.
  • Cooks' Notes:
  • Dough can be made (but not allowed to rise) 1 day ahead and chilled, bowl wrapped tightly in plastic wrap. Put chilled dough in muffin pan as directed and let rise 1 hour, then proceed with recipe.
  • Muffins can be made 2 days ahead and cooled completely, uncovered, then kept in an airtight container at room temperature.
  • Muffins keep, frozen in sealed plastic bags, 2 weeks. Reheat on a baking sheet in a preheated 350°F oven until muffins are heated through, 8 to 10 minutes for frozen.
