Not only does adding sweet potatoes to a burger bun make it more nutritious, delicious, and significantly more beautiful, but it also presents the perfect opportunity to get past your flour-amount phobia, and finally be able to make dough by feel. These are the perfect taste, texture, and appearance for a hamburger bun.

½ pound sweet potatoes, peeled and cubed
½ cup all-purpose flour
½ cup warm water
1 (.25 ounce) package dry active yeast (such as Fleischmann's® RapidRise Yeast)
1 large egg
3 tablespoons melted butter
2 teaspoons honey
1 ¼ teaspoons fine sea salt
3 ¼ cups all-purpose flour, or more as needed
1 egg
1 teaspoon water
1 tablespoon sesame seeds, or to taste

Steps:

  • Place sweet potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until very tender, 15 to 20 minutes. Drain well. Mash sweet potatoes with a potato masher. Measure out 1 cup and allow to cool to room temperature. Refrigerate remaining mashed sweet potatoes for another use.
  • Whisk 1/2 cup flour, 1/2 cup warm water, and yeast together in a bowl. Cover and and place in a warm place to allow yeast to activate, about 15 minutes.
  • Spoon 1 cup of cooled mashed sweet potatoes into yeast mixture and transfer to the bowl of a stand mixer. Add egg, melted butter, honey, and sea salt and about 3 cups flour. Mix using the dough hook. Knead for 2 to 3 minutes. If dough seems too sticky, gradually add in remaining flour or as needed to where dough pulls away from the sides of the mixing bowl. Continue kneading until dough is very soft, only slightly sticky, and somewhat elastic, about 2 minutes.
  • Transfer dough to a floured surface. Shape into smooth ball. Return dough to bowl and drizzle with oil; rub oil over entire surface to prevent dough from drying out. Cover and place in a warm spot until dough has doubled in size, about 2 hours.
  • Turn dough out onto a lightly floured surface. Gently press out air pockets. If needed, use only enough flour to keep dough from sticking. Press into rectangular shape about 3/4-inch thick. Cut dough into 16 equal sized pieces. Gently shape each piece into a ball. Slightly flatten each ball and place onto a rimmed baking sheet lined with a silicone baking mat. Let rise until double, about 45 minutes.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Whisk 1 egg and 1 teaspoon water together in a bowl. Brush each bun with egg mixture. Sprinkle dough with sesame seeds.
  • Bake in the preheated oven until browned, about 15 minutes.

1/2 cup water (70° to 80°)
1 egg
3 tablespoons butter, softened
3/4 cup mashed sweet potatoes (without added milk and butter)
4 to 4-1/2 cups all-purpose flour
3 tablespoons sugar
1-1/2 teaspoons salt
2 packages (1/4 ounce each) active dry yeast

Steps:

  • In bread machine pan, place all ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed)., When cycle is completed, turn dough onto a lightly floured surface. Punch down. Divide into 30 portions; roll each into a ball. Place on greased baking sheets. Cover and let rise in a warm place until doubled, about 30 minutes. , Bake at 400° for 8-10 minutes or until golden brown. Serve warm.

1 (.25 ounce) package active dry yeast
4 tablespoons white sugar
½ cup canned sweet potato puree
½ cup warm water (110 degrees F/45 degrees C)
3 tablespoons margarine, softened
1 teaspoon salt
2 eggs
3 ½ cups all-purpose flour

Steps:

  • Dissolve yeast, warm water, and 1 tablespoon sugar in a mixing bowl. Let stand 5 minutes.
  • Add remaining sugar, sweet potato, butter or margarine, salt, and slightly beaten eggs. Stir to mix well. Stir in 3 cups of flour. Turn out on a lightly floured surface. Knead 2 to 3 minutes, adding just enough of remaining flour to prevent sticking. Do not knead too heavily; when smooth, shape into a ball. Place in an oiled bowl, and turn to coat the surface. Cover, and let raise about 1 hour or longer.
  • Punch down, and allow dough to rest for 2 minutes. Divide into 16 to 20 balls, and place on a greased cookie sheet or in a 9x13 inch pan. Allow to rise until doubled.
  • Bake at 375 degrees F (190 degrees C) for 12 to 20 minutes. Serve warm.

I made these the other night as hamburger rolls. Really nice flavor. Mine did not rise as much as the original recipe said it would, but I seem to have old yeast. (I hate that!) I split them and we ate falafal on them and then the next day I ate peanut butter and jelly on them. Really tasty. The original recipe comes from a neat little book called "Meatless Burgers" by Louise Hagler and calls for 2 tbsp. sweetner of your choice. I used the sucanat (unrefined cane sugar), but feel free to use whatever you choose. If you have leftover plain mashed sweet potato feel free to use 1 cup of that instead of prepping a sweet potato.

1 sweet potato
1/2 cup warm water
2 tablespoons sucanat
1/2 tablespoon yeast

Steps:

  • Peel the sweet potato and cut into chunks. Place in a pan and cover with cold water. Boil until soft. Drain and mash. Reserve 1 cup for this recipe and put the rest away for another time.
  • Put the warm water in a large bowl. Mix in the sucanat (or other sweetner). Float the yeast on top of the water and let it sit until bubbly and foamy (about 5 minutes).
  • To the yeast mixture add the sweet potatoes, oil, and salt. Use a mixer to beat this stuff together. Then beat in the oats and the 1 cup of white flour. Add the whole wheat pastry flour a little at a time, kneading until a smooth dough is formed.
  • Spray a metal bowl with cooking spray and place the dough inside. Cover with a towel and let rise in a warm place until about doubled.
  • Punch down and divide into 8 balls. Spray 2 cooking sheets with spray. Form the balls and them pat them flat (like roll shapes). Put them on the cookie sheets, cover with a towel, and let rise in a warm place until about doubled.
  • Bake at 350 degrees for about 20 minutes or until just starting to brown.

Mantou are filling Chinese buns, served for breakfast, or as part of a meal. Sweet potato mantou have more flavor and nutrition than plain mantou. They are colorful, and are easily formed into attractive shapes. This recipe should also work well with carrots or squash.

1/2 lb purple sweet potato or 1/2 lb orange sweet potato
1 cup water or 1 cup milk
1/2 cup sugar (I use 2 T sugar for a less sweet bun)
3 teaspoons yeast
2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
4 tablespoons lard or 4 tablespoons butter

Steps:

  • Peel and cook sweet potato.
  • Puree cooked sweet potato in blender with water or milk and sugar.
  • Pour sweet potato liquid into a bowl, sprinkle with yeast, and allow to dissolve.
  • Sift dry ingredients together.
  • Stir flour mixture into yeast mixture. Knead in 1 additional cup of flour as needed.
  • Melt butter or lard and knead into dough.
  • Let rise until double (60-90 min).
  • Roll dough into flat rectangle; starting from front edge, roll dough into log. Cut log into 16 equal segments. They don't all fit at one time, so I freeze the the rest of the shaped, raw, buns on a flat baking sheet, then transfer to a freezer bag. I can pull them out a few at time to thaw and steam as needed.).

Switch to a dough hook and knead on medium speed for 4 minutes, adding a tablespoon or two of flour as needed (you can also knead by hand). This is a really soft and sticky dough, but it shouldn’t be so thin that you’re able to pour it. Once kneaded, put the dough into a lightly greased bowl, cover with plastic wrap or a tea towel, and allow to rise in a warm spot of the kitchen for about an hour and 45 minutes, or until doubled in size.
  • Once doubled, dump the dough onto a generously floured surface and portion into 12 equal-sized rounds.To form the rolls, see the video link in the text of the above post. Smooth the sides of each rolls, making the tops of each bun tight and smooth. Spread out on a lightly greased cookie sheet and cover again with plastic wrap or tea towel. Allow to rise and puff, about 45 minutes, while you preheat the oven to 350.
  • Once risen, lightly beat the remaining egg and combine it with a teaspoon of water. Use a basting brush to lightly brush each top with the egg wash and sprinkle with the sesame seeds. Bake in the preheated oven about 23-25 minutes or until the tops are golden and the internal temp registers at 180. Allow to cool and enjoy!
