BLITVA - CROATIAN SWISS CHARD WITH POTATOES



Blitva - Croatian Swiss Chard with Potatoes image

Blitva is an incredibly easy, quick-to-prepare, healthy and so delicious vegan recipe from Croatia, made out of Swiss chard and sautéed potatoes.

1 kg (2.2 lbs) Swiss chard (regardless of whether green or colored)
500 g (17.7 oz) (waxy) potatoes
1 onion, diced
4 cloves of garlic, finely chopped
12 tbsp olive oil
1 tbsp vegetable stock powder (or "Vegeta", see notes)
1 tsp salt
pepper

Steps:

  • Wash and clean the chard and separate the leaves from the stem (have a look at the photo in the post). Cut the stem into approx. 0.5-1 cm pieces and cut the leaves into coarse stripes.
  • Peel the potatoes, cut them into smaller pieces, and put them into a pot with 1-2 liters of boiling salted water. Cook the potatoes for about 7 minutes.
  • Next, add the chard stalks and the vegetable stock and cook for another approximately 7 minutes, at least until the potatoes are soft.
  • While the potatoes are cooking, heat 5 tablespoons of olive oil in a pan and fry the onions (but do not let them turn brown). Add the garlic, chard leaves, and salt. Steam for about 5 minutes (preferably with the lid closed) until the chard has shriveled.
  • Now add the drained potatoes and chard stalks to the pan, as well as 5 more tablespoons of olive oil. Slightly mash the potato pieces with a fork. Season with salt and pepper to taste. Serve and drizzle the remaining olive oil (1 tbsp per plate) on top.

It can be made more creamy when potatoes are very well cooked, or soupy when more liquid is preserved. On my scale this would be 3.5 Stars (please see how I rate recipes).

2 lbs swiss chard (preferably red)
3 -4 medium potatoes
2 -3 garlic cloves
2 -3 tablespoons olive oil
salt
pepper

Steps:

  • Bring a large pot of salted water to a boil.
  • Add peeled and cubed (1/2-1 in cubes) potatoes.
  • Rinse the Swiss chard, remove tough stems, and cut into 1/2 in strips (or just tear into large pieces).
  • When potatoes are almost done, add the Swiss chard, and cook all together for an additional 10 minutes (15 minutes if the chard is older).
  • Sauté garlic on olive oil, and add the cooked drained chard and potatoes to it (you may keep some water so that it looks like a thick soup).
  • Salt and pepper to taste.
  • Stir and cook for 1 more minute in order to bring all flavors together.

This is a very simple Croatian dish. I added garlic and mushrooms to my Blitva. I added the garlic to the onion when it was cooking, then added the mushroom and cooked it until the mushrooms were soft.

1 bunch swiss chard
2 potatoes (medium potatoes)
1 slice onion
1 1/2 tablespoons olive oil
salt and pepper

Steps:

  • Wash the chard and chop it up. Wash the potatoes and cut them into quarters.
  • In a medium saucepan, add the potatoes and Swiss Chard and cover with water. Add 1 teaspoons of salt to the water and boil until the potatoes are soft. Around 20 minutes.
  • Reserve 1 cup of the potato water before you drain the potato/chard mixture.
  • Mash up the potato and chard mixture and set aside.
  • In a medium skillet add the olive oil and heat it up. Add the onion until it is lightly browned. Then remove it and add the flour and make a thick paste.
  • Add the one cup of potato water to the skillet and stir until you get a thick gravy.
  • Add the chopped onion that you just sauteed back into the gravy and then add this into the potato chard mixture. Mix it all well. Add salt and pepper to taste.
  • Cover the whole mixture and cook over low heat for 5 minutes then serve.
