6 ounces white chocolate, chopped
1 teaspoon pure vanilla extract
Add-Ins:
Orange:
1 tablespoon orange liqueur, such as Cointreau
Candied orange peel, for garnish
White Russian:
2 teaspoons vodka
1 teaspoon coffee liqueur, such as Kahlua
Whipped cream, for garnish
Crushed chocolate-covered espresso beans, for garnish

Steps:

  • For the base: Bring the milk and white chocolate to a slow boil in a small saucepan, whisking until the chocolate is melted and smooth. Remove from the heat and stir in the vanilla.
  • Mix in add-ins as desired, and serve immediately.

3 1/2 cups milk
1/2 cup heavy cream
six 1 x 3 inch strips orange peel
8 oz. white chocolate chopped
1 tsp. almond extract

Steps:

  • 1. Mix the milk, cream and orange peel in medium pan. heat over medium high heat, stirring occasionally til boiling. Add white chocolate and whisk til it has melted. Whisk in almond extract and remove the orange peel. Reserve two of the orange peels and cut them into 1/4 inch wide strips. Ladle white chocolate into mugs, garnish with orange strips and serve at once. Serves 4 Variation: White Hot Chocolate with Mint: Replace orange peel with 8 mint leaves for infusing the milk and cream, plus another 4 mint leaves (1 for each cup) to replace the orange peel garnish, and replace the almond extract with 1 tsp. vanilla extract. Follow the instructions above.

175g butter , softened, plus extra for greasing
175g golden caster sugar
finely grated zest 4 orange and juice of 1
4 egg , separated
100g self-raising flour
1 tsp baking powder
100g ground almond
200g white chocolate
200ml crème fraîche
100g white chocolate , to decorate

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Butter two 20cm round sandwich tins and line the bases with baking parchment. Tip the sugar into a mixing bowl and add the softened butter and orange zest. Beat for 1 min or so until pale and fluffy, then beat in the egg yolks. Sift the flour and baking powder over the cake mixture and fold in lightly. Finally, fold in the almonds and orange juice. Whisk the egg whites until they just hold their shape. Fold one-third of the egg white into the cake mix, using the whisk. Repeat with another third, then the final third. Take care not to over-mix or you will lose the lightness of the egg whites.
  • Divide the cake mix between the prepared tins and bake for 30-35 mins. Cool in the tin for 5 mins, then turn out onto a wire rack, peel off the lining paper and leave to cool.
  • To make the icing, melt the chocolate over a pan of barely simmering water or in the microwave on High for 1½ mins, stirring every 30 secs, then leave to cool. Whip the crème fraîche until thick, then fold in the white chocolate. Set one cake on a serving plate or cake stand. Spoon half the icing onto the cake and top with the other cake. Spread with the rest of the icing, then allow to set in the fridge for at least 1 hr.
  • If you want to make the decorative curls, melt the chocolate in a bowl over simmering water or in a microwave and spread thinly over a baking tray. Leave the tray in the fridge for the chocolate to harden a bit, then use a cake slice or angled knife blade to scrape chocolate curls. Pile the curls in the middle of the cake and serve cut into slices.

4 large oranges

Milk chocolate curls (optional)
Orange peel twists (optional)

Steps:

  • Whisk cream and brown sugar in medium bowl until stiff peaks form. Cover and refrigerate whipped cream.
  • Pour milk into heavy large saucepan. Using vegetable peeler, remove peel (orange part only) from 4 oranges. Add peel to milk (reserve oranges for another use). Bring milk mixture to simmer over medium-high heat. Remove from heat. Cover and let steep 30 minutes.
  • Strain milk mixture into large bowl, pressing on solids to remove liquid. Return milk to same saucepan. Bring to simmer over medium-high heat. Add chopped chocolate and cocoa powder; whisk until melted and smooth. Simmer 1 minute, whisking constantly. Ladle hot chocolate into 4 ceramic cups or mugs. Top with whipped cream. Sprinkle with chocolate curls and garnish with orange peel twists, if desired.
